1 cup diced fresh mushrooms
½ cup diced onion
3 tablespoons coconut aminos (soy-free seasoning sauce)
2 teaspoons Sriracha sauce, or to taste

1 large clove garlic, minced
1 teaspoon rice vinegar, or to taste
1 teaspoon sesame oil
salt and ground black pepper to taste
8 leaves cabbage
½ cup matchstick-cut carrots
3 green onions, thinly sliced
8 sprigs cilantro, or to taste
1 pinch sesame seeds
1 pinch red pepper flakes

Steps:

  • Heat a large skillet over medium-high heat. Cook ground beef in the hot skillet, breaking up any large clumps, until browned and crumbly, about 5 minutes. Add mushrooms and onion and cook until vegetables soften, about 4 minutes.
  • Add coconut aminos, Sriracha, ginger, garlic, and vinegar. Cook, stirring occasionally, until most of the liquid has evaporated, about 10 minutes. Remove from heat and stir in sesame oil. Season with salt and pepper.
  • Evenly divide mixture among 8 cabbage leaves; sprinkle carrots and onions on top. Sprinkle green onions, cilantro, sesame seeds, and red pepper flakes on top. Roll each cabbage leaf over and around filling to form a packet.

1 medium head cabbage
3/4 pound lean ground beef (90% lean)
1/2 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup water
1/3 cup instant brown rice
1 can (15 ounces) tomato sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon sugar
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Cook cabbage in boiling water just until leaves fall off head. Set aside 8 large leaves for rolls. (Refrigerate remaining cabbage for another use.) Cut out the thick vein from the bottom of each reserved leaf, making a V-shaped cut. Set aside., In a large nonstick skillet, cook the ground beef and onion over medium heat until meat is no longer pink; drain. Stir in tomatoes and water; bring to a boil. Stir in rice; return to a boil. Reduce heat; cover and simmer for 5 minutes. , Place about 1/3 cup beef mixture on each reserved cabbage leaf; overlap cut ends of leaf. Fold in sides, beginning from the cut end. Roll up completely to enclose filling., In a bowl, combine the tomato sauce, Worcestershire sauce, basil, thyme and sugar. 1 tablespoon canola oil
3 dried red chile peppers
salt and ground black pepper to taste
¼ cup mayonnaise
1 tablespoon wasabi paste

Steps:

  • Pat fish dry with paper towels.
  • Heat canola oil with dried red chiles in a large, nonstick skillet over medium heat. Cook fish in the hot oil until flesh is opaque and the edges of the fish are slightly browned, about 3 minutes per side. Sprinkle fish with salt and black pepper. Remove from heat, drain, and discard peppers.

1 (14 ounce) package extra firm tofu, drained and diced small
2 cups chopped shiitake mushrooms
2 -3 green onions, chopped

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine tofu with with salt, pepper, red pepper flakes,lime juice and 1tbs soy sauce.

  • When that is almost done, heat up wok or frying pan and throw in the chopped up garlic and ginger.
  • Cook for about 5-7 minutes until they are softer.
  • Throw in the shiitakes, onions and carrots. At this time you can add more soy sauce , usually about 7 or 8 shakes. Also, if you'd like, add some more salt, pepper and red pepper flakes.
  • Cook about another 10 -12 minutes, then add the tofu and finish up the cooking - about 2-5 minutes.
  • Wash and dry the lettuce/cabbage and pull off pieces about the size of your palm.
  • Spoon the mixture into the leafs and roll them up!

1 tablespoon canola oil
1 pork chop leftover from Smothered Pork Chops recipe, chopped into bite-size pieces, recipe follows
2 cup water, plus 1/3 cup
3 tablespoons soy sauce
2 pounds, about 5, bone-in chicken thighs
1/2 cup peanut butter, chunky style
2 tablespoons lime juice
2 teaspoons sugar
1 teaspoon chopped garlic
1/2 teaspoon red pepper flakes
4 large flour tortillas
2 carrots, grated
1 small cucumber, julienned

4 slices bacon

1 hard-boiled egg, finely chopped

Steps:

  • Make a "V" cut in the bottom of each cabbage to remove the tough part of the stem. In a large pot of salted boiling water over medium-high heat, add the cabbage leaves and blanch for 30 seconds. Remove from the pot to a bowl of ice water to stop the cooking.
  • Put the vegetables into a large mixing bowl.
  • In another bowl whisk together the garlic ginger, white vinegar, soy sauce and oil. Pour over the vegetables and toss to coat completely. Dice the pork chop into bite-size pieces, add to the vegetables and toss to combine.
  • Remove the cabbage leave from ice bath and pat dry. Put a quarter of the filling onto the lower third of 1 of the cabbage leaves. Roll the leaf half way so that it covers the filling. Fold the sides toward the center of the leaf and finish rolling it up from the bottom.
  • Repeat with the remaining cabbage and filling. Arrange on serving dishes and serve.
  • In a saucepan over medium heat, bring 2 cups of water and the soy sauce to a boil. Reduce the heat to a simmer and add the chicken thighs. Simmer until cooked through, about 15 minutes. Remove the chicken from pan to a cutting board. When cool enough to handle, shred meat and discard the bones. Reserve 1/4 cup for Round 2 Thai Chicken Spring Rolls recipe.
  • In a small bowl combine the peanut butter, lime juice, sugar, garlic and red pepper flakes. Whisk in about 1/3 cup water and simmer until thick, and a pourable consistency is reached.
  • Warm the tortillas in microwave wrapped in a slightly damp towel for about 45 seconds to make them more pliable. Assemble the wraps by layering, the chicken, dressing and vegetables. Top with more dressing before rolling up. Secure with toothpicks and slice in half.
  • Preheat an ovenproof skillet over high heat. Season the pork chops with salt and pepper, to taste. Add 1 tablespoon of canola oil to the pan. Add the pork chops and sear on both sides until golden brown. Remove from skillet and set aside.
  • In same skillet over medium heat add the remaining tablespoon of canola oil, the onions and mushrooms and saute until slightly softened. Add the flour and cumin and cook until lightly golden in color. Stir in the chicken broth and mustard, and bring to a boil. Reduce the heat to a simmer, add the parsley and return all but 1 pork chop back into skillet. Reserve the 1 pork chop for Round 2 Recipe Pork Cabbage Wraps. Season with salt and pepper and spoon the gravy over the pork chops. Simmer for 5 minutes, or until pork chops are cooked through. Transfer to serving plates and serve with the Iceberg Wedge Salad.
  • Iceberg Wedge Salad with Warm Bacon Dressing:
  • Remove the core from the lettuce and cut into 4 quarters. Arrange on serving plates and set aside.
  • In a small skillet saute bacon until crisp. Remove from skillet, to a plate lined with a paper bag or paper towels. Once cooled, chop into small pieces and add to a small bowl. In the skillet over low heat, add the brown sugar, vinegar and salt and pepper, to taste. Whisk together until combined and sugar is completely dissolved. Stir in the egg and bacon and season with salt and pepper, to taste. Pour over the top of the iceberg wedges and serve immediately.

1 pound butter
4 (4-ounce) lobster tails
2 shallots, chopped
1 cup (about 4 ounces) shiitake mushrooms, cleaned
1 pound jumbo lump crabmeat
8 scallions, white and tender green parts only, chopped
1 avocado, slipped from skin, seed removed and cut into 1/2 inch chunks (squeeze lemon juice over this to prevent oxidation)
8 to 12 napa cabbage leaves
1 cup milk
1 small onion, finely chopped
1 bay leaf
3 whole cloves
1/4 teaspoon nutmeg, optional
11/2 teaspoons cornstarch
1/2 cup grated Parmesan (1/4 cup for sauce plus 1/8 to 1/4 cup to bind filling and sprinkle over cabbage wraps)
1/4 cup cognac
White pepper
Salt, if needed
1 tablespoon minced fresh dill

Steps:

  • To begin the lobster filling: Melt the butter in a saute pan which is just large enough to accommodate the lobster tails. The butter should be very hot, but not sizzling (between 165 and 180 degrees F). Add the tails to the pan, meat side down - shell side up, and poach until the lobster is opaque. Remove to a utility platter and let cool. (Pour the melted butter into a bowl for use in other elements in this recipe.) Return 2 tablespoons of the reserved melted butter to the same saute pan and saute shallots and shiitake mushrooms until tender. Add crabmeat and scallions and heat for a few minutes, trying to avoid breaking up lumps. Set aside. Return to the lobster tails, loosen them from the shell. Reserve the shells for use in the sauce. Slice the tail meat lengthwise down the middle and into 4 slices crosswise.
  • For the wrappers: Steam the cabbage leaves until tender but not mushy. Remember, the leaves will still have to be firm enough support the lobster filling.
  • To begin the sauce: Combine the milk, onion, bay leaf, cloves, nutmeg, and lobster shells in a heavy-gauge, non-corrosive saucepan over medium heat. Spoon 2 tablespoons of the reserved melted butter (from poaching the lobster) into a separate heat resistant bowl and create a slurry with the cornstarch, then whisk in 1/4 cup Parmesan. When the milk is fairly hot, pour a small amount of it into the slurry, stirring until the milk is thoroughly blended in. Return this to the remaining milk, add cognac, and simmer for 15 minutes, stirring frequently. Remove saucepan from heat, season sauce, to taste, with white pepper, and salt if needed. Remove and discard bay leaf, cloves and lobster shells. Immediately put a sheet of plastic wrap on top of the sauce to prevent a skin from forming.
  • Pre-heat oven to 350 degrees F. Gently fold the lobster and crabmeat together with just enough of the sauce to bind it. (Reserve the rest of the sauce for service.) If the filling seems loose, add more Parmesan to bind it. (You don't want the filling to be too runny.) Lay the cabbage leaves out and remove stiff ribs/spines of leaves being sure to leave enough of the leaf in a shape that can be filled and rolled shut. Into each leaf, spoon 3 or 4 tablespoons of the lobster/crabmeat mixture, add a few chunks of avocado, fold in sides of leaf, and roll up. Place in an oven-proof dish layered on the bottom with a little of the sauce, sprinkle with a little Parmesan. Bake for 10 minutes to melt cheese.
  • Serve garnished with fresh dill and with remaining lobster sauce on the side.

