3 tablespoons Dijon mustard
12 slices bread
6 slices fully cooked ham
12 slices cheddar or Swiss cheese
1 medium tomato, thinly sliced
3 tablespoons butter, softened
4 eggs
1/4 cup milk
1/4 teaspoon pepper

Steps:

  • Spread mustard on one side of six slices of bread. Layer the ham, cheese and tomato over mustard; top with remaining bread. Butter the outsides of the sandwiches; cut in half. Arrange in a greased 13-in. x 9-in. baking dish. , In a small bowl, whisk the eggs, milk and pepper; pour over sandwiches. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 30 minutes or until a knife inserted in the center comes out clean.

Croissant Breakfast Sandwich image

With crispy buttery croissants and smoky bacon, what is there not to love about this dish?! It bakes like a casserole but cuts into perfect individual sandwiches. The cheese is ooey gooey and the eggs cook up wonderfully. This will become your go-to breakfast. It's great if you're serving a crowd.

6 large croissants, cut open
1 pkg bacon, 16 oz.
8 slices provolone cheese
1 c cheddar cheese, shredded
8 eggs
2 Tbsp milk
2 Tbsp butter

Steps:

  • 1. Preheat oven to 375 degrees. Lightly grease the bottom of a 9x13 baking dish.
  • 2. Cook bacon and set aside on a plate with a paper towel to soak up the grease. Once cooled, break into 1 inch pieces (approximately).
  • 3. Place the bottom halves of the croissant in the dish, trying to get them to be as close together as possible.
  • 4. Spread provolone and cheddar over the tops of the croissants. Bake in the oven until cheese begins to melt (about 5 minutes).
  • 5. Remove from oven. Spread the bacon evenly over the top of the cheese.
  • 6. In a medium bowl, whisk the eggs and milk until well blended. Pour over the top of the bacon and croissants. Bake for 15 minutes or until egg is cooked. Remove from oven.
  • 7. Lightly butter the outside of the croissant tops and place atop the casserole. Place back in the oven for 5 minutes until croissants are toasted slightly.
  • 8. Remove and let sit for 10 minutes. Cut pieces with a knife before serving with a spatula.

I created this when I wanted something different for a graduation brunch for two of our sons. When I realized I had most of the ingredients on hand for the Reuben dip I usually make, I decided to use them in a brunch casserole instead! Everyone asked for the recipe. -Janelle Reed, Merriam, Kansas

8 large eggs, lightly beaten
1 can (14-1/2 ounces) sauerkraut, rinsed and well drained
2 cups shredded Swiss cheese
1/2 cup chopped green onions
1/2 cup 2% milk
1 package (2 ounces) thinly sliced deli corned beef, cut into 1-inch pieces
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
3 slices rye bread, toasted and coarsely chopped
1/4 cup butter, melted

Steps:

  • Combine the first 9 ingredients. Pour into a greased 11x7-in. baking dish. Refrigerate, covered, overnight., Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350°. Toss bread crumbs and butter; sprinkle over casserole. Bake, uncovered, until a knife inserted in center comes out clean, 40-45 minutes. Let stand 10 minutes before serving.
