Baharat is a spice mix used throughout the Arab world to season everything from lentils to meat. There are many variations; this recipe is from my grandmother. It is best to buy all the spices whole and grind them yourself for extra flavor.

- Combine paprika, pepper, cumin, coriander, cinnamon, cloves, cardamom, star anise, and nutmeg in a bowl and mix well. Store in an airtight container for up to 6 months.

BRAAI-SPICED T-BONE STEAKS
Grilling meat is practically the South African national sport, crossing lines of wealth, geography and even race. Braai means grill in Afrikaans, and some say it's the only word recognized in all of the country's 11 official languages. There's no reason this braai sout, a fragrant dry rub, can't be used on steaks other than a T-bone. But the T-bone has had special status there since Archbishop Desmond Tutu, as part of a campaign to bring all South Africans together around the braai, pointed out that the shape of that steak mimics the shape of Africa itself. Serve with whole potatoes roasted in the coals, and drink beer or one of South Africa's excellent wines.

- Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.
- Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature before grilling.
- Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees. Let rest 10 minutes and slice across the grain for serving.

BRAAI-RUBBED RIB-EYE STEAKS WITH TOMATO SALAD
In South Africa, Braai is both a cooking method (outdoors, over a fire) and the spice rub that goes on whatever you're cooking over that fire. While everyone makes their Braai spice rub a little differently, I've added smoked paprika to this one to replicate the smoky flavor of cooking over a fire even if you're indoors on a grill pan.

- For the steaks: Set the steaks on a plate and season all over with 1 teaspoon kosher salt. Rub the Braai Spice Mix on both sides of the steaks. Let sit at room temperature for 15 to 20 minutes.
- Heat a large cast-iron skillet over medium-high heat. Brush lightly with olive oil. Set the steaks in the skillet and cook undisturbed until well browned on the first side, about 2 minutes. Flip the steaks and cook until seared on the second side, about 2 minutes more. Lower the heat to medium and continue to cook until done to your liking, about 2 minutes more for medium rare. Remove the steaks to a cutting board and let rest 10 minutes.
- For the tomato salad: Combine the tomatoes, parsley or cilantro, scallions and ginger in a medium bowl and toss to combine. Drizzle with the lime juice and olive oil and season with 1/2 teaspoon salt. Toss well.
- Thinly slice the steak against the grain. Serve with the tomato salad alongside.
- Combine the coriander, paprika, black pepper, garlic powder, onion powder, allspice, cayenne and nutmeg in a small skillet. Toast over medium-low heat, stirring occasionally, until lightly toasted and aromatic, 2 to 3 minutes. Let cool in the pan. Stir in the brown sugar. The spice mix will keep for several weeks in an airtight container in your pantry. Makes about 1/2 cup.
BRAAI SPICE MIX
In South Africa, a braai is an outdoor barbecue over an open fire. To replicate the smoky flavors indoors, we've added smoked paprika to the traditional spice mix. Use this blend to season roasted vegetables, chicken or beef.

The spice mix will keep for several weeks in an airtight container in your pantry.
