1 ¼ pounds lean ground beef
½ cup chopped onion
¼ cup chopped green chile pepper
1 (8 ounce) can tomato sauce
2 teaspoons chili powder
½ teaspoon garlic salt
1 (10 ounce) can refrigerated buttermilk biscuit dough
1 ½ cups shredded Monterey Jack cheese, divided
½ cup sour cream
1 egg, lightly beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet, brown the ground beef, onion and green chile pepper; drain. Stir in tomato sauce, chili powder ,and garlic salt. Simmer while preparing the biscuits.
  • Separate biscuit dough into 10 biscuits. Pull each biscuit into 2 layers. Press 10 biscuit halves on the bottom of a 9-inch pie dish to form bottom crust. Reserve the other 10 biscuit halves for the top layer.
  • Remove meat mixture from heat, and stir in 1/2 cup shredded cheese, sour cream, and egg; mix well. Spoon over bottom crust. Arrange remaining biscuit halves to form top crust, and spoon remaining cheese evenly over the top.
  • Bake in preheated oven for 25 to 30 minutes, or until biscuits are a deep golden brown color.

This easy-to-prepare dish is a meal in itself. That made it a real favorite of my mother's-she had to cook for nine children! Better yet, my brothers, sisters and I loved it.

2 pounds beef stew meat, cut into 1-inch cubes
All-purpose flour
2 tablespoons vegetable oil
2 beef bouillon cubes
2 cups boiling water
Salt and pepper to taste
6 to 8 small potatoes, peeled and quartered
3 small onions, quartered
4 carrots, sliced
1 package (9 ounces) frozen cut green beans, thawed
2 tablespoons cornstarch
1/4 cup water
BISCUIT DOUGH:
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons vegetable oil
3/4 to 1 cup milk
Melted butter

Steps:

  • Coat beef cubes with flour. Brown beef on all sides in oil in a large Dutch oven. Meanwhile, dissolve bouillon in boiling water; add to Dutch oven. Season with salt and pepper. Simmer, covered, for 1-1/2 hours to 2 hours or until the meat is tender. Add the potatoes, onions, carrots and beans; cook until vegetables are tender, about 30-45 minutes. Mix cornstarch and water; stir into stew and cook until thickened and bubbly. , For biscuits, combine flour, baking powder, salt, oil and milk in a large bowl. Stir to form a light, soft dough, adding more milk if necessary. Drop by tablespoonfuls on top of stew. Brush top of biscuits with melted butter. Bake, uncovered, at 350° for 20-30 minutes or until the biscuits are done.

2 tablespoons sliced pimiento-stuffed green olives
1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1 1/2 teaspoons minced garlic (from 4.5-oz jar)
1 can (14.5 oz) diced tomatoes with roasted garlic and onion, undrained
1 can (14.75 oz) cream-style corn, undrained
1 teaspoon chili powder
1/2 cup shredded Mexican cheese blend or Cheddar cheese (2 oz)

Steps:

  • Heat oven to 400°F. In large bowl, stir Bisquick mix, milk and olives until soft dough forms.
  • In 12-inch skillet, cook beef, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in tomatoes, corn and chili powder. Heat to boiling. Pour in ungreased 11x7-inch (2-quart) glass baking dish. Drop biscuit dough by tablespoonfuls over mixture.
  • Bake 20 minutes. Sprinkle cheese over biscuits; bake 5 to 10 minutes longer or until biscuits are lightly browned and cheese is melted.

10 3/4 ounces campbells condensed golden corn soup
10 3/4 ounces campbells condensed tomato soup
3/4 cup water
15 ounces veg-all mixed vegetables, drained
1 tablespoon french's Worcestershire sauce
7 1/2-10 ounces refrigerated biscuits
1/2 cup shredded cheddar cheese

Steps:

  • In 10-inch skillet over medium-high heat, cook beef until browned, stirring to separate meat. Spoon off fat.
  • Stir in soups, water, mixed vegetables and Worcestershire sauce. Spoon into 3-quart baking dish. Bake at 400 for 10 minutes or until hot and bubbling. Meanwhile, cut each biscuit into quarters.

I LOVE onion gravy in beef stew, absolutely delicious! The lima beans add more protein and the biscuits are great for soaking up that wonderful gravy. And this recipe has the added bonus of making your house smell delicious!

