You can always serve this appetizer as an ordinary shrimp cocktail, with shrimp and sauce on the side (or in a martini glass). However, for a dramatic presentation and for the most effective delivery of the sauce, porcelain Chinese soup spoons are the way to go. Not only are they perfect for single servings, they eliminate the issue of "double-dipping." And, in each spoon you have the right amount of sauce to fulfill its promise of "going straight to your head." Feel free to adjust the amount of vodka in the sauce to suit your preference, either for a stronger taste or less of a bite. I promise that you'll be the talk of the town after serving this sensational (and quick and easy!) appetizer! 16 large shrimp, cooked peeled and deveined (large, not jumbo)
3 tablespoons tomato paste
1/3 cup water
1 ounce vodka
2 1/2 teaspoons fresh lemon juice
1/2 teaspoon prepared horseradish
1/8 teaspoon sugar
salt and pepper, to taste
1 dash cayenne pepper (or to taste)
1 jalapeno, sliced into rounds and seeds removed (optional, for garnish. I even like the canned pickled jalapeno slices,if I'm in a hurry)

Steps:

  • Whisk the tomato paste and water in a measuring cup until smooth (the mixture should be of a somewhat thick consistency). Add the vodka, lemon juice, horseradish, and sugar. Season to taste with the salt, pepper, and cayenne.
  • Serve individually in 16 porcelain Chinese soup spoons by adding about a 1/2 tablespoon of sauce into each spoon, topped with a shrimp and a jalapeno slice, if desired. Serve chilled.

1 lemon, juiced, plus lemon wedges for garnish
16 jumbo shrimp, cooked and cleaned
Salt
1 (28-ounce) can chunky style crushed tomatoes
2 tablespoons horseradish
2 tablespoons Worcestershire, eyeball it
2 teaspoons hot sauce, eyeball it
2 ribs celery, finely chopped
4 shots ice cold vodka
1 teaspoon ground black pepper

Steps:

  • Squeeze half of the lemon over the shrimp and sprinkle them with a little salt. Mix together the remaining lemon juice, tomatoes, horseradish, Worcestershire, hot sauce, celery, vodka and pepper in a small pitcher. When ready to serve, pour the sauce into martini glasses. Hook the shrimp, 4 per glass, around edges. Make garnish wedges of lemons to hook on the edges of the glasses and serve.

6 cups water
1 lemon, halved
1 cup dry white wine
1 bay leaf
1/2 teaspoon peppercorns
Salt
1 bottle of your favorite vodka
1 bottle of a good store bought Bloody Mary mix
1 teaspoon cracked pepper
Hot sauce, to taste
Worcestershire sauce
Olive juice, to taste
Bamboo skewers, soaked in water for 30 to 60 minutes

Steps:

  • 1 pound large shrimp, peeled and deveined
  • Place 6 cups of water in a medium saucepan. Add lemon halves, white wine, bay leaf, peppercorns and salt, to taste. Bring to a boil and add the shrimp. Cook for 1 minute or until the shrimp turn pink. Immediately plunge shrimp into a bowl of ice water to stop the cooking process. Strain the shrimp and place into a bowl in the refrigerator until ready to use. In a large pitcher, mix 1-ounce vodka for every 6 ounces Bloody Mary mix. Season with cracked pepper, hot sauce, Worcestershire sauce, olive juice and shake. Serve in decorative glasses with skewered shrimp as garnish.

1/2 cup tomato juice
1/4 cup vodka (optional)
1/2 teaspoon red pepper sauce

1 cup seafood cocktail sauce
1/4 cup finely chopped green olives

For shrimp
1 pound medium shrimp in shell, peeled and deveined
1 1/2 cups thinly sliced celery (3 to 4 ribs)
1 cup thinly sliced scallions (about 6)
For sauce
1/2 cup ketchup
1/4 cup vodka (preferably Absolut Peppar)
1/4 cup fresh lemon juice
2 tablespoons bottled horseradish (not drained), or to taste
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco
Equipment: Chinese soupspoons
Garnish: diced avocado (optional)

Steps:

  • Prepare shrimp:
  • Bring a large saucepan of salted water (2 tablespoons salt for 2 quarts water) to a boil. Add shrimp, then remove from heat and let stand in water until cooked through, about 5 minutes. Drain in a colander and cool to room temperature, about 30 minutes. Cut shrimp into thirds and transfer to a large bowl with celery and scallions.
  • Make sauce:
  • Whisk together all sauce ingredients, 1/4 teaspoon pepper, and 3/4 teaspoon salt, or to taste.
