CURRIED TUNA SALAD



Curried Tuna Salad image

Number Of Ingredients 10

Two 6 ounce cans white meat tuna packed in water, drained
3 tablespoons minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon finely chopped fresh coriander (cilantro)
1 tablespoon golden raisins, plumped in 2 tablespoons warm water for 10 minutes, drained
2 teaspoons vegetable oil, like soy, peanut, or corn
2 teaspoons Madras-style curry powder
6 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
1/2 teaspoon freshly squeezed lime juice plus more to taste
Serving suggestions: 2 cups mixed lettuces or 3 to 4 pita breads

Steps:

  • In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
  • In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
  • Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
  • Yield: 3 to 4 servings

CUCUMBER SANDWICHES

1 English cucumber--seedless, longer than American variety
6 slices white bread
Butter to taste

Steps:

  • Slice cucumber, leaving peel on.
  • Spread butter on insides of both slices of bread for each sandwich, to taste. Usually a thin layer will suffice.
  • Place cucumber slices in a single layer on bottom slice of buttered bread for each sandwich, covering entire slice.
  • Put sandwiches together and remove crusts with knife. Some cucumber peel will come off too and that is the desired result.
  • Cut sandwiches into triangles.

2 teaspoons lemon juice
Kosher salt and freshly ground black pepper to taste
Sliced sandwich bread of choice

Steps:

  • In a medium bowl, combine the tuna, mayonnaise, celery, onion, bell pepper, capers and lemon juice. Mix with a fork until thoroughly combined. Season to taste with salt and pepper. Serve on the sandwich bread of your choice.

1 (9 ounce) can bumble bee tuna in vegetable oil or 1 (9 ounce) can tuna in water, drained
1 tablespoon mustard
1 tablespoon mayonnaise
granulated garlic
black salt
pepper
1 tablespoon celery seed
1 stalk celery, chopped nicely
1 small diced white onion
1/4 cup seasoned bread crumbs
4 slices bread or 2 pita breads

Steps:

  • Mix tuna with dry spices
  • Salt and Pepper to taste.
  • Mix in mayonnaise and mustard.
  • Mix in celery and bread crumbs until well mixed.
  • Add in diced onion and mix well.
  • Add to bread as sandwich filling or stuff into pita.
  • Also good on top of a crisp lettuce bed salad with parsley sprinkled on top.
