BLACK AND WHITE BROWNIES

2 sticks (1 cup) butter, plus for greasing the pan
5 ounces unsweetened chocolate
1/4 cup unsweetened cocoa powder
2 cups sugar
1 tablespoon vanilla
3 large eggs
1 1/4 cups all-purpose flour
3/4 cup white chocolate chips
1 package white almond bark

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan.
  • In a medium-large saucepan over low heat, melt the butter with the unsweetened chocolate, whisking occasionally, until smooth and fully melted. Sprinkle in cocoa powder and whisk to combine. Remove the pan from heat and allow to cool for about 5 minutes.
  • Stir in sugar and vanilla until just combined. Stir in the eggs, one at a time. Gently stir in the flour until halfway incorporated. Add the white chocolate chips and stir just until combined.
  • Pour the batter (it will be very thick!) into the baking pan and spread to even out the top.
  • Bake 20 to 25 minutes, then check the brownies with a toothpick; if they are overly gooey/messy, return them to the oven for another 5 to 10 minutes. (Just be careful not to burn the edges.)
  • Allow the brownies to cool completely. Cut into 1-by-2-inch fingers and place on a rack over a baking sheet.
  • Melt the almond bark in a double-boiler (or in the microwave in 30-second intervals). Dip one end of each brownie finger into the almond bark and then return to the rack until the coating has hardened, 5 to 10 minutes.

My Dad can eat these delicious baked wings 7 days a week. They are his very favorite part of the chicken. They are healthy, and easy to prepare. I brine them first, so they are plump, tender, and luscious, and bake them with just a hint of heat from chili powder. I hope you will Enjoy them, too. Photo and recipe is my own.

10 to 16 wings or drumsticks (tips removed from wings)
6 tablespoons olive oil
2 to 3 tablespoons gebhardt's chili powder--more for fire breathing hot!
2 teaspoons garlic powder
salt and pepper to taste
mccormick seasoning to taste

Steps:

  • 1. COOK'S TIP: This recipe is actually 2 recipes in 1. If you omit the McCormick seasoning, and increase the chili powder by 1 to 2 tablespoons, you have delicious buffalo-style wings. Serve with blue cheese dressing and carrot and celery sticks. Or make them with the McCormick seasoning and serve with mashed potatoes and a salad. You can also serve BOTH recipes on one platter for a variety for everyone. Two great dinners in one recipe!
  • 2. BRINE THE WINGS OR DRUMSTICKS: Brine: Take a one gallon pot of cold water, add 1/2 cup of kosher salt, stir until the salt has disolved. (Do not use iodized salt.) Submerge the chicken pieces in the brine water. Refrigerate. Brine for no more than 2 hours, then remove the chicken pieces, rinse them and put them in the refrigerator until it is time to cook the chicken. Discard the brine.
  • 3. MIX THE INGREDIENTS IN A BAG: Add chili powder, garlic powder, and olive oil to the bag, knead the bag gently to mix.
  • 4. COAT THE CHICKEN: Add the brined chicken, pat dry, a few pieces at a time to the bag, kneading until coated, gradually adding all the chicken, and with the air out of the ziplock bag, you should be able to knead and coat the chicken thoroughly.
  • 5. PREHEAT THE OVEN: pre-heat the oven to 375 degrees. Line a cookie sheet (with a lip) with tin foil for easy clean-up. Spray with Pam.
  • 6. BAKING THE CHICKEN: Place the coated wings (and drumsticks if you are having them) on the cookie sheet skin side down. Salt and pepper the wings, and sprinkle McCormick chicken season liberally over the wings. Bake 1 hour in the oven, TURNING the chicken after 35 minutes, or until brown on the underside. Once you have turned the chicken, sprinkle lightly with salt and pepper and the McCormick chicken seasoning. Finish baking 30 to 40 more minutes until done and nice and brown.

This is one of those moments of inspiration that just comes together an hour before dinner time. These wings were really good, and simple to prepare. Easy cleanup, too! No turning during cooking. Great plain or dipped in barbecue sauce or ranch dressing. They are tender, moist, and delicious! This may be my go-to wing recipe....

22 to 24 chicken wings
1/4 cup peanut oil
1 tablespoon tajin seasoning
1 teaspoon hungarian paprika
1 teaspoon garlic powder
1 teaspoon black pepper

Steps:

  • 1. PREPARE WINGS Remove the wing tips and prepare the wings for baking by cutting the wing at the joint. Rinse and pat the wings dry with paper towels.
  • 2. COOKING DIRECTIONS Add the 1/4 cup peanut oil to a large mixing bowl, big enough to hold all the wings, and add the 1 tablespoon Tajin seasoning, 1 teaspoon garlic powder, 1 teaspoon black pepper, and 1 teaspoon Hungarian paprika. Whisk until well combined. Add the prepared wings and mix thoroughly until all wings are totally covered with the mixture.
  • 3. PREPARE THE PAN AND RACK Line a large sheet pan with parchment paper. Insert a rack in the pan on top of the parchment paper and spray it with kitchen spray. Place the wings on the rack so they are not touching. You are now ready to bake them
  • 4. OVEN INFO Preheat oven to 425 degrees. Bake the wings for 45 to 50 minutes. It takes exactly 45 minutes in my oven. Watch carefully that they do not burn at the end of cooking time. (No need to turn if you use a rack.) Enjoy!

