1 cup shortening
1 cup milk
1 ½ teaspoons active dry yeast
1 teaspoon white sugar
½ cup warm water (110 degrees F/45 degrees C)
2 eggs
½ cup white sugar
2 teaspoons salt
4 ½ cups all-purpose flour
1 teaspoon baking powder
½ cup butter, softened

Steps:

  • In a small saucepan, combine shortening and milk. Heat until shortening is melted; set aside to cool. Dissolve the yeast and 1 teaspoon sugar in the warm water. In a large bowl, beat the eggs, 1/2 cup sugar, and salt together. Add the milk mixture and yeast mixture to the egg mixture, stirring to blend. Sift in the flour and baking powder, and mix well. Cover, and refrigerate overnight.
  • Divide dough into fourths, and on a floured surface, roll out into 1/2 inch thick circles. Spread surface with the soft butter. Cut each circle like a pie into 8 triangles, and roll up from larger to small end. Place rolls point side down on a baking sheet, and allow to rise until doubled, 3 to 4 hours. Preheat oven to 400 degrees F (200 degrees C.)
  • Bake rolls for 8 to 10 minutes in the preheated oven, or until golden brown.

These dinner rolls, slightly sweet and so very flaky, were my mother's recipe. They are simple to prepare because kneading skills are not required and the dough is easy to handle. My grandchildren have renamed them Grandma's Croissants! -Bernice Smith, Sturgeon Lake, Minnesota

4 cups all-purpose flour
1/2 cup sugar
1 teaspoon salt
1 cup cold butter, cubed, or shortening
1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
3/4 cup warm 2% milk (110° to 115°)
1 large egg, room temperature, lightly beaten
4 tablespoons butter, melted, divided

Steps:

  • In a large bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, dissolve yeast in warm water; add to crumb mixture. Add milk and egg; mix well. Cover and refrigerate overnight. , Divide dough into 4 equal portions. On a lightly floured surface, roll 1 portion into a 12-in. circle. Brush with 1 tablespoon melted butter; cut into 12 wedges. , Roll up, beginning with the wide end; place on greased baking sheets. Repeat with remaining dough. Cover and let rise in a warm place until nearly doubled, about 1 hour. , Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks.

Butterhorn dinner rolls date all the way back to colonial times, but I've streamlined the process to make this recipe easier for new and inexperienced bakers. These classic dinner rolls are light but rich, and slightly sweet. They're perfect for special occasions or holiday dinners, alongside any main course.

1 (.25 ounce) package active dry yeast
¼ cup warm water
½ cup unsalted butter
1 cup milk
3 tablespoons white sugar
3 ¾ cups all-purpose flour, divided
1 ½ teaspoons kosher salt
1 large egg yolk
¼ cup butter, melted

Steps:

  • Sprinkle yeast onto warm water. Stir gently and let sit until foamy and frothy, 15 to 20 minutes.
  • While the yeast is proofing, place butter in a saucepan with milk and white sugar. Turn heat to medium and cook, stirring occasionally, until butter melts and sugar dissolves, 3 to 4 minutes.
  • Remove from the heat and pour into a large mixing bowl; let cool until just very warm to the touch and about 120 degrees F (49 degrees C), 2 to 3 minutes.
  • Add 3 cups flour, kosher salt, yeast mixture, and egg; mix gently with a spatula until it all comes together and forms a very thick and wet batter. Add remaining 3/4 cup flour and mix with your fingers, incorporating just the amount of flour you need, until dough comes together into a soft, sticky ball.
  • Cover and let rise until almost doubled in size, about 1 hour.
  • Transfer dough to a floured surface and knead until smooth and elastic, about 5 minutes.
  • Grease the bowl with butter. Place the dough back into the bowl, cover, and let rise for 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Transfer dough back to a work surface and press it into a 1-inch thick circle. Flip over and continue pressing until circle is 1/2-inch thick; use a rolling pin if needed to achieve correct thickness. Use a pizza tool to cut dough into 12 equal wedges.
  • Starting at the larger end of one wedge, roll toward the point, stretching the ends of the dough out for the first few inches. Pinch and press the point into the dough to seal and place, seam-side down, on the prepared baking sheet. Repeat with remaining dough.
  • Let rolls sit until they puff up a little, 15 to 20 minutes.
  • Bake in the center of the preheated oven until cooked through and just starting to turn a light golden brown, 20 to 25 minutes.
  • Remove from the oven and immediately brush hot rolls with melted butter. Transfer to a wire rack to cool completely, 15 to 20 minutes.

