6 eggs
3 tablespoons grated Parmesan cheese
salt and ground black pepper to taste
1 tablespoon extra-virgin olive oil
8 ounces cooked pasta

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Beat eggs, Parmesan cheese, salt, and black pepper together thoroughly in a bowl.
  • Heat olive oil in an oven-safe skillet over medium heat. Add cooked pasta; toss to coat in olive oil. Add beaten eggs, stir, and cook until eggs begin firming up on the sides of the skillet, about 3 minutes.
  • Broil in the preheated oven until eggs are set, 2 to 3 minutes.

½ (14 ounce) package spaghetti
3 tablespoons olive oil, divided
4 eggs, beaten
½ onion, diced
¼ cup chopped baby bella (crimini) mushrooms
¼ cup frozen peas
¼ cup shredded carrots
½ cup freshly grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Heat 1 tablespoon oil in a skillet over medium heat; cook and stir eggs in the hot oil until set and scrambled, about 5 minutes.
  • Heat remaining 2 tablespoons oil in a separate skillet over medium-high heat; saute onion, mushrooms, peas, and carrots until onion is browned, about 10 minutes. Add pasta to onion mixture and toss. Add eggs and mix well. Sprinkle Parmesan cheese, salt, and pepper over pasta mixture and toss.

1 (8 ounce) package spaghetti
4 slices bacon
¼ cup sliced green onion
2 teaspoons minced garlic, or more to taste
4 large eggs, beaten
salt and ground black pepper to taste
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup diced fresh tomato

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, for 8 minutes. Pasta should still be firm. Drain.
  • At the same time, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve bacon drippings in the skillet.
  • Return crumbled bacon to the skillet with green onion and garlic; cook in the drippings over medium heat until onion starts to soften, about 5 minutes. Add drained spaghetti and mix well.
  • Slowly add beaten eggs and scramble with the spaghetti mixture for 1 to 2 minutes. Season with salt and pepper. Add Parmesan cheese, garlic powder, and onion powder; continue to scramble until all ingredients are combined. Stir in diced tomatoes and serve.

Pasta with eggs, bacon, tomatoes and sausages

Steps:

  • Boil the fusilli as per the packet instructions
  • Fry the onion, sausage and bacon for 5 minutes
  • add the mushroom quarters and fry for a further 5 minutes
  • add the tomatoes and continue to fry for a further 10 minutes
  • Beat the eggs and philladelphia until smooth
  • Drain the pasta
  • Add the pasta to the meat and vegetable sauce and stir through
  • Add the egg mixture to the dish and stir through
  • Finally add the cheddar and serve with a green salad and or garlic bread

1 tablespoon olive oil
¼ cup diced red onion
¼ cup diced green bell pepper
1 teaspoon minced garlic

¼ cup cooked garbanzo beans
2 eggs, or more to taste
¼ cup fresh spinach, or to taste
2 ounces shredded Cheddar cheese
1 ounce crumbled feta cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and run under cold water to cool.
  • Heat olive oil in a skillet over medium heat; cook and stir onion, green bell pepper, and garlic until onion is translucent, 5 to 10 minutes. Add chicken and garbanzo beans to onion mixture; cook and stir until warmed, 2 to 3 minutes.
  • Mix spinach and eggs into chicken mixture; cook and stir until eggs are set and cooked through, about 5 minutes.
