These are very easy chicken & cheese burger patties. You can use either ground chicken or turkey meat. These grill up great outdoors on the BBQ or inside on the indoor grill. My husband and I love serving these on a bun coated with BBQ sauce & a handful of "French's" fried onions and we top them with a slice of american cheese too - they are perfect that way. PS: These are super to freeze, I make a fresh batch of either chicken or turkey & always freeze about 6 or so patties. I wrap them individually in Saran Wrap, then put all 6 either in a tupperware container or a large freezer zip-loc bag as in photo.

1 lb ground chicken (fresh ground chicken or turkey meat)
1 cup sharp cheddar cheese, finely shredded
1/3 small onion, chopped (microwave with a dash of olive oil)
1 egg, beaten
3 tablespoons mayonnaise
1/2 cup dry Italian seasoned breadcrumbs

Steps:

  • Take the 1/3 of small onion chopped & put in microwave safe bowl with a dash of olive oil & microwave for 1 minute.
  • Combine onion with all remaining ingredients in large bowl then shape into 6 patties.
  • Grill on BBQ or pan fry with 1 tablespoon vegetable oil (if you panfry, coat burger patties individually in additionaly 1/2 cup breadcrumbs then fry they are extra crispy & tasty :-) ) You could also bake these in oven.

This is a hero item and a regular in my family. The herbs and extra's make these patties a great addition to your burger. I make 2 kilos (4 pounds) worth of patties and freeze half. Patties need to be refrigerated for 1 HOUR prior to cooking or they will break apart.

2 pounds ground beef (minced beef) not diet!
1 large onion, diced fine
1 teaspoon of oil
2 teaspoons mixed herbs
1 onion
1 cup bread crumbs
2 tablespoons bbq sauce - your favourite
1 teaspoon minced garlic

Steps:

  • 1. Heat the oil in a pan and fry the onion for 2 minutes - enough to take away the rawness and just cook through.
  • 2. Place all the ingredients (including the cooked onion) in a large bowl and use your hands to mix well.
  • 3. Form into 10-12 equal sized patties. Place on a large plate. Cover and pop in the fridge for at least 1 hour or over night.
  • 4. Cook patties on a hot grill, BBQ or griddle plate. Only turn once and DON'T press down with a spatula.
  • 5. Serve inside your favourite burger.

CHICKEN AND VEGETABLE BURGER PATTIES

This was a recipe I came up with when I started trying to lose weight with Sure Slim. It uses Cruskit crispbreads or crackers and follows the "rules" of the diet. Cruskits are those revolting puffed crispbreads that you buy thinking that you are being good but then don't eat. I found that they make an excellent binder for burgers.

400 g ground chicken
8 crackers
1 onion
3 garlic cloves
2 stalks celery
2 large mushrooms
1 zucchini
1 bunch coriander
1 tablespoon soy sauce
2 tablespoons olive oil
salt
pepper

Steps:

  • Put the Cruskits in the food processor and grind to a fine breadcrumb consistency. Tip the crumbs into a bowl.
  • Put the rest of the ingredients except the chicken into the food processor and pulse until finely chopped.
  • Note: Resist the temptation to do the Cruskits and vegetables together. You'll end up with a gluggy mess that is difficult to get out of the food processor.
  • Add the chicken and vegetables to the crumbs and mix together quickly. The crumbs absorb the liquid and become sticky so the quicker you can work, the easier it is to combine everything evenly. I get into it with my hands.
  • Divide into 4 large patties or 8 small ones, about 1.5 to 2 cm thick. Grill for 7 minutes on each side.
  • Serve in a pita bread with lettuce and tomato or serve as a main dish with vegetables.
  • These patties can also be baked in a hot oven. I also make them into meatballs and bake them then freeze them. They can be added to stock and bok choy for a very quick meal.

