An old Amish neighbor taught me how to make this very simple, yet delicious recipe...she was always making simple treats and sending to us...for favors we did for them...I miss her cooking since we moved...this was the last recipe she shared with me... I added my own touch to the recipe, adding pecans... I think Rachel would...

SYRUP
1 3/4 c packed, brown sugar - i use dark
2 1/4 c very hot water
1 1/2 Tbsp butter
DUMPLINGS
1 c packed, brown sugar
1 Tbsp butter, softened
2 c flour
1 1/2 tsp baking powder
pinch salt
3/4 c milk
3/4 c pecans, in pieces

Steps:

  • 1. Preheat oven to 350 degree F. In a 9 x 13 baking dish...mix the brown sugar, water...add butter, and place dish in preheated oven. Prepare dumplings.
  • 2. In a medium bowl; mix dumpling ingredients until thoroughly combined...if too thick, add a bit more milk, just enough to incorporate the dry ingredients.
  • 3. Now, take pan from oven...make sure butter is melted into the syrup...stir around a little. Using a tablespoon, place heaping dollops of dough into the hot syrup. You should get 12 dumpling, 3 per row. Sprinkle with pecans, if using, sometimes I put them into the syrup first. It doesn't matter.
  • 4. Bake for 30 minutes, or until dumplings are completely cooked.
  • 5. Place dumplings into serving dish, and ladle desired amount of syrup over the dumpling, and ice cream if using...it's delicious!

Chef Lou runs the Westside Drive-In here in Boise, Idaho. Although everything I've tasted there has been delicious, I always came back for his fish and chips. When I saw this recipe of his on the local news website, I had to try it. Burnt sugar cake is a childhood favorite that only Gramma ever made to perfection, and lets be honest, if it's doughnut-like in any way, I'm gonna eat it! :) I haven't made this one yet, but when I do it'll be altered for gluten free and without the walnuts. I'm posting it in it's original form here with edits only for clarity in instructions and ingredient format for posting. The yield and cook time are estimates until I make this myself.

Number Of Ingredients 12

1 1/2 cups sugar
2 tablespoons butter
1/8 teaspoon salt
2 cups hot water
1 1/2 cups flour
2 1/2 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
3 tablespoons melted butter
1/2 cup chopped walnuts
3/4 cup milk
whipped cream, if desired (or Ice Cream)

Steps:

  • Heat ½ cup of the sugar in a large pan, until it melts to a golden brown syrup.
  • Add butter, salt, and remaining sugar.
  • Gradually add the hot water, stirring constantly.
  • Heat to boiling and cook until sugar dissolves, about 10 minutes.
  • Stir together flour, baking powder, sugar, and salt.
  • Drizzle in butter and mix well.
  • Add walnuts; stir in milk and only mix until flour is moistened.
  • Drop by ¼ cup spoonfuls into gently boiling caramel sauce.
  • Cover tightly and simmer about 12 minutes without removing cover.
  • To serve, invert a serving platter over the top of the pan and flip the pan over quickly. (If you don't feel comfortable doing this, you can use a spatula to remove the dumplings from the pan and transfer to a serving platter).
  • Serve at once with whipped cream or ice cream.