1 cake yeast
1/2 cup sugar
3/4 teaspoon salt
1 cup milk, lukewarm
2 eggs, beaten
4 1/2 cups flour, sifted
1/2 cup butter, melted (no substitutions)

Steps:

  • Crumble yeast into a bowl; add sugar, salt, milk, and eggs.
  • Mix well; add half of flour and beat well.
  • Add melted butter and remainder of flour.
  • Knead until smooth, cover and let rise in a warm place until doubled.
  • Divide in half, roll each piece into a circle 1/4 inch thick.
  • Butter, if you like and cut each piece into 16 pie shaped pieces.
  • Roll each piece, beginning at the wide end towards the tip end, so that the tip is kept at an equal distance from each end of the roll.
  • Arrange shaped rolls on a well-greased baking sheet, placing the tip underneath the roll to prevent it from popping up and spoiling the shape of the roll.
  • Allow rolls to rise until doubled and bake at 375F for 12 to 15 minutes.
  • *To make crescent rolls, curve rolls slightly.
  • *To make butterleaf rolls, roll dough into a very think rectangular sheet, brush with melted butter; cut into strips 1 inch wide and pile 6 or 7 together. Cut into 1 1/2 inch pieces and place on end in greased muffin pans. Cover and let rise till doubled and bake as above.

These are very soft, buttery rolls that can be shaped into crescent rolls or rolled into 3 smaller balls and placed into muffin tins like hot rolls. Our family likes to make an extra batch of giant crescent rolls so we can make sandwiches the day after Thanksgiving with all of our leftover turkey.

1 cup whole milk
3/4 cup unsalted butter, cut into pieces
1/2 cup warm water (105 F to 115 F)
1/2 teaspoon sugar, plus 1/2 cup sugar
3 teaspoons dry yeast (one envelope plus 1/2 teaspoon)
3 large eggs, room temperature
5 1/4 cups all-purpose flour
1 tablespoon salt
1/2 cup butter, melted

Steps:

  • Stir milk and 3/4 cup butter in heavy medium saucepan over low heat until butter melts. Cool to 120° F if necessary. Combine water and 1/2 teaspoon sugar in small bowl. Sprinkle yeast over; stir to blend. Let stand until foamy, about 5 minutes.
  • In large bowl of heavy duty mixer fitted with whisk attachment, beat eggs and 1/2 cup sugar at low speed until blended. Beat in milk mixture. Gradually add 2 1/2 cups flour, beating until smooth. 1 pkg fast acting yeast
1/3 c warm water
1/2 c scalded milk
1 large egg
1 tsp salt
1/4 c sugar
2 1/4 c flour
1/2 stick butter, melted

Steps:

  • 1. Dissolve yeast in water. Cool milk and add it with egg, salt and sugar, then add flour. Mix and knead. Let rise until double in size. Roll out in circles and brush with melted butter. Cut in pie-shaped wedges; roll up. Brush with butter again. Let rise. Bake 15 minutes in 400 degree oven or until golden brown.
  • 2. Tip: To get your bread to rise a little faster, you can put a pan of boiling water in the oven on one rack and your rolls on another. Close oven door and let them rise. Don't turn on the oven.

My daughter's number one favorite food I make are these soft, buttery rolls from "Bread Machine Magic." I have made these a million times and could do it in my sleep. The dough is a cinch to work with and they turn out exactly the same every time. Leftovers are great with jam. This bread dough makes a delicious kid-friendly pizza crust, too. Cooking time does not reflect the rising time. Recipe from "Bread Machine Magic."

