S'MORES FONDUE
Steps:
- Scald the cream by warming it in a small saucepot over medium heat until bubbles form around the edges and steam rises from the surface.
- Place the chocolate in a large bowl. Pour the hot cream over the chocolate and let sit for 3 minutes. Stir until well mixed, then whisk in the sour cream. Place the ganache into 6 small ramekins.
- Pulse the graham crackers and almonds in a food processor until well chopped (or chop finely by hand). Divide among the ramekins.
- Thread the strawberries, chopped fruit, and marshmallows onto skewers. Rotate the skewers over a campfire or open flame until the marshmallows are toasted.
- Dip the skewers into the chocolate fondue and enjoy!

- Melt the chocolate in the top of a double boiler set over simmering water, stirring constantly.
- Transfer to a fondue pot.
- Spoon the marshmallow crème into the center of the chocolate. Do not stir.
- Add the rum to the pot and ignite carefully, using a long wooden match or lighter. Allow the flame to burn out and stir gently to combine.
- Sprinkle with the graham cracker crumbs. Keep fondue warm over low heat.
BRIE AND PESTO FONDUE

- Place the basil, Parmigiano-Reggiano cheese, and garlic in a blender. With the machine running, add 1/ 4 cup of the wine and process until thick. Set the pesto aside. In a medium, heavy-bottomed saucepan, bring the remaining 3/ 4 cup wine and the vinegar to a bare simmer over medium heat. In a medium bowl, toss the Brie cheese with the cornstarch. A handful at a time, stir the cheese into the saucepan, stirring the first batch until melted before adding another. Allow the fondue to bubble once or twice, but do not boil. Stir in the pesto and season with the pepper. Transfer to a cheese fondue pot and keep warm over a fondue burner. Serve immediately, with dipping ingredients of your choice.;

Steps:
- Roast the pepper over gas flame or under broiler until blistered. Cool and peel, discarding seeds and stems.
- Preheat the oven to 450 degrees F or a grill to high heat.
- Sprinkle pepper on the vegetables and roast in very hot oven or on grill until they start to brown. Cut into small pieces. Arrange 1/2 cheese slices on shallow ovenproof platter or casserole and arrange vegetables over cheese. Cover with remaining cheese and bake in very hot oven until bubbling. Serve at once with baguette slices or tortilla chips.
