6 cups water
2 lbs medium shrimp, unpeeled
1/2 cup minced onion
2 tablespoons melted butter
1 tablespoon peanut oil
1/3 cup flour
1 1/2-2 tablespoons curry powder, to taste (depending on the spiciness of your curry powder!)
14 ounces chicken broth (or vegetable broth)
1 1/2 cups milk (or 1 cup milk and 1/2 cup heavy cream)
1 1/2 teaspoons sugar
1/2 teaspoon salt
1/2 tablespoon freshly grated gingerroot
1 teaspoon fresh lemon juice
roasted peanuts
sliced scallion
raisins
toasted coconut
fresh cilantro
cooked bacon, crumbled

Steps:

  • In large pot of boiling water, cook the shrimp for about 3 to 5 minutes or until shrimp turns pink. Drain, rinse with cold water, devein and set aside.
  • Cook onion in butter and peanut oil in large skillet over medium heat until softened.
  • Lower heat and add flour and curry powder. Stir with whisk until smooth and no lumps remain. Cook for 1 minute stirring constantly until mixture thickens.
  • Gradually stir in broth and milk; cook over medium heat, stirring constantly until thickened.
  • Stir in sugar, salt, fresh ginger, and lemon juice. Add shrimp and cook until heated through.
  • Serve shrimp with hot cooked white rice garnished with any or all of the suggested toppings.

This wonderful recipe comes from "The Bubba Gump Shrimp Co. Cookbook". It is deceptively simple, but very tasty. Prep time includes chilling the shrimp after cooking.

6 cups water
2 lbs unpeeled medium raw shrimp
1/2 cup mayonnaise or 1/2 cup salad dressing
2 tablespoons chopped green onions
2 tablespoons chopped green peppers
1 large hard-boiled egg, finely chopped
1 tablespoon chopped pimiento
1/2 teaspoon lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
curly leaf lettuce
shredded iceberg lettuce

Steps:

  • Bring water to a boil; add shrimp, and cook 3-5 minutes, or until shrimp turns pink.
  • Drain well; rinse with cold water.
  • Chill.
  • Peel and devein shrimp.
  • Cover and chill thoroughly.
  • Combine mayonnaise and next 7 ingredients; stir well.
  • Pour mayonnaise mixture over shrimp, and toss gently.
  • Line a shell shaped bowl or salad bowl with leaf lettuce; top with shredded iceberg lettuce.
  • Spoon shrimp mixture evenly over shredded lettuce.

Bubba Gump Coconut Shrimp Recipe - (4.2/5) image

Number Of Ingredients 6

1/2 pound unpeeled medium-size fresh shrimp
3/4 cup pancake mix
3/4 cup beer
1/4 cup all purpose flour
1 cup flaked coconut
Vegetable oil

Steps:

  • Peel and devein shrimp, leaving tails intact. Combine pancake mix and beer in a small bowl. Stir until smooth. Pour oil to depth of 2 inches into a Dutch oven. Heat to 350°F. Dredge shrimp in flour; shake off excess. Dip shrimp into batter; dredge in coconut. Fry, a few at a time, 45 seconds on each side or until golden. Drain on paper towels.