  • In 12-inch skillet, melt butter over medium-low heat. Stir in brown sugar. Add onions; cook 12 to 16 minutes, stirring occasionally, until onions begin to turn golden brown. Place onions in medium bowl; cover to keep warm.
  • In same skillet, cook beef patties over medium heat 6 to 8 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.

Add white parts of the green onions, bell pepper, celery, and garlic to the hot oil and saute until they start to brown, 5 to 7 minutes. Add green parts of the green onions and parsley; saute, 2 to 3 minutes more. Let cool, about 10 minutes.
  • Combine the veggie mixture with the fish. Add salt, onion powder, garlic powder, red pepper flakes, and black pepper; mix with your hands until well combined. Mix in bread crumbs and egg until thoroughly combined. Shape into burger-sized patties.

These light and tasty patties make the perfect substitute for those days when you want a cheeseburger. You may grill these in a non-stick pan with no added oils, or you can pan fry them. I suggest trying the non-stick route, for better health! Serve with provolone cheese, on a bun or just by itself. My son liked ranch dressing with his, and I made a balsamic broccoli rainbow slaw to put atop mine. We were all satisfied!

1 lb mushroom, of your choice
1/2 cup onion, diced
1 garlic clove, minced
1 tablespoon olive oil
1 cup cooked quinoa
1 (16 ounce) can drained and rinsed garbanzo beans (Chick Peas)
1 1/4 cups breadcrumbs
1 beaten egg
3 green onions, finely chopped
salt & pepper
1 tablespoon mccormick's pinch perfect garlic basil seasoning (or other seasoning)

Steps:

  • Clean mushrooms with a damp cloth. Mince finely or put into a food processor until they are finely chopped.
  • Saute the onions and garlic on medium high heat for 3 minutes. Add mushrooms and cook until mushrooms are tender and darken in color. Remove from heat, drain off and reserve excess water. Season with salt and pepper.
  • Mash or use a food processor on the Garbanzo beans to make a paste. It is okay if some of the beans are intact, gives a nice texture.
  • Combine the mushroom mixture, the cooked quinoa, the mashed garbanzo beans, the bread crumbs, the green onions, the McCormick's seasoning and the beaten egg and combine well with a rubber spatula.
  • You may need to add more liquid, use the reserve from the mushrooms & onion mixture.
  • Form into patties. Make sure they are not too thick or they will not cook right. There should be 6 medium large patties, no more than 1/2 inch thick.
  • Refrigerate the patties for an hour, covered tightly with plastic wrap.
  • Use a non-stick pan to grill on each side, about 6 minutes each side on Medium High heat. I had no problems with sticking, but if you must you a cooking spray first.

This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.

1 tablespoon olive oil
salt and ground black pepper to taste
2 tablespoons butter
1 shallot, minced
1 clove garlic, minced
6 sun-dried tomatoes, chopped
1 cup bread crumbs, or more if needed
1 egg, beaten
¼ cup grated Parmesan cheese
¼ cup vegetable oil, or as needed

Steps:

  • Preheat an oven to 475 degrees F (245 degrees C).
  • Place squash on a baking sheet; drizzle with olive oil. Season with salt and pepper.
  • Bake in the preheated oven until tender, about 45 minutes. Remove and cool. Cut into cubes.
  • Heat butter in a skillet over medium heat; cook and stir shallot and garlic in the melted butter until shallot is transparent, 5 to 10 minutes. Add sun-dried tomatoes; cook until softened, 2 to 3 minutes. Mash squash cubes into shallot mixture until relatively smooth. Remove from heat, transfer mixture to a bowl, and cool for 2 to 3 minutes.

We've been making this for years but now that we know how to make our own dry onion soup mix it's better for us in the sodium department. We have cooked the burger patties on the grill...

