1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 can (8 ounces) tomato sauce
1 jar (8 ounces) picante sauce
2 cups cooked rice
1 cup sour cream
2 cups shredded cheddar cheese, divided
Corn or tortilla chips

Steps:

  • In a large bowl, combine the first four ingredients. Stir in the rice, sour cream and 1 cup of cheese. Transfer to a greased 13x9-in. baking dish. Sprinkle with the remaining cheese. , Bake, uncovered, at 350° for 20 minutes or until the cheese is melted. Serve with corn or tortilla chips.

2 cups long-grain white rice
2 1/2 cups cooked shredded chicken breasts
1 (15 ounce) can mild green enchilada sauce
1 (4 ounce) can sliced black olives
1 (15 ounce) can diced tomatoes
1/2 cup sour cream
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 teaspoon mccormick gourmet roasted ground cumin
1 (15 ounce) can black beans, drained and rinsed
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. and spray a 9×13-inch baking dish with non-stick cooking spray.
  • Cook rice according to package directions.
  • Place chicken, enchilada sauce, olives, tomatoes, sour cream, salt, pepper and cumin into a large bowl, mixing to combine. Pour cooked rice into prepared baking dish and layer beans on top of rice. Pour chicken mixture over rice and top evenly with cheddar cheese.
  • Bake for 30 to 35 minutes, until cheese is melted and rice is hot.

1 package (6 ounces) long grain and wild rice mix
1-1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1 tablespoon canola oil
2-1/2 cups cubed cooked chicken
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups sour cream
1-3/4 cups shredded cheddar cheese, divided
1/2 cup frozen corn
1/2 cup frozen peas
2 teaspoons Italian seasoning
Salt and pepper to taste

Steps:

  • Cook the rice according to package directions. Meanwhile, in a large skillet, saute the mushrooms, onion and peppers in oil until crisp-tender. Add the chicken, beans, sour cream, 1 cup of cheese, corn, peas, Italian seasoning, salt and pepper. Stir in rice. , Transfer to a 3-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 30-35 minutes or until heated through.

2 cups mild salsa divided
2 (11-ounce) packages Morningstar Farms® Spicy Black Bean veggie burgers
4 ounces shredded fat-free Cheddar cheese

Steps:

  • Cook rice according to package directions. Spread cooked rice in bottom of 9 x 13-inch pan coated with cooking spray. Spread 1 cup of salsa over rice. Place MORNINGSTAR FARMS Spicy Black Bean Veggie Burgers on top of salsa. Cover burgers with remaining salsa. Sprinkle with shredded cheese. Cover pan with aluminum foil. Bake at 350° F about 40 minutes.
