4 teaspoons chili powder
4 garlic cloves, minced
1 teaspoon salt
2 slabs baby back pork ribs (about 2 pounds)
2 1/2 cups fresh blackberries or frozen, thawed
1/2 cup ketchup
1/2 cup honey
1/2 cup minced peeled fresh ginger
2 tablespoons balsamic vinegar
2 teaspoons hot pepper sauce

Steps:

  • Preheat oven to 400°F. Mix chili powder, garlic, and salt in small bowl; rub mixture into ribs. Place ribs on large rimmed baking sheet, meaty side up. Bake ribs 50 minutes.
  • Meanwhile, puree remaining ingredients in blender until almost smooth. Strain blackberry puree into heavy medium saucepan; discard solids in sieve. Cook puree over medium-high heat until reduced to 1 cup, stirring frequently, about 5 minutes. Season sauce to taste with salt and pepper.
  • Brush ribs with enough sauce to coat. Continue baking until sauce browns and forms thick glaze, about 10 minutes longer. Cut slabs between bones into individual ribs. Serve with remaining blackberry sauce.

2 racks baby back ribs (about 4 lbs)
salt & pepper
liquid smoke
1-1/2 c blackberries
2 clove garlic, peeled
1/4 c ketchup
1-1/2 Tbsp honey
1 tsp balsamic vinegar
1 tsp hot sauce

Steps:

  • 1. Preheat oven to 400°.
  • 2. Rub ribs with a few drops of liquid smoke and season with salt and pepper. Put meaty side up on a foil-lined baking sheet; bake for about 45 minutes.
  • 3. Put blackberries, garlic, ketchup, honey, vinegar, hot sauce, and 1/2 tsp salt into a blender and puree for about 30 seconds. Strain through a fine-mesh sieve.
  • 4. Change oven to broil. Brush ribs with sauce and broil until thick glaze forms, about 5 minutes. Cut between bones into individual ribs.
  • 5. To cook on a charcoal grill: omit the liquid smoke; cook until ribs are just done; then brush ribs with sauce and cook until glaze forms.

4 pounds pork spareribs
½ cup honey
¼ cup soy sauce
¼ cup distilled white vinegar
2 cloves garlic, minced
2 tablespoons brown sugar
1 teaspoon baking soda
1 teaspoon garlic salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Slice the ribs into individual pieces. In a large bowl, combine the honey, soy sauce, vinegar, garlic and brown sugar. Stir until honey and sugar are completely dissolved, then stir in the baking soda. The mixture will begin to foam. Transfer ribs to the bowl, and turn to coat.
  • Cover a cookie sheet with foil, and arrange the ribs meat side up on the sheet. Pour excess sauce over all, and sprinkle with the garlic salt.
  • Bake for 1 hour, turning every 20 minutes.

SUNNY'S HONEY BBQ OVEN SHORT RIBS

1/4 cup sweet paprika
1 tablespoon onion powder
Kosher salt and freshly ground black pepper
2 teaspoons dry oregano
2 teaspoons garlic powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
6 pounds short-ribs, flanken-cut (about 6 ribs bone-in, cut into 5 to 6-inch strips)
1/2 cup honey

Steps:

  • Heat the oven to 300 degrees F.
  • In a small bowl, combine the paprika, onion powder, 4 teaspoons salt, oregano, garlic powder, cumin, cayenne pepper and a few grinds of black pepper. Rub the mixture all over the ribs and allow it to sit at room temperature for 1 to 2 hours at the most.
  • Place the ribs snugly in an oven dish with the fat side of each rib facing up. Cover tightly with aluminum foil and don't be afraid to top the dish with another heavy dish to ensure the seal! Cook in the oven for 2 1/2 hours, at this point the meat should be falling off the bones. Remove the ribs from the oven and raise the temperature to 425 degrees F.
  • Using a pair of tongs, flip and move the beef around a bit. Drizzle the honey evenly over the top of each rib. Place the ribs back in the oven, this time leaving it uncovered and cook another 10 to 15 minutes.

BLACKBERRY BBQ RIBS

Blackberries were on sale and so after looking at a lot of BBQ recipes, I put together this recipe! I threw in a pack of blackberries - not sure if it was six or eight ounces, but it was somewhere in there :) Also, I use organic, low salt and low sugar ketchup... you might want to lower the soy sauce if you ketchup is salty.

4 lbs pork ribs
2 tablespoons olive oil
2 tablespoons butter
2 cups catsup
8 ounces blackberries
1/2 cup molasses
3/4 cup brown sugar, packed
2 tablespoons garlic, minced
2 tablespoons onions, minced
2 tablespoons white wine vinegar
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1 tablespoon black pepper
1/2 tablespoon paprika
1 teaspoon cayenne
1 teaspoon dried chipotle powder
1/2 tablespoon liquid smoke

Steps:

  • Cut the ribs into individual ribs.
  • Melt the butter in the olive oil, in a frying pan, over medium high. Once the oil is hot, add the pork ribs and sear. You don't want them cooked, but you want the sides brown to hold in the juices and give texture to the meat. You will probably need to do this in batches, so add the butter and oil a bit at a time until all the ribs are cooked.
  • Mix all the other ingredients in the blender and puree until smooth.
  • Place ribs into crock pot as they sear. Pour sauce over ribs.
  • Cook on high for five hours, turn to low and cook another 3-4 hours.
  • Enjoy! This is really nice with steamed veggies, with a touch of lemon juice.
