ROASTED CAULIFLOWER WITH GINGER AND MINT image

Number Of Ingredients 8

1 head cauliflower (about 2 pounds), cut into small florets
2 garlic cloves, minced
1 tablespoon minced peeled fresh ginger
1/2 teaspoon coarse salt
1 tablespoon plus 2 teaspoons extra-virgin olive oil
Freshly ground pepper
2 tablespoons coarsely chopped fresh mint
1 tablespoon fresh lime juice

Steps:

  • Preheat oven to 375°. Toss cauliflower, garlic, ginger, salt, and oil on a rimmed baking sheet; season with pepper. Roast cauliflower until browned and tender, about 30 minutes. Toss with mint and lime juice. Serve immediately, or refrigerate, airtight, up to 3 days.
