CHIPOTLE PORK LOIN WITH BLUEBERRY-KIWI SALSA



Chipotle Pork Loin with Blueberry-Kiwi Salsa image

Tart kiwi and sweet blueberries make a unique salsa to dress your basic pork loin. This is a leaner cut of pork, so be sure not to overcook it; you can test the meat by slicing it with a paring knife or using an instant-read thermometer, which should register 145ºF.

2 kiwis, peeled and diced
1 pint blueberries, chopped
1/2 cup cilantro leaves, chopped
1/4 cup minced red onion
2 tablespoons balsamic vinegar
1 teaspoon salt
3/4 teaspoon paprika or chipotle chile powder
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
One (2-pound) center-cut pork loin
2 tablespoons grapeseed oil, plus more for the grill

Steps:

  • To grill the pork loin, preheat a grill over high heat, or to roast, preheat the oven to 400ºF.
  • Combine the kiwis, blueberries, cilantro onion, and vinegar in a large bowl. Add 1/4 teaspoon of the salt and toss well. Set the salsa aside.
  • Place the paprika or chipotle chile powder on a plate along with the turmeric, cumin, the remaining 3/4 teaspoon salt, and the black pepper. Roll the pork loin in the spice mixture to coat. Drizzle the pork with the oil.
  • To grill:
  • Grease the grill with grapeseed oil. Adjust the grill flame setting to medium to medium-low.
  • Place the loin on the grill and cook, turning often, until no longer translucent inside and cooked through, or until it registers 145ºF on an instant-read thermometer, 20-25 minutes. Let the loin rest for 5 minutes before slicing, then serve with the salsa.
  • To roast:
  • Place the pork in a 7-by-11-inch baking dish and roast on the lower rack, uncovered, for 35-40 minutes until cooked through and no longer pink in the center, and it registers 145ºF on an instant-read thermometer. Let the loin rest for 5 minutes before slicing, then serve with the salsa.

I have not made this yet. Posting here for safekeeping as I lost the recipe once. Servings and times are a "guestimate". The only thing I remember about this recipe is that I gave it to a friend a few years ago who wanted to make an anniversary dinner for herself and her husband and they both raved about it. I'm not sure whether or not it was more from the flavor or the fact that she'd successfully cooked a meal that they both enjoyed. ***insert blowing raspberries smilie here in case she ever sees this***. LOL I don't see it on Zaar so I'm going to go ahead and make it public.

2 -3 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons chili flakes
3 cups beef broth
3/4 cup port wine
1 cup balsamic vinegar
4 1/2 cups blueberries, divided
1 teaspoon brown sugar
1/2 teaspoon cinnamon
1 sprig fresh rosemary

Steps:

  • In a large saucepan over medium heat saute minced garlic and chili flakes lightly in olive oil.
  • Add beef broth, port wine and balsamic vinegar. Turn heat to high and cook until liquid is reduced by about half, stirring ocassionally.
  • Add 3 cups of blueberries, the cinnamon and brown sugar. Cook over medium heat approximately 20 minutes or until the blueberries break apart and the sauce thickens, stirring often.
  • Add the rosemary sprig and let the sauce simmer for another 5 minutes. Remove from heat.
  • Add the other 1 1/2 cups blueberries and stir until berries are warmed throughout. Remove rosemary sprig.
  • Spoon sauce over individual beef filets or slices of beef tenderloin and serve.

3 cups beef broth
3/4 cup port wine
1 cup valsamic vinegar
1-2 tbsp. worcestershire
4 1/2 cups blueberries
1 tsp. brown sugar
2 cloves garlic, minced
2 tsp. chili flakes
1/2 tsp. cinnamon
1 sprig fresh rosemary
2-3 tbsp. olive oil

Steps:

  • Grill or broil filet of beef or beff tenderloin. In a large saucepan saute minced garlic and chili flakes lighlty in olive oil over medium heat. Add beef broth, balsamic vinegar and port wine. Turn the heat to high and cook unil the liquid is reduced by about half. Add three cups blueberries, cinnamon, and brown sugar and cook approximately 20 minutes until the blueberries break apart and the sauce thickens. Add a sprig of roesmary to the saucepan and let sauce simmer for anouther 5 minutes before removing from the heat. Add the additional 1 1/2 cups blueberries. Add worcestershire to taste. Reomove the sauce from the heat and stir until the fresh blueberries are warmed through. Spoon the sauced over the beef and serve.

3 c blueberries (fresh or frozen)
3 tsp lemon juice
2 Tbsp butter
2 Tbsp honey
1-2 tsp salt
1 tsp freshly ground pepper (i use a peppercorn medley but black pepper is fine)

Steps:

  • 1. Add berries, lemon juice, butter, and honey to a small saucepan. Over low heat, simmer until sauce thickens slightly, about 10-15 minutes.
  • 2. Add salt and pepper. Use a potato masher to smooth out the sauce a bit, but remember that you do want a fair bit of texture to the sauce.
  • 3. Simmer on low for another 5 minutes and remove from heat. Sauce can be made in advance and reheated. Serve over your favorite steak.
