PINEAPPLE BROWN SUGAR-GLAZED BONELESS HAM
Boneless smoked ham makes a holiday centerpiece that's as easy to serve as it is to prepare. Dressed in pineapple rings and studded with cloves and maraschino cherries, it is a nostalgic dish that is classic and timeless. Finished with brown sugar glaze it comes out of the oven glossy and golden.

Steps:
- Let the ham sit at room temperature for about 30 minutes. Preheat the oven to 350 degrees F.
- Place the ham on a cutting board. Using a sharp paring knife, score the top and sides in a diagonal crosshatch pattern about 1/4 inch deep. Push the cloves into the ham if using, placing them at the intersections of the cuts. Put the ham, scored side-up, on a rack set in a roasting pan.
- Drain the pineapple rings, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water into the bottom of the pan and tent the ham loosely with foil. Roast until an instant-read thermometer inserted in the thickest part of the ham registers 130 degrees F, about 1 hour.
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Bring to a simmer and cook, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the ham and carefully brush a third of the glaze all over. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes before slicing.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
- Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
- Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
- While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.
- Pour about half the glaze evenly over the ham and pineapple about 1 hour before the end of baking; pour the rest over the ham about 30 minutes before the end of baking.

BAKED HAM W/PINEAPPLE & BROWN SUGAR
For years I had no clue how to properly bake a ham that would be full of flavor and just melt in your mouth. I created this recipe by accident, and now it is a family favorite for Easter, Thanksgiving, and Christmas. Hope you and your family and friends love it as much as mine do. Happy Cooking!

Steps:
- 1. I generally start baking my ham very late at night, or really early in the morning say around 6am. I bake it in a 250 degree oven, and I let it cook for a few hours. You are probably saying to yourself, that is too long for a ham to cook or a smoked ham especially. Trust me, it comes out delicious.
- 2. Preheat oven to 250 degrees. Place ham in large deep roasting pan. (If you purchased a ham that has a flat side, DO NOT put flat side down, this will cause the ham to burn and be very dry.) Pour both bottles of Pepsi over the ham. Cover with heavy duty aluminum foil, sealing it tight around the edges, put on lid. Place in oven and bake for about 3 hours.
- 3. At the 3 hour mark, remove ham from oven (save foil if possible, you will need it again). Drain off all the juices into a metal or heat resistant plastic bowl, and set aside.
- 4. In a separate bowl, mix pineapple (strain pineapple juice out of 1 of the cans, save one can of pineapple juice for mixture), brown sugar, and spicy brown mustard. Whisk all ingredients together until mustard is mixed well. Add 3 cups of the juices from ham (if you own an oil separator it comes in handy here), mix well. Taste the mixture to see if it needs more brown sugar or more spicy brown mustard. You want the mixture to be sweet and tart. Pour the mixture over the ham, place ham back in oven and let cook another hour or 2. If you want the pineapple sauce to be like gravy then you could add some corn starch to thicken it up. I just leave it as is.
- 5. Once ham is done, remove from oven and place on a platter or serving tray. Use a slotted spoon to remove all the pineapple into a serving bowl then ladle some of the juice over the pineapple to serve with the ham.
- 6. This ham is great with your favorite Thanksgiving dressing, cranberry sauce and baked sweet potato souffle' or any time. I bake this ham for Easter dinner with Au Gratin/Scalloped Cheesy Potatoes, Garlic Green Beans and Rolls. My family loves it. Enjoy!!
