SPICY PINEAPPLE PORK

Here you have an easy, delicious and low carb Spicy Pineapple Pork with Cabbage Pepper Salad and extra Spicy Pineapple Sauce on the side for dipping.

2 tbsp grapeseed oil
1 onion, chopped
5 cloves garlic, chopped
1 tsp ginger , freshly grated
1 tsp coriander
1 tsp chili powder
1 tsp smoked paprika
1 tsp turmeric
1 cup pineapple juice
1 6 oz can tomato paste
1/4 tsp each salt and pepper
1 serrano pepper, chopped - make sure you wash your hands well after cutting the serrano pepper!
1 tbsp maple syrup
1 tbsp grapeseed oil
1/2 cup Spicy Pineapple Sauce
4 slices fresh pineapple, chopped
5 Smithfield All Natural Boneless Pork Chops, chopped into bite size pieces
salt and pepper to taste
1 tbsp grapeseed oil
1 onion
1 tsp ginger, freshly grated
1/2 red cabbage, chopped
1/2 green cabbage , chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
1 tbsp black sesame seeds

Steps:

  • Add the coriander, chili powder, smoked paprika and turmeric to a small fry pan and roast them over medium heat for 2-3 minutes. Make sure to stir the spices and keep an eye on them so they don't burn.
  • In a separate pan, saute the onion in the oil, for about 5 minutes. Then add in the ginger and garlic.
  • Toss in the roasted spices, pineapple juice, tomato paste, serrano pepper, maple syrup and salt and pepper and mix well.
  • Then, using an immersion blender, blend all the ingredients up. Or, you can spoon mixture into a blender and pulse till ingredients are broken down. This Spicy Pineapple Sauce can be stored in an airtight container in your fridge for 4-5 days.
  • Toss the bite sized pieces of Smithfield All Natural Boneless Pork Chops with 1/2 cup of the Spicy Pineapple Sauce.
  • Add oil to a pan and toss the Spicy Pineapple Sauce coated Smithfield All Natural Boneless Pork Chops into it, along with the chopped fresh pineapple slices. Saute about 8-10 minutes, stirring often so the pieces of Smithfield All Natural Boneless Pork Chops saute on all sides.
  • When done, serve with Cabbage Pepper Salad and Spicy Pineapple Sauce on the side.
  • Saute onion in grapeseed oil in a large fry pan for about 5 minutes (you can cook this simultaneously with the Spicy Pineapple Pork).
  • Add the ginger, and the orange, red, green and yellow bell peppers. Season with salt and pepper.
  • Remove from heat and add to a large bowl. Into this large bowl, also add in the red and green cabbage and toss with the sauteed bell peppers. For me, the sauteed pepper mixture was all the "dressing" I needed for this salad.
  • Toss in the black sesame seeds and enjoy this Cabbage Pepper Salad along with the Spicy Pineapple Pork.

This recipe is ridiculously delicious and easy! Packed with tropical, spicy flavors, it can be beautifully presented for a dinner party, or whipped up fairly quickly for a busy weeknight.

grapeseed oil for the pan
1⅓ cup red onion, (thinly sliced)
2 teaspoons garlic, (minced)
1 tablespoon plus 1 teaspoon chili paste ((see notes))
2 cups pineapple juice
1 tablespoon plus 1 teaspoon low sodium Tamari
4 (approximately 8-ounce) pork chops, (bone-in, about 1-inch thick)
8 round slices fresh pineapple (click here for How to Peel and Cut a Pineapple.)
salt and freshly ground black pepper
a few sprigs of cilantro for garnish

Steps:

  • Make the sauce. Coat the bottom of a medium-sized saucepan with the oil and place it over medium heat. Add the onions and garlic and cook until the onions are soft and caramelized, stirring every so often, 10 to 15 minutes.Mix in the chili paste, stir to combine, and then deglaze the pan with the pineapple juice.Add the Tamari and bring to a boil. Then, immediately reduce the heat to low, and simmer until the sauce thickens a bit, 10 to 15 minutes. Set aside.
  • Heat grill. Preheat a stove-top grill or outdoor BBQ.
  • Prep pork chops and pineapple slices. Season both sides of the pork chops with salt and pepper, and season both sides of the pineapple slices with pepper only. Drizzle both the pork chops and the pineapple slices with grapeseed oil, being sure both sides are well coated.
  • Grill. Once the grill is very hot, add the pork chops and pineapple slices. You should hear a sizzling sound when they hit the pan -- if you don't, wait! The grill needs to be very hot for everything to caramelize and char properly.Turn the pork chops over when the bottoms are well marked from the grill, about 2 minutes. Then turn the heat to low, cover loosely with foil, and let them finish cooking just until the pork is cooked through, about 8 minutes. (The pineapple slices should grill for about 3 minutes per side. Remove them from the grill when they're done, while you continue to cook the pork.)
  • Assemble and serve. On a large serving platter, or on individual serving plates, place each pork chop on top of 2 of the grilled pineapple slices.Drizzle the pineapple-onion sauce over the pork chops, and spoon a bit beneath them, too. (For a more elegant presentation, you can slice the pork off the bone and fan it out over the pineapple.)Garnish with cilantro and serve!

4 boneless pork-loin chops (each about 4 ounces and 1/2 inch thick)
1 bunch scallions (about 7), trimmed
2 tablespoons safflower oil
Coarse salt and freshly ground pepper
1/2 pineapple, peeled, cored, and sliced into 1/2-inch-thick rounds
1/8 teaspoon ground cayenne
2 teaspoons minced peeled fresh ginger (from a 1-inch piece)
2 tablespoons fresh lime juice (from 1 lime)
Steamed rice, preferably sticky, for serving
Thai chiles, thinly sliced, for serving (optional)

Steps:

  • Preheat broiler with rack 4 inches from heating element. Place pork and scallions on a rimmed baking sheet and toss with 1 tablespoon oil; season with salt and pepper. Add pineapple to sheet, spreading all ingredients in a single layer. Combine cayenne and 1/2 teaspoon salt in a bowl; sprinkle evenly over pineapple.
  • Broil until pork is just cooked through, 3 to 4 minutes. Transfer pork to a cutting board. Reserve accumulated juices in a bowl. Continue broiling scallions and pineapple until blistered in spots, 6 to 8 minutes (remove scallions earlier if blackening too much). Whisk ginger and lime juice into reserved juices. Slice pork; chop scallions and pineapple. Serve over rice with dressing and chiles.

1/2 tsp cinnamon
1/3 c packed brown sugar

Steps:

  • 1. Place slices in a single layer in a jelly roll pan
  • 2. Melt butter, stir in the cinnamon and drizzle over the rings.
  • 3. Sprinkle brown sugar evenly over the rings. Broil for two minutes. It is great served with ice cream!

1 pork tenderloin (about 12 ounces), halved lengthwise and thinly sliced
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
2 cups cooked brown rice or rice blend
1 white onion, cut into 1-inch pieces
1 large red bell pepper, cut into 1-inch pieces
6 ounces green beans, trimmed and halved
1/2 small pineapple, cored and cut into 3/4-inch pieces (2 cups)
1 tablespoon Sriracha or chili-garlic sauce
2 tablespoons cornstarch
1/2 cup packed chopped fresh cilantro, plus more for serving

Steps:

  • Season pork with salt and pepper. Heat 1 tablespoon oil in a large cast-iron or nonstick skillet over high. Add rice and reheat, covered, shaking skillet a few times, 2 minutes. Transfer to a bowl, stir in cilantro, and cover to keep warm.
  • Return skillet to high heat; swirl in 1 tablespoon oil. Add pork and cook, stirring a few times, until browned in places and almost cooked through, 2 minutes; transfer to a plate.
  • Add remaining 2 tablespoons oil, onion, bell pepper, green beans, and pineapple to now-empty skillet and season with salt and pepper. Cook, stirring frequently, until vegetables are crisp-tender, 8 to 10 minutes.
  • Whisk together Sriracha sauce, cornstarch, and 1 cup water in a small bowl; add mixture to skillet along with pork and any accumulated juices. Four 1-inch-thick bone-in pork chops (8 to 10 ounces each)
Base Brine, recipe follows
2/3 cup small-diced pineapple
2/3 cup small-diced zucchini
1/4 cup fresh mint leaves, torn
2 tablespoons extra-virgin olive oil
1 tablespoon chardonnay or white wine vinegar
1 teaspoon finely chopped shallots
1 teaspoon finely minced jalapenos
1/4 teaspoon grated fresh ginger
Kosher salt and freshly cracked black pepper
1/2 cup brown sugar
1/3 cup kosher salt
1 teaspoon black peppercorns
3 cloves garlic, smashed
1 sprig fresh thyme
1 sprig fresh rosemary
1 bay leaf