2 1/2 lbs beef tips
1/4 cup all-purpose flour
salt & pepper
1 tablespoon olive oil
1 vidalia onion, very large (cut lengthwise and sliced very thinly)
1/2 cup beef broth
1/2 cup white wine (I use dry Vermouth for my white cooking wine)
1 tablespoon dried basil
1 (16 ounce) bag frozen lima beans (I prefer baby lima beans)
1/2 cup half-and-half
1 tablespoon cornstarch
1 (10 ounce) can refrigerated biscuits, 10 count

Steps:

  • Toss the beef tips with the flour, salt and pepper in a large Ziploc bag to coat well. Heat the olive oil in a large pot. Brown the beef in the pan. Once browned, reserve beef on a plate and cook the onions until soft. Return the beef to the pan, add the broth, white wine and basil to the pot. Turn down to a simmer, cover, and let cook for 2 hours (can cook for longer if necessary, just keep on low heat). Toward end of cooking time preheat oven to 350 degrees. Stir the lima beans into the stew. In a measuring cup mix the half-and-half with the cornstarch until the cornstarch is dissolved. Stir it into the stew. Turn heat up to medium-high and heat to almost boiling stirring regularly. Transfer stew to large 9 by 13 glass pan (I actually use a little larger corning ware pan) Open biscuits can and place individual biscuits on top of the stew. Cook in 350 degree oven for 15-20 minutes until biscuits are golden brown.

1to 1 1/2 lb ground beef
1/2 c chopped onions or 2 tablespoons of instant onions
1/4 c green chiles or green peppers
1 c tomato sauce
2 tsp chili powder
1/2 to 3/4 tsp garlic salt
1 can(s) buttermilk biscuits
1 1/2 c shredded jack or cheddar cheese or both
1/2 c sour cream
1 egg slightly beaten

Steps:

  • 1. Preheat oven to 375 degrees. Brown beef, onion and pepper in large frying pan. Drain stir in tomato sauce , chili powder and garlic salt. Simmer.
  • 2. Separate biscuit dough (10) pull each apart in to 2 layers. Press biscuit layers over bottom of ungreased 8 x 8 square baking dish.
  • 3. Combine 1/2 cup of cheese (reserve the remaining cheese for topping), sour cream and eggs mixing well. Remove from meat from heat, stir in sour cream mix. Spoon over dough, arrange remaining biscuits layering on top. Sprinkle remaining cheese on top.
  • 4. Bake at 375 degrees for 25-30 minutes.

BROWN IN A CAST IRON SKILLET
2 Tbsp coconut oil (or your preferred fat or oil)
1/4 c chopped onions
1 lb ground beef
salt, black pepper, garlic powder to taste
1 can(s) condensed tomato soup
1 can(s) water
ALLOW ABOVE TO COOK ON MED/LOW HEAT WHILE MAKING THE BISCUITS
1 1/2 c sifted flour
3 tsp baking powder
1/2 tsp salt
1/4 c butter
3/4 c milk

Steps:

  • 1. Saute onions in coconut oil in cast iron skillet -- WHEN THE ONION IS TRANSLUCENT push to one side
  • 2. ADD the ground beef, salt, pepper, and garlic powder to taste -- breaking up the meat with a fork while browning
  • 3. WHEN THE MEAT and onions are BROWNED add the condensed soup and the water and stir until smooth. Allow this to cook slowly while you are making the biscuit dough
  • 4. In a separate mixing bowl add the flour, baking powder and salt and gently stir with fork to blend
  • 5. CUT IN 1/4 C butter
  • 6. ADD ALL AT ONCE 3/4 C milk and toss with fork until flour is dampened
  • 7. TRANSFER THE MEAT MIXTURE TO AN OBLONG BAKING DISH
  • 8. DROP SPOON FULLS OF DOUGH ON TOP OF THE MEAT MIXTURE spacing about 1 inch apart -- cover the whole pan with drop biscuits
  • 9. Bake 425 degrees about 20 minutes or until biscuits are brown The recipe actually says: "Turn upside down on platter and serve" -- but we always placed the casserole on the table and scooped servings from the pan onto each individual's plate
  • 10. The actual name of the recipe is: BEEF UPSIDE DOWN PIE -- and it was actually baked in the cast iron skillet -- but we did not serve it that way.
  • 11. This recipe can be changed in whatever way you like. You can add green peppers to the saute, you can use tomato juice or sauce instead of soup. You can season the biscuits with garlic powder, parsley, and shredded cheese (any kind). You can use biscuits from a can rather than make your own -- just open the can, separate the biscuits and place on the tomato/meat mixture. It's all good!!
  • 12. The only thing that might ruin the dish is too many biscuits -- which will soak up all the sauce and be kind of dry and disappointing. Experiment to find the combinations that work for you. I recommend making the biscuits the first time you make this recipe (at least) so you get a feel for the quantity of biscuits there should be.