CHICKEN
16 pieces chicken wings and drums, prepared and patted dry
SEASONING SHAKER
1/2 teaspoon cayenne pepper
2 teaspoons hungarian paprika
1 ½ tablespoons onion powder made from dehydrated onions, coarse ground in mortar.
1 ½ tablespoons garlic powder
2 teaspoons kosher salt
1 teaspoon coarse ground black pepper
DIP TO COAT
1/2 cup melted butter
1/2 cup frank's red hot sauce
OTHER INGREDIENTS
celery and carrot sticks
ranch dressing
frank's hot sauce

Steps:

  • 1. Prepare the chicken wing pieces and pat them dry with paper towels.
  • 2. Add the spices to a small shaker jar and mix well. Season the wings generously and rub it into the chicken. Set aside and let it rest.
  • 3. Cover a large sheet pan with foil. This is great for an easy cleanup. Add a rack and spray with kitchen spray. Preheat oven to 415 degrees, middle rack.
  • 4. Melt the butter in a small saucepan. Add the Frank's Hot Sauce and whisk to combine.
  • 5. Pour the butter mixture over the seasoned chicken.
  • 6. Toss the chicken pieces until the pieces are well-coated.
  • 7. Place the chicken on the greased rack.
  • 8. Bake the chicken pieces 25 to 30 minutes and then turn and bake 25 to 30 minutes MORE. (50 TO 60 minutes total time) Watch the first time you make this recipe because every oven is different.
  • 9. After the pieces are browned to your liking, place them on a platter.
  • 10. Make the simple sauce below. It goes so great with these wings! Serve with Carrot and Celery sticks.
  • 11. WING SAUCE Individual serving: 1/4 cup of Ranch dressing 1 1/2 teaspoon of Frank's Hot Sauce. Mix well. To make one cup of sauce: 1 cup Ranch dressing 2 tablespoons Frank's hot sauce. Mix well. Good with Buffalo wings, chicken strips and carrot and celery sticks.
  • 12. Mix until combined. The sauce will be a light salmon color. For more heat, add more sauce to taste. Enjoy!

BONNIE'S RUB
4 teaspoons of chef paul prudhomme's poultry magic
1 tablespoon garlic powder
3/4 cup of coconut palm sugar (or brown sugar)

Steps:

  • 1. First, make the rub. Mix all the ingredients in a small mixing bowl and pour into a small shaker.
  • 2. Pat the prepared wings very dry with paper towels so the rub will stick, and place them in a ziploc bag. Using the shaker, shake the rub very generously onto the chicken in the ziploc bag, then turn the pieces over and repeat. Close the ziploc bag and gently knead the chicken pieces so the seasoning coats each piece evenly. Leave the chicken pieces on the counter in the bag for 20 minutes before grilling. It helps the rub to stick.
  • 3. Grease your grill grate so the wings won't stick. I used an indoor grill. Adjust grate a little higher than normal. When the wings were a golden brown, I turned them over and tented the wings with tinfoil to hold in the heat. Cook until the wings are done. They turn out perfectly. You can also use an outdoor barbecue with a lid. Be sure not to overcook the chicken wings.
  • 4. Serve with carrot and celery sticks and Blue cheese dressing for dipping (or eat them without dipping).

DEEP-FRIED HOT WINGS AND DRUMETTES

3 cups peanut oil for frying, or as needed
1 cup self-rising flour
3 eggs
2 (5 ounce) bottles hot pepper sauce (such as Frank's RedHot®), divided
⅓ cup water
2 ½ pounds chicken wings and drummettes
½ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
½ cup butter

Steps:

  • Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
  • Place flour in a bowl. Whisk eggs, 1 bottle hot sauce, and water in another bowl until smooth. Season chicken with garlic powder, salt, and pepper.
  • Dip each wing into the egg mixture, then toss with flour mixture to coat. Gently shake off excess flour and set aside. Repeat with remaining chicken.
  • Fry chicken in the hot oil in batches until chicken is no longer pink at the bone and skin is golden brown, about 5 minutes. Drain in a large bowl lined with paper towels, then season with salt.
  • Heat butter and remaining bottle hot sauce in a saucepan over medium-high heat until butter is melted. Whisk until smooth. Remove paper towels from bowl and pour butter sauce over chicken; toss to coat.
