3 tablespoons chopped onion
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
½ pound cooked, cubed chicken meat
1 hard-boiled egg, sliced
1 ⅓ cups cooked spinach
3 tablespoons chopped onions

Steps:

  • Place onion in a medium saucepan over low heat and sprinkle with flour and salt. Stir together and add milk. Bring to a boil and cook until thickened.
  • Mix in chicken, egg and spinach. Heat through and serve.

This creamy chicken a la king recipe is a homemade version of the classic comfort food dish and is loaded with fresh vegetables and a splash of cream. Pasta replaces puff pastry so that it comes together in just 30 minutes making it a perfect weeknight meal!

8 ounces pappardelle pasta or whole wheat egg noodles
2 large chicken breasts, about 1 pound
1 tablespoon unsalted butter
2 teaspoons organic canola oil or avocado oil
1 10-ounce package mushrooms, sliced
1 red bell pepper, finely diced
1 clove garlic, minced
1 teaspoon chopped fresh thyme
¾ teaspoon salt
½ teaspoon freshly ground pepper
2 tablespoons dry sherry
1/3 cup all-purpose flour
2 cups chicken broth
¼ cup half and half
¼ cup toasted sliced almonds
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat. Cook whole-wheat egg noodles according to package instructions. Drain well and keep hot.
  • Meanwhile, place chicken breast in a medium saucepan and cover completely with cold tap water. Place over high heat and bring to a simmer. Reduce heat to maintain a gentle simmer and cook, turning in the poaching liquid occasionally until the chicken is no longer pink in the center and cooked through, 12 to 16 minutes, depending on thickness of the meat. Remove the chicken and cut into cubes.
  • While pasta and chicken cook, heat butter and oil in a large non-stick skillet over medium-high heat, swirling to melt butter. Add mushrooms, bell pepper, garlic, thyme, salt and pepper and cook, stirring occasionally, until the mushrooms have softened and released their juices, and the juices have evaporated and the vegetables are starting to brown, 8 to 12 minutes.
  • Add sherry to the mushroom mixture and cook, stirring until evaporated. Stir in flour to coat the vegetable mixture.
  • Add broth and cook, stirring constantly until the flour is dissolved into the broth. Bring to a simmer, stirring often. Add chicken and return to a simmer, stirring often until the chicken is heated through and the sauce is thick.
  • Remove from the heat and stir in half and half. Serve the chicken and sauce over the noodles. Top with almonds and parsley. Serve hot.

Easy and elegant chicken dish. It's a great way to use leftover chicken or turkey. Green pepper and red pimientos make this a pretty dish to serve at Christmas or anytime. Serve over cooked rice, toast, or noodles. Can be made ahead and reheated.

1 (4.5 ounce) can mushrooms, drained, liquid reserved
1 green bell pepper, chopped
½ cup butter
½ cup all-purpose flour
1 teaspoon salt
¼ teaspoon ground black pepper
1 ½ teaspoons chicken bouillon powder
1 ½ cups milk
1 ¼ cups hot water
4 cooked, boneless chicken breast halves, chopped
4 ounces chopped pimento

Steps:

  • Cook and stir drained mushrooms and green pepper in butter or margarine over medium heat for 5 minutes. Remove from heat.
  • Blend in flour, salt, and pepper. Cook over low heat, stirring constantly, until mixture is bubbly. Remove from heat.
  • Stir in instant bouillon, milk, water, and reserved mushroom liquid. Heat to boiling, stirring constantly. Boil and stir for 1 minute.
  • Stir in chicken and pimiento. Heat through.

I make this when my wife is in need of some comfort food. It's one of her favourites. I use all frozen diced vegetables to make the prep time quick and easy. This is really a simple way to make this dish.

Number Of Ingredients 9

3 boneless skinless chicken breasts
2 cups diced onions
1 cup diced green pepper
1 cup diced red pepper
2 (10 ounce) cans cream of chicken soup
1 cup milk
3 cups frozen mixed vegetables (peas, carrots etc.)
2 cloves garlic, minced
2 tablespoons olive oil

Steps:

  • Cut up chicken into bite size pieces.
  • Heat 1 Tbsp of oil in a large skillet on medium high heat.
  • Add chicken and stir fry until no longer pink.
  • Remove from skillet and set it aside.
  • Add 1 Tbsp oil to skillet on medium high heat.
  • Add garlic and brown for a minute.
  • Add onions and saute for 2-3 minutes.
  • Add peppers and saute an additional 5 minutes.
  • Return cooked chicken to skillet.
  • Add in chicken soup and milk.
  • Reduce heat to a simmer.
  • When mixture begins to bubble, add in mixed vegetables and simmer approx.
  • 15-20 minutes.
  • Serve over rice.

1/3 cup all-purpose flour
1/2 teaspoon salt
1 cup chicken broth
1 cup milk
2 cups cubed cooked chicken
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained
Toast points

Steps:

  • In a large saucepan, melt butter; stir in flour and salt until smooth. Add the broth and milk; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Stir in the chicken, mushrooms and pimientos; heat through. Serve with toast points.
