3 pounds medium Brussels sprouts
2 tablespoons vegetable oil
8 thick slices bacon (about 8 ounces), cut crosswise into 1/2-inch strips
2 teaspoons apple cider vinegar
1/2 teaspoon kosher salt, plus more as needed
Freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil and salt it generously. Trim the bottom end of the Brussels sprouts, leaving the core intact, and pull off the outer dark leaves. Halve through the core. Add the Brussels sprouts and cook, uncovered, until tender, about 6 minutes. Drain and rinse under cold running water. (This can be done a day ahead.)
  • Meanwhile, put the oil and bacon in a very large skillet or stewpot, and cook over medium heat, stirring occasionally, until the bacon is crispy. Remove the bacon with a slotted spoon and set aside. Increase the heat to medium-high, add the Brussels sprouts and cook, stirring occasionally, until they brown and the edges get crisp, about 10 minutes. Stir in the vinegar, salt, pepper, and bacon. Serve warm.

4 cups whole Brussels sprouts
8 slices molasses-cured shoulder bacon or regular bacon
6 cloves garlic, chopped
Freshly ground black pepper

Steps:

  • Fill a large saucepan with water, add a pinch of salt, and bring to a boil. Add the Brussels sprouts and cook them for about 8 minutes. Remove the sprouts from the heat, drain, and then chill them in the refrigerator. Slice the sprouts in half when they have cooled.
  • In a large skillet, cook the bacon over medium heat until it is done. Discard all but 2 tablespoons bacon fat and grease from the pan, leaving the 2 tablespoons in the pan. Add the garlic and cook for a few minutes over medium-low heat until fragrant. Add the sprouts and cook until heated through. Season the sprouts with kosher salt and fresh black pepper, to taste.

  • Preheat oven to 425 degrees. Line a baking sheet with foil then spray liberally with non-stick spray and set aside. Combine Brussels sprouts, bacon, shallots, garlic, oil, salt, and pepper in a large bowl then toss to combine. Transfer to prepared baking sheet then spread out and turn sprouts cut side down. Place as much of the bacon and shallots on top of the sprouts as possible then roast for 20 minutes, or until golden brown and caramelized.

1 lb Brussels sprout, trimmed and halved
4 slices smoked bacon, chopped
1 shallot, sliced
2 tablespoons white wine
2 tablespoons olive oil
1 tablespoon butter
1 pinch of kosher salt and cracked pepper, to taste

Steps:

  • 1.Preheat oven to 425 degrees.
  • 2.In oven safe skillet or casserole dish crisp bacon over medium high heat. About 8-10 minutes. Remove bacon and set aside on plate lined with paper towels. Dispose of fat in the skillet.
  • 3.Return skillet to stovetop. Deglaze pan with white wine, scraping brown bits from bottom of pan.

  • 1. Preheat oven to 450°. 2. Cut dry end of brussel sprouts off and cut sprouts in half lengthwise. Place in a large bowl and toss with olive oil to coat. 3.
