When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

Number Of Ingredients 15

2 pounds fresh jumbo lump crabmeat, picked over for shells and cartilage
1 1/2 cups panko
1/2 cup mayonnaise
1/4 cup chopped chives
1 tablespoon Dijon mustard
2 teaspoons seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Juice and zest of 1 lemon, plus more lemon wedges for serving
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup mayonnaise
1/2 cup chopped dill pickles (about 2 whole pickles)
1 tablespoon capers, chopped
1 tablespoon minced chives
Juice and zest of 1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
  • Serve the crab cakes with the tartar sauce and lemon wedges.

Steps:

1/2 teaspoon dry mustard

8 hamburger buns
2 cups shredded lettuce, for topping

Steps:

  • Combine first 11 ingredients.
  • Spread 2 cups fresh breadcrumbs on wax paper.
  • Divide crab mixture into 8 patties, coat with breadcrumbs and refrigerate for 2 hours.
  • Heat oven to 400 degrees.
  • Roast red pepper for 30 minutes until charred.
  • Wrap in foil and cool.
  • Remove skin and seeds and chop fine.
  • Combine with mayonnaise, lemon juice and garlic.
  • Spread on cut sides of hamburger buns.
  • Heat ¼ inch oil in skillet.
  • Cook crab cakes until golden, turning once about 8 minutes.
  • Place crab cakes in rolls.

FOR CRAB CAKES:
8 ounces crabmeat (fresh or canned claw recommended, but other crab may be substituted)
2 tbsp Basil Aioli
1/2 cup seasoned bread crumbs
1 large egg
1 1/2 tablespoons butter

Steps:

  • FOR BASIL AIOLI: Mix all ingredients in medium bowl. Season to taste with salt and pepper. (Can be prepared 2 days ahead. Keep refrigerated.) FOR CRAB CAKES: Combine crabmeat, and 2 tablespoons Basil Aioli in large bowl. Mix in breadcrumbs. Mix in egg (mixture will be soft). Form crab mixture into desired size 3/4-inch-thick cakes. May be covered and chilled up to 6 hours before continuing. Melt butter in heavy large skillet over medium-high heat. 1 1/2 sticks unsalted butter, plus 1 to 2 tablespoons for sautéeing
1 cup finely chopped scallions (including some green stem)
1/2 cup finely chopped jalapeño pepper
3/4 cup heavy cream
2 teaspoons dry mustard
Pinch cayenne pepper
2 pounds jumbo lump crabmeat, drained well, patted dry, picked over for shells
2 eggs, beaten
2 cups fresh white-bread crumbs, spread out in a baking dish
1 to 2 tablespoons vegetable oil

Steps:

  • Melt 1 1/2 sticks butter in a large skillet over medium-high heat and sauté scallions and jalapeño about 2 minutes, until bright green. Add the heavy cream and heat to boiling. Stir over medium heat 3 to 4 minutes, until the mixture thickens. Remove from the heat and stir in the mustard and pepper. Cool 5 minutes.
  • Place the crabmeat in a large bowl. Gently stir in the scallion mixture. Form uniform cakes by placing spoonfuls of the crab mixture on a cookie sheet. Immediately place in refrigerator to harden, about 2 hours.
  • When ready to serve, beat the eggs in a shallow bowl and place the bread crumbs in another shallow bowl. Melt 1 tablespoon butter and 1 to 2 tablespoons oil in a large skillet over medium heat. Working with half of the crab cakes at a time (keep remaining cakes in the refrigerator), dip each cake into the beaten eggs and coat with crumbs. 3/4 cup heavy cream
2 teaspoons dry mustard

2 pounds lump crabmeat, well drained, and picked over, patted dry
2 eggs, beaten
2 cups white bread crumbs, spread out in a flat plate
2 tablespoons vegetable oil

Steps:

  • Melt 1 1/2 sticks of butter in a large skillet over medium-high heat. Saute scallions and jalapenos for about two minutes, until bright green. Add heavy cream and bring to a boil, stirring for 3-4 minutes until thickened. Remove from heat, add mustard and pepper. Cool five minutes. Place crabmeat in a large bowl. Gently stir in scallion mixture. Form uniform cakes and place on waxed paper lined sheets. Refrigerate until firm, two hours. When ready to serve, place eggs in shallow bowl. Melt additional butter and oil in skillet over medium heat. Dip each cake into the beaten egg and then the crumbs. Saute until browned, 2-3 minutes on each side. Turn cakes only once - they will break easily. Drain on paper towels and serve immediately. I sometimes grill these with no egg or crumbs. Also, these can be sauteed earlier in the day and re-heated in a very hot oven.