1/4 c dehydrated onion flakes
2 Tbsp sodium-free beef bouillon granules
1/4 tsp onion powder
1/8 tsp paprika
1/8 tsp celery seed
dash black pepper
1 lb lean ground beef
montreal steak seasoning
1/2 c panko bread crumbs - unseasonsed
2 c sliced fresh mushrooms
1 Tbsp thinly sliced green onion - white part
3 Tbsp flour
1-1/2 - 2 c filtered water
remainder of dry onion soup mix
2 Tbsp sour cream

Steps:

  • 1. In small bowl mix together the dehydrated onion flakes, beef bouillon granules, onion powder, paprika, celery seed and pepper. Set your dry onion soup mix aside.
  • 2. In a large bowl crumble the ground beef then add the egg, panko bread crumbs and 2 Tablespoons of the dry onion soup mix. Combine and form into 4 patties. Sprinkle both sides of each patty with Montreal Steak Seasoning. I like to keep mine rather thick but if you prefer thin, then by all means make them thin.
  • 3. Heat a skillet, large enough to comfortably hold the patties without crowding them, over medium heat. Lay the patties in and brown on one side then flip and brown on the other side. Cook for about 5 minutes then remove to a platter and keep warm. Internal temperature should be right around 155 .. they will continue to cook once removed and finish off later in the sauce.
  • 4. Add the mushrooms to the skillet drippings and cook over medium until just about caramelized. Add the onions and cook just until tender. Remove to a bowl and keep warm.
  • 5. Sprinkle the flour over the pan drippings and whisk in. NOTE: If the mushrooms absorbed all or most of the drippings add some butter. Your ratio should be about 4 Tbsp fat to 3 Tbsp flour - give or take what you prefer for thickness. Cook over low heat - whisking constantly - for about 5 minutes being careful not to let it burn. Add about 3/4 of the water and whisk until the mixture begins to thicken. Slowly add small amounts of more water to get the mixture to the right thickness for your personal taste. Be careful not to add too much or it will be really runny. Stir in the remaining soup mix then add in the mushrooms and onions.
  • 6. Remove from heat and whisk in the sour cream. Lay the burger patties into the sauce and spoon some sauce over top of them. Cover and let it sit for about 3 minutes to warm the meat through. Serve sauce with patties and mashed potatoes and a vegie.
  • 7. ***** NOTE ***** If you prefer you can mix the burger patties according to instructions then toss them on the grill for a great additional flavor. While they are grilling you can get the mushroom sauce ready as described.

1/2 tablespoon garlic, finely chopped
5 tablespoons Worcestershire sauce
1/2 teaspoon salt
1 teaspoon black pepper
2 teaspoons mixed Italian herbs
1 egg
60 g camembert cheese

Steps:

  • Put all the ingredients into a large mixing bowl, except for the cheese. Mix thoroughly using your hands, ensuring the ingredients are well distributed.
  • Cut cheese into disks, 3/4" thick. You can use any cheese of your choice, my favourites are Camembert, Brie and Monterey Jack.
  • Divide mixture into 4 portions. Shape each portion into a burger patty, approximately 2" thick.
  • Using a spoon, scoop out approximately 1 tbsp meat from the middle of the patty for the pocket, being careful not to scoop all the way through to the bottom (leave 1/2" of meat for the base of the pocket). Reserve the scooped meat.
  • Place cheese in the pocket and cover with the reserved meat, pinching the sides to close and smooth to flatten.
  • Cook on a grill for approximately 7 minutes on each side to allow the cheese to melt, or to desired doneness.
  • Serve as you would a regular burger, or on its own with side dishes.

1/2 lb ground chicken breast
1/2 lb ground dark turkey meat
1 large egg
1 3/4 cups sauerkraut, drained and fairly dry, divided
1/2 cup onion, finely chopped
1 teaspoon Worcestershire sauce
1 teaspoon whole grain mustard (or dejon type)
1/2 teaspoon fresh ground pepper
1/2 teaspoon sage, rubbed (optional)
vegetable oil cooking spray
4 slices aged cheddar cheese
4 hamburger buns, toasted and librally spread with mustard (optional)

Steps:

  • Thouroughly mix together, chicken, turkey, egg, 3/4 cup saurkraut, onion, wostershire sauce, mustard, pepper, and sage if using.
  • Divide mix into 4 patties. Spray a non stick frypan generously with veggie spray; heat to a sizzle. Add patties, reduce heat to medium, cook for about 3 minutes, 'til well browned and flip, cook another 3 minutes, put lid on frypan and cook another 8 minutes; remove lid and place a slice of cheese on top of each pattie, put lid back on and cook another 5 or 6 minutes or until the cheese melts.
  • Remove to plate on top of toasted bottom of roll; place 1/4 cup saurkraut on top of each pattie; top with other half of roll.
  • Or alternately leave the roll out and serve with mustard, veggies and potatoes.

I eat alot of turkey burger. Since my salt intake is limited, I have adjusted other spices to make these delicious. I buy the lean 90/10 Krogers carries their own brand. I prefer buying the turkey breast ground. Hope you try this. I don't miss red meat burgers at all.

1 lb lean ground turkey breast
2 tsp dried minced onion
1 tsp each ground rosemary, ground sage, white pepper, paprika

Steps:

  • 1. In a medium sized bowl, break up meat and add spices, mixing well
  • 2. Cover with plastic or a lid and refrigerate at least an hour or two, to let the flavors marinate
  • 3. Divide mixed meat into 5 sections. Using a long sheet of wax paper, place one ball of meat on one end, fold paper over, and flatten patty to desired thickness and size.
  • 4. Preheat skillet on medium high heat, and add 1 teaspoon olive oil, using a pastry brush coat skillet bottom
  • 5. place your meat patty in skillet (however many you will be frying). Cover and refrigerate any unused meat.
  • 6. turn burner down to medium once you flip your burger and cook until your desired browness.
  • 7. serve hot on a bun, with your favorite toppings. Lettuce, tomatoe slices, onion slices and pickle. Yum Yum

3 tablespoons butter or 3 tablespoons margarine
1 tablespoon packed brown sugar
2 cups sliced onions (2 medium)
4 (4 -5 ounce) ground beef burgers (4 to 5 oz. each)
1 (12 ounce) jar beef gravy

Steps:

  • In 12-inch skillet, melt butter over medium-low heat. Stir in brown sugar. Add onions; cook 12 to 16 minutes, stirring occasionally, until onions begin to turn golden brown. Place onions in medium bowl; cover to keep warm.
  • In same skillet, cook beef patties over medium heat 6 to 8 minutes, turning once, until meat thermometer inserted in center of patties reads 160 degrees.
  • Return onions to skillet; pour grav over onions and patties. Cook 2 to 3 minutes longer, stirring once or twice, until gravy is throughly heated. If desired, sprinkle with chopped fresh parsley.

I was researching the parts of a hamburger, burger patties this time. For the patties the meat is at its best when fresh and freshly minced and contains about 20% fat. In the patties the meat has the main role - the bread crumbs are used only a bit and sometimes not at all. This recipe has the basic seasonings but they may be switched according to your taste of course, whether you liked the milder or hotter. 1 kilograms minced meat according to taste
100 milliliter(s) bread crumbs
½ teaspoon(s) black pepper
½ teaspoon(s) paprika
100-200 milliliter(s) milk
1 - egg
3 clove(s) garlic
100 gram(s) green onion
- salt

Steps:

  • Mix all the dry spice into the bread crumbs except for the salt and finally the milk and the eggs. Allow it to set for about 15 minutes. If the meat of your choice already has a high water content (such as chicken), try first adding less milk and then more, as long as the mix stays easy to handle.
  • 1. Peel, wash and finely mince the onions. 2. Add the onions and the meat into the mix, making it even.
  • 1. Divide the mix into balls according to the desired portion size. 2. Flatten the balls, for instance by pressing them between two baking papers, under a plate. If the mix has the right consistency this should be easy. 3. Right before cooking sprinkle the salt on both sides. The frying pan or grill should be hot.
