RAISIN BRAN BREAD FOR BREAD MACHINE

This bread is moist and very good. Use in a bread machine. You will love it. I got the recipe from my daughter-in-law. She makes a loaf at least 3 times a week. Her family of 7 eats it like there is no tomorrow. Give it a try, you will enjoy it.

1 c water
2 Tbsp soft butter
4-6 Tbsp brown sugar
1/4 tsp baking soda
1/2 tsp salt
1 c raisin bran cereal
2 c bread flour
2 tsp yeast
1/2-1 c raisins

Steps:

  • 1. Place first 8 ingredients into bread machine. Set machine to large loaf, medium brown.
  • 2. At first beep and bread has kneaded place in the raisins. Let the machine cook on it's own. Approximate time is 2hrs and 40 minutes. Take bread out of machine after baking. Let cool before cutting. Enjoy

1 1/2 teaspoons salt
2 tablespoons packed brown sugar
1 tablespoon light molasses
2 tablespoons vegetable oil
1 cup whole wheat flour

1/2 cup all-bran cereal
1/4 cup wheat bran
3/4 cup raisins
1 1/4 teaspoons bread machine yeast or 1 1/4 teaspoons instant yeast

Steps:

  • Measure ingredients into baking pan in the order recommended by the manufacturer.
  • Insert pan into the oven chamber.
  • Select Whole Wheat Cycle.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • Let cool to room temperature before slicing.

This is so good and good for you. I like to make different breads in my machine for some variety. This is good. The wheat bran you use needs to be for the "high" temperature in bread making, or it will not rise.

1 1/4 cups water
2 tablespoons butter
3 tablespoons honey
3 cups white bread flour
1/2 teaspoon salt
3/4 cup wheat bran (cereal bits)
1 1/2 tablespoons oat bran
2 teaspoons fast rise yeast or 3 teaspoons active dry yeast

Steps:

  • Combine according to your manufacturer's directions using the dough or manual cycle.
  • Remove dough from the machine after the dough or manual cycle is completed.
  • Turn dough out onto floured surface.
  • Divide into 12 portions.
  • Shape each into a ball, then press into 4" circles about 3/4" high.
  • Grease baking sheet and sprinkle with half the oat bran, then place muffins 2" apart.
  • Spritz with water and sprinkle with remaining bran.
  • Let rise until doubled, about an hour.
  • Grease electric skillet or griddle and preheat to 325 degrees.

  • Carefully place muffins in skillet, then cook about 6 minutes on each side or until brown.

1 1/4-1 3/4 cups bread flour
1 (8 g) package active dry yeast
1 cup nonfat milk
2 tablespoons honey
2 tablespoons butter or 2 tablespoons shortening
3/4 teaspoon salt
1 cup whole wheat flour
3/4 cup wild rice (cooked, drained and cooled)
1/3 cup oat bran
nonstick cooking spray

Steps:

  • In a large bowl, stir together 1 cup of the bread flour and the yeast; set aside.
  • In a medium saucepan heat and stir milk, honey, butter, and salt just until warm (120°F to 130°F) and butter is almost melted.
  • Add the milk mixture on low speed for 30 seconds, scraping bowl constantly.
  • Beat on high speed for 3 minutes.
  • Using a wooden spoon, stir in whole wheat flour, wild rice, oat bran, and as much of remaining bread flour as you can.
  • Turn out onto a lightly floured surface. Knead in enough of the remaining bread flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball.
  • Place in a lightly greased bowl; turn once to grease the surface.
  • Cover and let rise in a warm place until double in size (1 to 1-1/4 hours).
  • Punch down dough.
  • Turn out onto a lightly floured surface. Cover and let rest for 10 minutes.
  • Coat an 8x8x2-inch loaf pan with cooking spray; set aside.
  • Shape dough into a loaf by patting or rolling.
  • To shape by patting, gently pat and pinch dough into a loaf shape, tucking edges beneath.
  • To shape by rolling, on a lightly floured surface, roll dough into a 12x8-inch rectangle.
  • Roll up, starting from a short side.
  • Seal seams with fingertips as you roll.
  • Place shaped dough in prepared pan.
  • Cover; let rise in a warm place until nearly double in size (30 to 45 minutes).
  • Preheat oven to 375°F
  • Bake about 35 minutes to 40 minutes or until bread sounds hollow when tapped.
  • If necessary, cover loosely with foil the last 10 minutes to prevent over browning. Remove from pan.
  • Cool on a wire rack. Makes 1 loaf (16 slices).
  • Bread Machine Directions:
  • Add the ingredients to 1-1/2-pound loaf bread machine according to the manufacturer's directions, except use 1-3/4 cups all-purpose flour and 1-1/4 teaspoons active dry yeast or bread machine yeast.
  • If available, select the whole grain cycle, check dough and, if necessary, add more bread flour or milk, 1 teaspoon at a time, to make a dough that forms a smooth ball. Remove hot bread from machine as soon as it is done. Cool on a wire rack.
