This was one of my favorite dishes growing up and now it is my children's. Ground beef, cheese and tomato sauce are baked into a simply delicious casserole.

1 pound ground beef
2 cups shredded Cheddar cheese
2 (15 ounce) cans tomato sauce
2 tablespoons butter
1 (16 ounce) package uncooked elbow macaroni
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble the ground beef into a large skillet over medium-high heat. Cook, stirring frequently, until evenly browned. Drain.
  • While the ground beef is cooking, bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and stir in butter. Transfer to a large casserole dish, and mix in the ground beef, tomato sauce, and Cheddar cheese. Sprinkle a little salt and pepper over the top.
  • Bake uncovered for 30 minutes in the preheated oven, or until heated through and bubbly.

2 cups uncooked elbow macaroni
1 lb lean ground beef
2 cloves garlic, minced
1 medium onion, minced
2 cans condensed tomato soup
1 (10 3/4 ounce) can water
2 teaspoons sugar
salt and pepper

Steps:

  • Cook macaroni and drain.
  • Brown together the ground beef, onion and garlic.
  • Drain if needed.
  • Mix in the soup, water and sugar to the beef mixture.
  • Add the cooked macaroni and stir.
  • Taste and add salt and pepper.
  • Cook over medium heat for 15 minutes, stirring often.

1 lb penne
1 teaspoon vegetable oil
1 cup chopped onion
2 teaspoons minced garlic
12 ounces lean ground beef
1 teaspoon crushed red pepper flakes
1 3/4 cups pasta sauce
1/2 cup chicken stock
1/4 cup all-purpose flour
2 cups 2% low-fat milk
1 1/2 cups chicken stock
1 cup shredded low-fat cheddar cheese
1/2 cup shredded lowfat mozzarella cheese
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450°F Spray a 13x9-inch glass baking dish with cooking spray.
  • In a large pot of boiling water, cook penne for 8 to 10 minutes or until tender but firm. Drain.
  • To make meat sauce: In a nonstick saucepan, heat oil over medium heat; cook onions and garlic for 4 minutes or until softened. Stir in beef; cook, stirring to break up meat, for 4 minutes, or until no longer pink. Stir in tomato sauce and stock. Cover and cook for 10 minutes or until thickened. Set aside.
  • To make cheese sauce: In a nonstick saucepan, whisk together flour, milk, and stock until flour dissolves. Place over medium heat; simmer until mixture begins to boil. Reduce heat to low; cook, stirring occasionally, for 5 minutes, or until thickened. Stir in Cheddar. Remove from heat. Stir cheese sauce into meat sauce.
  • Toss pasta with sauce. Pour into prepared baking dish. Sprinkle with mozzarella and Parmesan.
  • Bake in centre of oven for 10 minutes or until bubbly.

1 large onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 pound ground beef, browned and drained
16 ounce cans stewed tomatoes
16 ounces water
8 ounces elbow macaroni, uncooked
1 salt, to taste
1 black pepper, to taste
1 parmesan cheese, (optional)

Steps:

  • Saute onions and garlic in olive oil until translucent. Brown ground beef and drain. Add ground beef, tomatoes, water, raw macaroni, salt and pepper to the onion and garlic mixture. Cook for 15 to 20 minutes or until macaroni is tender. If desired, top with Parmesan cheese. Serve with crusty bread and a salad. Enjoy!

An interesting twist on the usual stuffed green pepper...just DONT use frozen bell pepper, use FRESH...Serve with a nice tossed salad to round out the meal!

4 large green bell peppers, hollowed out
1/4 medium yellow onion, chopped
1 garlic clove, minced (I like 1 tbsp. of the jarred variety for real garlicky flavour!)
1 -2 tablespoon olive oil
2 (15 ounce) cans macaroni, with beef (Chef Boyardee Beefaroni)
1 (8 ounce) can low-sodium tomatoes, cut up
1 teaspoon dried oregano
1 (4 ounce) package mozzarella cheese, shredded (part skim mozzarella is also nice!)

