BLUEBERRY BREAD WITH SOUR CREAM
I got this in my Home Economics class! It's my and my friend Ann's first recipe we did together. The worst thing that kept on happening was when we burnt the lemon glaze! It is originally a blueberry muffin recipe, but the bread/muffins are good any way you bake it! Lemonade fits perfectly with this recipe!

- Adjust an oven rack to the middle position and heat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Whisk flour, baking powder, and salt in a medium bowl until combined.
- Whisk egg in a second medium bowl until well combined and light-colored, about 20 seconds. Add sugar and whisk vigorously until thick and homogenous, about 30 seconds; add melted butter in 2 or 3 additions, whisking to combine after each addition. Add sour cream in 2 additions, whisking just to combine.
- Add blueberries to the dry ingredients and gently toss just to combine. Add sour cream mixture and fold with a rubber spatula until the batter comes together and the berries are evenly distributed, 25 to 30 seconds. Small spots of flour may remain, and the batter will be thick. Don't overmix.
- Using a large spoon sprayed with nonstick cooking spray to prevent sticking, spread the batter evenly into the greased loaf pan.
- Bake in the preheated oven until the top is light brown and a toothpick or skewer inserted into the center of the bread comes out clean, 25 to 30 minutes. Rotate the pan from front to back halfway through the baking time. Let cool for 5 minutes.
- While bread is cooling, mix 1/2 cup sugar and lemon zest together in a small bowl. Set aside.
- Bring lemon juice and remaining 1/4 cup sugar to a simmer in a small saucepan over medium heat; stir to dissolve the sugar and simmer until the mixture is thick and syrupy and reduced to about 1/4 cup. Brush the top of the bread with glaze, then sprinkle the lemon sugar onto the glaze.

YUMMY !!! and so very easy, just toss it in and Bamm you have a wonderful sweet but not to sweet bread for breakfast with coffee or tea. Good with butter or cream cheese.

- Put well drained berries into a 2 cup measuring cup.
- Add 1/4 cup juice and enough water to equal 1 1/3 cups (about 1/4 cup water).

BLUEBERRY BREAD
Homemade blueberry breakfast bread that's easy and so delicious! Top it off with a little butter and some blueberry jam for a great addition to any breakfast or brunch.

- Place the ingredients into the base of a bread machine in the order that it is suggested by the manufacturer of that particular machine. (Mine goes in the order as listed in the ingredients.) Close and set the bread machine to the 'dough' cycle. Lightly coat the inside of a 9x5" loaf pan with non-stick baking spray and set aside. Once the dough cycle has ended, turn the dough out into the prepared loaf pan. Cover lightly with a tea towel and place in a warm place to allow it to rise for 30 minutes to an hour or until doubled in size. Once the dough has risen, preheat the oven to 375 degrees F. Place the loaf pan into the oven and bake for about 45 minutes or until the top is brown and the bread is cooked through. Remove from the oven and allow to cool for at least 30 minutes before removing to a wire rack to continue cooling. When it's cool enough to handle, slice into 8 pieces and enjoy!

- Combine the first four ingredients; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 350° for 8-10 minutes or until crust just begins to brown. Cool. , In a saucepan, combine sugar, flour and salt. Gradually whisk in cream; cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Gradually whisk half into egg yolks; return all to pan. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat; stir in butter and vanilla until butter is melted. Cook 5 minutes, stirring occasionally. Pour into crust; sprinkle with confectioners' sugar. Chill 30 minutes or until set. , Meanwhile, crush 2 cups of blueberries in a medium saucepan; bring to a boil. Boil 2 minutes, stirring constantly. Press berries through sieve; set aside 1 cup juice (add water if necessary). Discard pulp., In a saucepan, combine sugar and cornstarch. Gradually stir in blueberry juice; bring to a boil. Boil 2 minutes, stirring constantly. Remove from heat; cool 15 minutes. Gently stir in remaining berries; carefully spoon over filling. Chill 3 hours or until set. Store pie in the refrigerator.