1 lb tilapia fillets or 1 lb white fish fillet
1 lb imitation crabmeat
1 bunch green onion
salt and pepper
lots Old Bay Seasoning
3 tablespoons Dijon mustard
4 tablespoons mayonnaise
3 eggs
1 (5 ounce) bag pork rinds (we use spicy bbq)

Steps:

  • Microwave or bake the fish until it flakes and flake up the imitation crab.
  • Vhop up the green onions and add to mix with the eggs, mustard, mayo, Old Bay along with salt and pepper (you want this kind of moist to hold the breading).
  • Crush the pork rinds fine, (we like our chopper for this) with some more Old Bay if you'd like.
  • Heat your oil on the stove to about 350°.
  • Make small patties and dip them in your dry mix (if you would like larger patties, I suggest you bake these).
  • Then place them in the hot oil, just enough to cover up the patty half way.
  • Brown each side, splash with lemon and serve.

Steps:

  • In a bowl, beat eggs and whisk in onion flakes, celery, parsley, tartar sauce, Worcestershire sauce, Old Bay, pepper and mustard.
  • Add crab meat gently with a spoon so that the lumps remain without seperating too much. Gently mix in the bread crumbs.
  • Make the mixture into 4-5 crab cakes with your hands. Try not to make them too fat.
  • Put them on a plate and cover with plastic wrap. Refrigerate from 15 minutes up to 3 hours.
  • Melt butter and oil in a skillet over medium heat and saute the crab cakes till golden brown, no longer than 3 minutes per side.
  • Place on paper towels to drain and serve with lemon wedges.

1# lump crab meat; soak with 1 c. milk in refrig for 20 minutes
4 oz shrimp - pureed. Add ¼ c heavy cream.
Add shrimp mixture to vegetables; then add, 2 t dijon; ½ t old bay; 1 t hot sauce (maybe ½ t)

Refrigerate ~ 30 minutes
Heat 1 T oil and heat to shimmering.
Bread with Panko
Pan fry 3-4 minutes/side. Add 1 T oil after flipping to pan fry second side.

1 small dinner size potato roll.
1 Tbs Parsley
1 Tbs Worcestershire Sauce
2 Tbs Old Bay Seasoning
1 tsp 1000 Island Dressing
2 Tbs Mayonnaise
1 Egg
1 Tbs finely diced green or red pepper
2 tsp Baking Powder
2 Tbs Olive oil or melted butter

Steps:

  • Hand pick dinner roll into very small crumbs discarding the crust. Take approx 20% of bread crumbs and sautee in butter in small frying pan until golden, not brown. Set aside. In large bowl mix balance of bread crumbs with parsley, worcestershire sauce, Old Bay, 1000 Island Dressing, mayo, egg, peppers, baking powder and olive oil or butter. Gently but thoroughly fold in crabmeat with large spoon. Sprinkle lightly with additional Old Bay, cover then chill. Pre-heat oven to 400* F Spoon crab mixture into individual one serving baking dishes then bake approx 12 minutes or until tops brown. Remove from oven and lightly sprinkle crabcakes with sauteed bread crumbs. Continue baking or broil until bread crumbs turn golden brown. Monitor closely, do not burn bread crumbs Delightful with a white burgundy!

Fresh crabmeat will make these crab cakes taste even better. With packaged crab, if the meat smells clean and fresh when you first open the package, skip steps 1 and 4 and simply blot away any excess liquid.
Ingredients
1 pound lump crabmeat, picked over for shells
1 cup milk
1 1/2 cups panko bread crumbs
Salt and pepper
2 celery ribs, chopped
1/2 cup chopped onion
1 garlic clove, peeled and smashed
1 tablespoon unsalted butter
4 ounces shrimp, peeled, deveined, and tails removed
1/4 cup heavy cream
2 teaspoons Dijon mustard
1/2 teaspoon hot pepper sauce
1 teaspoon lemon juice
1/2 teaspoon Old Bay seasoning
4 tablespoons vegetable o