Steps:

  • Preheat oven to 400°F.
  • Place hollowed out green peppers in a pot of boiling water, completely covering them, and cook 5 min; drain and set aside.
  • In a skillet, saute the onion and garlic in the oil; Add the Beefaroni, tomatoes and oregano and simmer on low for 10 minutes, stirring often.
  • Stuff the peppers with the beefaroni mixture and place the peppers in a square baking dish.
  • Top the peppers with the mozzarella cheese and bake in the preheated 400°F oven for 15 minute.
  • Variation: Any other part-skim shredded cheese would be flavourful, too!

2 cups spaghetti sauce
1/2 cup olive, chopped

Steps:

  • Cook and drain ground beef in large pot.
  • Add raw macaroni, water, sauce, olives and seasonings.

1 tablespoon olive oil (not extra virgin, I use light tasting)
1 lb extra lean ground beef (I used 94% lean)
1/2 small onion, very very finely diced
1 1/2 cups coarsely grated carrots
1 medium fresh tomato, peeled, seeded and chopped
1 cup filtered water
6 slices of pasteurized process American cheese (not processed cheese "food")
8 ounces uncooked pasta (choose something that chubby fingers can easily pick up, I used Barilla brand Pipette)

Steps:

  • Heat oil in skillet.
  • Add beef, carrots, tomatoes and onions. Cook until beef is completely cooked and crumbly; carrots will be soft, onions and tomatoes will be virtually non-existent.
  • During this cooking stage, add the water to make a "sauce".
  • Set aside when done.
  • While cooking meat mixture, cook pasta according to package directions.
  • Drain pasta and combine with meat mixture.
  • Tear up the 6 slices of cheese and stir into beef/pasta mixture until a creamy sauce forms.
  • It's done!
  • Freeze in small containers.
  • To reheat, defrost in refrigerator and heat in microwave or sauce pan. You can add a little water (2 tsp or so) to keep moist while reheating.

1 lb pasta of choice (elbow) is common
1 1/2- 2 lbs chopped veal and beef combined
huge spanish or red onion, diced
2 T olive oil
24-36 ounces jar tomato sauce (Buitoni, Barilla, Vincents) TWO JARS

Steps:

  • Heat a large skillet and add the olive oil. When the oil is hot add the onion and saute until golden brown. Add the meat to the skillet chopping as you mix so that there aren't any large clumps. When the meat has lost all pinkness add the macaroni and toss well to cover with oil. After a few minutes add in the tomato sauce and mix thorougly. Lower the flame to simmer and cover the skillet with a lid. After 20 minutes taste the pasta...if it is not soft enough check at 5 minute intervals until al dente. You may need additional sauce during the cooking if it looks dry.

1 lb hamburger
4 cups macaroni
1 (26 ounce) jar Prego spaghetti sauce
1 teaspoon italian seasoning
1/2 green pepper
1 small onion
1 pinch thyme
1 garlic clove (I use 2 clove for ours taste.)
1 tablespoon parmesan cheese

Steps:

  • Cook hamburger until no pink.
  • Drain.
  • Mix in all the ingredients for sauce in hamburger.
  • Cook until heated and then turn on low for 1 hour. Check & stir occasionally.
  • Cook macaroni as follow on package.
  • Drain and run macaroni under hot water.
  • Put macaroni into sauce.
  • Heat until hot.

1 (17 1/4 ounce) box macaroni & cheese dinner mix
1 (14 1/2 ounce) can diced tomatoes
1/2 lb ground beef
1 (10 ounce) bag peas and carrots, frozen
1 (1 1/4 ounce) package onion soup mix
4 ounces cream cheese
1/2 cup sour cream

Steps:

  • Prepare mac & cheese according to package directions.
  • While noodles are cooking, brown ground beef until no longer pink. Drain meat and tomatoes; rinse thoroughly with hot water to remove excess grease and salt. Return to pan and stir in vegetables and soup mix. Let simmer on low while you complete the mac & cheese.