Steps:

  • Place the pork chops into a glass baking dish or bowl and pour the chilled Base Brine over top. Cover with plastic wrap and refrigerate for 8 hours or overnight.
  • About an hour before serving, make the salsa. Combine the pineapple, zucchini, mint, olive oil, chardonnay, shallots, jalapenos, ginger and some salt and pepper in a mixing bowl. Let marinate 1 hour. (This is best if allowed to marinate for 1 hour, but you can also serve it straight away if necessary.)
  • When ready to cook the pork, prepare a grill for medium-high heat. Remove the pork chops from the brine, pat dry and allow to sit out while the grill is preheating.
  • Season the pork chops on all sides with salt and pepper. Place onto the hot grill and cook until the internal temperature registers 145 degrees F on a meat thermometer, 7 to 8 minutes per side for medium. Allow the pork chops to rest for 5 minutes before serving topped with the salsa.
  • Combine the brown sugar, salt, peppercorns, garlic, thyme, rosemary, bay leaf and 8 cups (2 quarts) water in a large stockpot and heat just to dissolve the salt and sugar. Chill thoroughly before using.

1 jar (16 ounces) chunky salsa
1 can (8 ounces) unsweetened crushed pineapple
1/2 cup port wine or grape juice

1/4 cup thawed orange juice concentrate
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder

  • In a large saucepan, combine the first 9 ingredients. 8 ounces snow peas, trimmed
2 medium carrots, halved lengthwise and thinly sliced on the diagonal
2 red bell peppers (ribs and seeds removed), thinly sliced
1 bunch scallions, ends trimmed, cut crosswise into 3-inch lengths
2 tablespoons vegetable oil, such as safflower
1/4 cup soy sauce
Coarse salt and ground pepper
1 pork tenderloin (1 to 1 1/4 pounds), halved crosswise
1/4 cup honey

Steps:

  • Cook rice according to package instructions; cover, and set aside. Meanwhile, heat broiler, with rack set 4 inches from heat. On a large rimmed baking sheet, toss snow peas, carrots, bell peppers, and scallions with oil and 2 tablespoons soy sauce; season with salt and pepper.
  • Place pork on top of vegetables, and season with salt, pepper, and 1 tablespoon honey. Broil until pork and vegetables begin to char, 6 to 8 minutes. Toss vegetables, and turn pork; drizzle pork with 1 tablespoon honey.
  • Continue to broil until an instant-read thermometer inserted in thickest part of pork registers 145 degrees and vegetables are charred in spots, 6 to 8 minutes, tossing vegetables once more. Remove from broiler. Cover with aluminum foil, and let rest, 10 minutes.
  • In a small bowl, make sauce: Stir together remaining 2 tablespoons soy sauce and honey. Thinly slice pork, and serve with vegetables, rice, and sauce.

1/2 pineapple, peeled, cored, and cut into 1/4-inch dice (1 1/4 cups)
1/2 cup finely chopped red onion
1 fresh serrano chile, minced, including seeds
1 tablespoon fresh lime juice

Steps:

  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedure
  • Stir together oil, cumin, pepper, and 1 teaspoon salt in a small bowl, then rub all over pork chops, transferring chops as coated to a tray. Stir together pineapple, onion, chile, lime juice, and remaining 1/2 teaspoon salt in another bowl.
  • Lightly oil grill rack and grill pork chops (covered only if using a gas grill), turning over once, until just cooked through, 6 to 9 minutes total. Transfer to a clean platter and let stand 5 minutes. Serve with pineapple salsa.