  • Directions 1. Place crabmeat and milk in bowl, making sure crab is totally submerged. Cover and refrigerate for at least 20 minutes. 2. Meanwhile, place ¾ cup panko in small zipper-lock bag and finely crush with rolling pin. Transfer crushed panko to 10-inch nonstick skillet and add remaining ¾ cup panko. Toast over medium-high heat, stirring constantly, until golden brown, about 5 minutes. Transfer panko to shallow dish and stir in ¼ teaspoon salt and pepper to taste. Wipe out skillet. 3. Pulse celery, onion, and garlic in food processor until finely chopped, 5 to 8 pulses, scraping down bowl as needed. Transfer vegetables to large bowl. Rinse processor bowl and blade and reserve. Return vegetables to large bowl and let cool to room temperature. Rinse out pan and wipe clean. 4. Strain crabmeat through fine-mesh strainer, pressing firmly to remove milk but being careful not to break up lumps of crabmeat. 5. Pulse shrimp in now-empty food processor until finely ground, 12 to 15 pulses, scraping down bowl as needed. Add cream and pulse to combine, 2 to 4 pulses, scraping down bowl as needed. Transfer shrimp puree to bowl with cooled vegetables. Add mustard, hot pepper sauce, lemon juice, and Old Bay seasoning; stir until well combined. Add crabmeat and fold gently with rubber spatula, being careful not to overmix and break up lumps of crabmeat. Divide mixture into 8 balls and firmly press into 1/2-inch-thick patties. Place cakes on rimmed baking sheet lined with parchment paper, cover tightly with plastic wrap, and refrigerate for 30 minutes. 6. Coat each cake in panko, firmly pressing to adhere crumbs to exterior. Heat 1 tablespoon oil in now-empty skillet over medium heat until shimmering. Place 4 cakes in skillet and cook without moving them until golden brown, 3 to 4 minutes. Using 2 spatulas, carefully flip cakes, add 1 tablespoon oil, reduce heat to medium-low, and continue to cook until second side is golden brown, 4 to 6 minutes. Transfer cakes to platter. Strain crabmeat through fine-mesh strainer, pressing firmly to remove milk but being careful not to break up lumps of crabmeat. 5. Add crabmeat and fold gently with rubber spatula, being careful not to overmix and break up lumps of crabmeat. Divide mixture into 8 balls and firmly press into 1/2-inch-thick patties. Place cakes on rimmed baking sheet lined with parchment paper, cover tightly with plastic wrap, and refrigerate for 30 minutes. 6. Coat each cake in panko, firmly pressing to adhere crumbs to exterior. Heat 1 tablespoon oil in now-empty skillet over medium heat until shimmering. Place 4 cakes in skillet and cook without moving them until golden brown, 3 to 4 minutes. Using 2 spatulas, carefully flip cakes, add 1 tablespoon oil, reduce heat to medium-low, and continue to cook until second side is golden brown, 4 to 6 minutes. Transfer cakes to platter. Wipe out skillet and repeat with remaining 4 cakes and remaining 2 tablespoons oil. Serve immediately.

3/4 pound mixed crabmeat
3/4 pound crab leg or claw meat
1/2 teaspoon dry mustard
1/4 teaspoon ground white pepper
1/4 teaspoon cayenne
1/4 teaspoon Old Bay seasoning
1/2 teaspoon Worcestershire sauce
1 tablespoon chopped parsley
1/2 cup mayonnaise
1 large egg, beaten
1 to 2 tablespoons cracker meal
Vegetable oil
Mustard Mayonnaise (see recipe)

Steps:

  • Instead of the 1 1/2 pounds of crab, you can substitute 1/2 pound each, crabmeat, crab leg meat and scallops. Ingredients: 3/4 pound mixed crabmeat 3/4 pound crab leg or claw meat 1/2 teaspoon dry mustard 1/4 teaspoon ground white pepper 1/4 teaspoon cayenne 1/4 teaspoon Old Bay seasoning 1/2 teaspoon Worcestershire sauce 1 tablespoon chopped parsley 1/2 cup mayonnaise 1 large egg, beaten 1 to 2 tablespoons cracker meal Vegetable oil Mustard Mayonnaise (see recipe) INSTRUCTIONS: Preheat oven to 400 degrees. Pick through the crabmeat for extraneous shells and cartilage, but handle it gently. If using scallops, cut each scallop into 8 pieces. Stir the dry spices into the Worcestershire sauce. Add the spice mixture and the parsley to the mayonnaise and mix well. Beat the egg until frothy. Fold 1 tablespoon egg into the mayonnaise mixture. Add the crab and claw or leg meat, and 1 tablespoon cracker meal to the mix, and incorporate. Gently fold in the scallop, if using. Add additional cracker meal and egg as needed for the mixture just to hold together. Form the mix into 6 equal cakes. Refrigerate for 30 minutes. Heat oil in large frying pan. Without crowding the crab cakes, sear them on both sides, then finish in the oven for about 10 minutes. Serve hot with mustard mayonnaise.