4 ounces rice vermicelli
2 teaspoons toasted sesame oil
Kosher salt and freshly ground pepper
2 tablespoons Thai sweet chili sauce
1 tablespoon fish sauce
1 tablespoon fresh lime juice 1 pound boneless beef sirloin steak (about 1 inch thick), excess fat trimmed
1 tablespoon oyster sauce
1 head napa cabbage
1/2 mango, peeled and cut into thin strips
1/3 cup roasted salted peanuts, chopped
1/2 cup fresh cilantro
1/2 cup fresh basil

Steps:

  • Preheat a grill to medium high. Bring a large saucepan of water to a boil. Turn off the heat, add the rice noodles and stir to loosen. Let sit until tender, 2 to 4 minutes; drain and rinse thoroughly under cold water. Shake out as much water as possible and transfer the noodles to a medium bowl. Toss with 1 teaspoon sesame oil and season with salt and pepper.
  • Combine 1/4 cup water, the chili sauce, fish sauce, lime juice and 2 pinches salt in a small bowl. Set aside.
  • Season the steak on both sides with salt and pepper and rub all over with the oyster sauce and remaining 1 teaspoon sesame oil. Grill the steak, 5 to 6 minutes per side for medium rare. Transfer to a cutting board and let rest 10 minutes.
  • Meanwhile, pull off 16 outer leaves from the cabbage head and cut off the leafy tops. Thinly slice the steak against the grain. Fill the cabbage leaves with the noodles, mango, steak, peanuts, cilantro and basil. Season with salt. Serve with the sauce.

3 teaspoons mustard
6 (8 inch) flour tortillas
1/2 pound diced cooked chicken
1 1/2 cups shredded napa cabbage

Steps:

  • Combine cream cheese, sour cream, Cheddar cheese, green onion, and mustard in a bowl; stir well. Spread 2 tablespoons of the mixture over each tortilla. Top each tortilla with 1/4 cup chicken and 1/4 cup cabbage. Roll up and serve.

My mom uses to make this wraps for us and we loved it,She passed away in 2005 and I never got her recipe. I found this recipe on-line but made some changes and made it my own (with my moms flavors) The first bite I took of this wraps it took me back to my childhood when my mother used to make this for us, every Sunday. I just love.

12 large cabbage leaves
2 can(s) tomatoe sauce
1 medium onion
3/4 cup(s) cooked white rice

Steps:

  • Cover cabbage in boiling water for 10 minutes, and drain, separate the leaves and let them cool.
  • Combine meats, salt, pepper, rice, onion, mix vegetables and 1 can tomato sauce. Place portions of meat mixture in center of each cabbage leaf, wrapped them up Place seam side down in skillet. Add remaining sauce over rolls. Simmer, covered, for 1 hour.

1 head red cabbage
2 tablespoons peanut oil
5 cloves crushed garlic
3 tablespoons finely diced fresh peeled ginger
1/2 cup diced yellow onion
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 pound lean ground turkey
1 1/2 tablespoons hoisin sauce
2 tablespoons oyster sauce
1 1/2 tablespoons red chili sauce
1 1/2 tablespoons low sodium soy sauce
2 teaspoons rice vinegar
2 teaspoons fish sauce
2 teaspoons sesame oil
1/4 cup cilantro leaves, plus extra for garnish
1/4 cup toasted pine nuts
1/4 cup diced green onion

Steps:

  • Wash and dry the head of cabbage and cut off the end. Carefully remove about 8 leaves ensuring they are not torn and form nice "cups" to hold the filling.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the garlic, ginger, onion and cook for 1 to 2 minutes or until soft.
  • Add the red pepper, yellow pepper and turkey and cook until the turkey is almost cooked through and browned slightly, about 7 to 8 minutes. Add the hoisin sauce, oyster sauce, red chili sauce, soy sauce and rice vinegar. Let cook another 4 to 5 minutes until the sauce reduces. Remove from the heat.
  • Add the fish sauce, sesame oil, cilantro, pine nuts and green onion and stir to combine. To serve, place a spoonful of the mixture in each cabbage cup. Garnish with extra cilantro, if desired.