3/4 cup milk
1 egg
3 cups all-purpose flour
1 teasoon salt
1/3 cup oil (can use shortening, too)
1/3 cup sugar
2 1/4 teaspoons yeast (or what your bread machine uses)
1 1/2 tablespoons melted butter

Steps:

  • Place all ingredients except melted butter in pan.
  • Select Dough Only setting and press start.
  • When dough has risen long enough, the machine will beep.
  • Remove dough from pan.
  • Divide dough into 3 equal balls.
  • Roll out each ball, one at a time, into a 9 inch circle (don't worry if you can't get it exactly 9 inch).
  • (Note: I always start rolling my dough and let it rest for awhile and resume rolling. The resting helps relax the dough).
  • With pizza cutter (works great!)or sharp knife, divide each circle into 8 wedges, as if cutting a pizza.
  • Starting at the wide end, roll up each wedge toward the point.
  • Cover and place in a warm oven (turn oven onto warm setting for 2 minutes and turn off, to make a good environment for dough).
  • Let rise for 30 to 40 minutes until doubled.
  • Remove sheet from oven to preheat oven!
  • Preheat oven to 375 degrees.
  • Bake for 12-15 minutes until golden.
  • Remove from oven.
  • Brush rolls lightly with melted butter.

GERMAN BUTTERHORN ROLLS (QUICK RISE)



German Butterhorn Rolls (Quick Rise) image

This is one of the nicest, easy to work with doughs that I use in bread baking. It is extremely forgiving and elastic. The rise time of these quick-rise rolls is about half that of most yeast rolls, making them perfect for last minute needs. As long as you have nice, fresh yeast, they will rise like crazy. Perfect for those just entering bread baking. You can't mess these up.

1 1/2 cups water (should be the temperature of a warm bath, not hot.)
1 tb yeast, use fresh yeast for best results (i use red star instant yeast)
2 tb white sugar
2 tablespoons of very soft butter
1 tsp salt
4 cups of bread flour, may not use every bit of it
4 tb butter, melted to brush on hot rolls when done baking

Steps:

  • Place warm water in a glass measuring cup. Add sugar and yeast. Stir well to combine. Set aside for 5-10 minutes until nice and foamy. (See photo)
  • While you are waiting for your yeast, add 3 3/4 cups of the flour, 2 TB softened butter and 1 tsp salt to stand mixer mixer bowl. Stir to combine.
  • When yeast is foamy, add to flour mixture. Turn on stand mixer, fitted with a dough hook, and mix until combined, scraping sides. Slowly add the remaining 1/4 cup of flour just until the dough pulls away from the sides of the bowl and cleans the sides. I usually use the full 4 cups, but humidity, flour etc. can vary. (See photo)
  • Once the dough is in a ball, is cleaning the sides of the mixer bowl and isn't excessively climbing the dough hook, let the mixer knead the dough gently for 4-5 minutes until smooth and elastic. Transfer to buttered bowl, turning over once to coat. Cover with buttered Saran Wrap and allow to rise for approximately 30 minutes in a warm, draft-free place.
  • Gently punch the dough down and place on a very lightly floured baking mat. Cut the dough in half. Each half of dough will produce 12 rolls total.Take one half of the dough and gently stretch into a circle, as if you were making pizza dough. When round, using a lightly floured rolling pin, roll gently to produce a uniform thickness.Then cut to form 12 triangles. Roll triangles from large side to small, tucking tip under and bending ends slightly forward. Place on parchment lined baking sheet, allowing enough room to rise and bake. Repeat with rest of dough. When all dough is formed, you will have 24 rolls.
  • Once all of the triangles are formed, cover the rolls with buttered Saran Wrap and allow to rise again for 30 minutes. Preheat oven to 375 degrees.
  • Remove Saran Wrap and bake for 11-14 minutes until golden. (In my electric oven, they take 13 minutes exactly.) Remove from oven and brush lightly with melted butter. Cool on metal racks.

FRECKLED BUTTERHORN ROLLS

1/2 cup toasted wheat germ

Steps:

  • In a large bowl, dissolve yeast in milk. Add butter, sugar, eggs, salt and 4 cups flour. Beat until smooth. Stir in wheat germ and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface, divide into four portions. Roll each into a 12-in. circle; cut each circle into 12 wedges. Roll up wedges from the wide end and place pointed end down 2 in. apart on greased baking sheets. Curve ends to form a crescent shape. Cover and let rise in a warm place until doubled, about 45 minutes. , Bake at 375° for 12 minutes or until light golden brown. Remove from pans to wire racks.
