2 teaspoons white sugar

4 cups diced tomatoes
2 cups mini fresh mozzarella balls
½ cup fresh basil, coarsely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Whisk vinegar, olive oil, garlic, and sugar together to make dressing. Add onion, salt, and pepper; mix well.

3 cups diced tomatoes (See Cook's Note)
1 cup mini mozzarella balls, halved
2 cups diced cooked chicken (See Cook's Note)

1/2 cup marinated artichoke hearts, quartered
1/3 cup sliced black olives
1/3 cup shredded Parmesan
1/4 cup balsamic vinegar
2 cloves garlic
1 tablespoon honey
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Make the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package directions. Drain the pasta, transfer to a large bowl, and let cool slightly. Add the tomatoes, mozzarella, chicken, basil, artichokes, olives, and Parmesan. (If you're looking to make this recipe in advance, leave out the fresh basil and stir it in right before serving.) Toss to combine.

Steps:

1 Tbsp garlic powder (not salt)
1 Tbsp dried Italian herbs
2 Tbsp salt
10 oz dry pasta (rigatoni, penne, farfalle, etc.)

1/2 c roughly chopped fresh basil
3 medium fresh tomatoes, seeded and diced
1/2 c crumbled Feta cheese
1/4 c toasted pine nuts
1/4 c chopped sun-dried tomatoes (not in oil)
3 Tbsp balsamic vinegar
3 Tbsp olive oil
salt and pepper, to taste

Steps:

  • 1. Place a pot with 4 quarts of water on high and add garlic powder, dried Italian herbs and salt.
  • 2. Once the water comes to a boil add the pasta and boil till the pasta is "al dente" (approximately 8-10 minutes). Drain all of the water from the pasta (don't rinse) and place in a bowl to cool.

3/4 - 1 cup feta cheese, crumbled
1 teaspoon oregano
1 tablespoon capers
1-2 tablespoons chopped Kalamata olives
1/2 cup ripe tomatoes, chopped
3 tablespoons olive oil
Cretan barley rusks, also know as I>paximadiaI>

Steps:

  • Combine first six ingredients in a bowl and place in refrigerator for at least an hour or overnight. Sprinkle rusks with a few drops of water to moisten slightly. Top each rusk with the prepared cheese and tomato mixture. Set aside for 10 minutes, and then serve with a chilled glass of white wine. Elena Pappas [email protected]

Tomato Bruschetta Ziti Salad image

This is a light and tasty salad--great for potlucks or just for a side. I like it with grilled chicken and fresh yeast rolls. The cook time is really the chilling time.

1 (8 ounce) box uncooked ziti pasta
3 cups fresh plum tomatoes, chopped
1/3 cup olive oil
1/4 cup finely chopped onion
2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 garlic clove, finely chopped
1/2 teaspoon salt
ground black pepper
1 cup garlic-flavored croutons

Steps:

  • Cook the pasta according to the package directions; drain.
  • Rinse with cold water to cool quickly; drain well.
  • In large bowl, stir together tomatoes, oil, onion, vinegar, basil, garlic and salt; add fresh ground black pepper to taste.
  • Cover and refrigerate.
  • Garnish with the croutons right before serving.
  • This recipe can be doubled.
