This is the most ultimate rich dense buttery pound cake! no lein this cake but the eggs--- for best results this cake should be baked a day ahead and wrapped in plastic, or it can be frozen for up to 3 months, servings is of coarse estimated --- this is wonderful served with a blueberry or strawberry sauce :)

1 1/2 cups butter, softened (no substitutions)
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 large eggs, room temp
1 1/2 teaspoons vanilla (or use almond extract)
3 cups all-purpose flour
2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F.
  • Generously grease two 8 x 4-inch loaf pans or a 4-quart tube pan.
  • In a bowl cream the butter and cream cheese until smooth.
  • Add sugar; beat until light and fluffy, about 5-7 minutes (you MUST beat for at least 5 minutes this is an important step!).
  • Add the eggs one at a time beating well after each addition.
  • Mix in vanilla.
  • With mixer on low add the flour and salt in two additions.
  • Immediately pour in batter into prepared pan.
  • Tap pans to eliminate any large air bubbles in the batter.
  • Bake 60-75 minutes, or until cakes tests done.
  • Note: if the tops begin to brown too quickly tent loosely with foil.
  • Cool in pans for 10 minutes.
  • Turn out the cakes then cool completely with the tops up on a wire rack.
  • Note: if baking in a 4-qt tube pan increase baking time by about 5 minutes.

Outrageously Buttery Crumb Cake image

This simple crumb cake is the BEST I ever tasted. The cake is so moist, and there is a ton of buttery crumb topping to die for. It's my aunt's recipe from the 1970's (hence the 1 pound of butter) and therefore of uttermost decadence, but oh so addictive! I've made this recipe so many times, with so many compliments. I basically eyeball the measurements now (I like a lot of cinnamon) but below is the original recipe.

1 (18.25 ounce) package yellow cake mix
⅔ cup water
3 eggs
½ cup butter, softened
1 ⅓ cups packed brown sugar
1 tablespoon ground cinnamon, or to taste
1 tablespoon vanilla extract
1 ½ cups butter
4 ½ cups all-purpose flour
1 tablespoon confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x18-inch jellyroll pan.
  • Beat the yellow cake mix, water, eggs, and 1/2 cup softened butter together with an electric mixer in a mixing bowl until thoroughly blended, about 2 minutes on medium speed. Pour the cake batter into the prepared jellyroll pan.
  • Bake in the preheated oven until the edges of the cake are light brown but the middle of the cake is still slightly gooey, 15 to 17 minutes.
  • While the cake is baking, mix together the brown sugar, cinnamon, vanilla extract, butter, and flour together in a large bowl until the mixture forms medium crumbs. Remove the cake from the oven, and press about 3/4 of the crumb topping onto the top of the almost-baked cake. Reserve the remaining topping.
  • Return the cake to the oven, and bake an additional 10 to 12 minutes, until the crumb topping is firm and the cake is cooked all the way through.
  • Remove the cake from the oven, and sprinkle with the remaining crumb topping. Let the cake cool to room temperature, and sprinkle with confectioners' sugar.

1 package pillsbury pudding-included yellow cake mix (Pillsbury brand makes a big difference in the outcome of the cake, 2-layer size)
4 eggs
1/2 cup melted butter
8 ounces cream cheese, room temperature
1 teaspoon vanilla extract
1 lb powdered sugar

Steps:

  • Preheat oven to 350ºF.
  • Grease a 13 x 9 x 2-inch baking pan.
  • Pour cake mix into mixing bowl.
  • Mix in 1 slightly beaten egg and butter to a moist dough consistency.
  • Press mixture evenly in baking pan.
  • Using electric mixer, beat cream cheese, remaining eggs and vanilla together until creamy.
  • Beat in sugar gradually, until smooth; this takes several minutes.
  • Pour cream cheese mixture over dough in baking pan.
  • Bake 35 to 40 minutes.
  • Watch carefully so base doesn't get too brown.
  • The cheese mixture sinks into the center somewhat, leaving a firmer crust around the edges.
  • Cut into squares to serve.
  • Some cooks sprinkle powdered sugar or pecans over the top of the baked cake or garnish it with fresh strawberries.

  • cut 1/4 cup butter in to flour and brown sugar set a side.
  • sift flour baking powder, baking soda and salt.
  • cream 1/2 cup butter with cream cheese, gradually add sugar, blend in eggs and vanilla beat very well add milk alternately with sifted flour blend well after each addition.
  • pour in to a 13 x 9 inch pan sprinkle crum mixtureon top adding 1/2 cup chopped nuts if you wish.
  • bake at 350 F for 30 to 40 mins.