1/4 teaspoon salt
1/2 teaspoon black pepper

1 teaspoon ground sage
1/4 teaspoon dried basil or 1/8 teaspoon ground basil
1/8 teaspoon finely ground celery seed
24 ounces finely shredded cheddar cheese
3 cups baking mix
1 cup 2% low-fat milk, plus
3 tablespoons 2% low-fat milk

Steps:

  • Preheat oven to 375 degrees.
  • Brown together lean ground meat and all spices until softly brown. Drain well.
  • Mix baking mix, milk, and cheese until it follows the spoon around the bowl, forming a nice dough base.
  • Add in warm spiced meat and mix well, but not too much. You don't want your dough to be tough.
  • Using your hands, form 1 1/2" to 2" balls and place on parchment covered cookie sheet [2 wide if 2" balls, 3 wide if 1 1/2" balls are used]. You may need several sheets and 2 open layers in your oven, depending on sheet and oven sizes.
  • Bake in a moderate oven 10-13 minutes, or until a nice golden brown.

1 green bell pepper (diced)
2 Roma tomatoes (diced)
1 (4 ounce) can green chilies

Steps:

  • Preheat oven to 325 degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
  • Brown ground beef until no longer pink, drain grease. Then add taco seasoning and water and let simmer for 3-4 minutes.
  • In a medium bowl mix sour cream, mayo, half of the cheese, and half of the onion together and set aside.
  • In another bowl, mix together biscuit mix and water to make a soft dough. Press dough into the bottom and 1/2" up the sides of greased 9 x 13 inch pan.

1 lb ground beef
1/2 c red or green pepper, diced - or whatever pepper you prefer
3 clove garlic, minced
1 onion, chopped
1 - 8 oz tomato sauce
3/4 - 1 Tbsp chili powder
1 tsp garlic salt
1 egg
1 1/2 - 2 c shredded cheddar or monterey jack cheese, divided
1/2 c sour cream

Steps:

  • 1. Preheat oven to 350 degree F. Prepare a 9 inch square baking pan - or ( I used an oval casserole dish) with nonstick spray. Carefully separate the biscuits so you have a top and a bottom.
  • 2. Press half of the biscuits on the bottom of baking dish. Set aside.
  • 3. In a skillet, brown ground beef, onion, garlic and pepper, until beef is cooked and veggies tender. Drain Stir in tomato sauce, garlic salt and chili powder, simmer for about 5 minutes.
  • 4. Meanwhile, in a bowl, add half cheese, sour cream and egg...mix well.
  • 5. Remove skillet from heat and stir in sour cream mixture, thoroughly.
  • 6. Now spread the ground beef mixture evenly over the biscuits.
  • 7. Top with the other halves of biscuits. Sprinkle with remainder of cheese.
  • 8. Bake for 20 - 25 minutes or until bubbly and golden brown. Serve with extra cheese, onion, sour cream...or serve as is...enjoy...it sure is tasty.

ANNA'S BEEF AND BISCUIT CASSEROLE

The original recipe is called "John Wayne Casserole", but it called for green peppers and chilis, which neither my husband nor I can eat, so I felt it was only fair to change the title as well. The original recipe also called for 2 Roma tomatoes, but since I had no ripe tomatoes of any kind I used the tomato sauce instead, and my husband loved it! 5/31/2020 edit - my husband refused to allow the packet of taco seasoning called for in the original casserole (he must not have known it was there), so I've revised this recipe to use seasoning salt instead.

1 cup Original Bisquick™ mix
3 tablespoons grated Parmesan cheese
1/4 cup water
3/4 cup finely shredded Swiss cheese (3 oz)
Italian (flat-leaf) parsley sprigs, if desired

Steps:

  • In 3-quart saucepan, cook beef, onion soup mix and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in remaining soup ingredients. Heat to boiling; reduce heat to medium-low. Cook uncovered 10 minutes.
  • Meanwhile, heat oven to 425°F. Spray cookie sheet with cooking spray. In medium bowl, stir Bisquick mix, Parmesan cheese and 1/4 cup water until soft dough forms. Place dough on work surface sprinkled with additional Bisquick mix; roll in Bisquick mix to coat. Shape into a ball; knead 10 times.

1 onion, chopped
1 tsp chili powder
1 can of refrigerated bisuits
1 can(s) green chilies
1/4 c sour cream
1 egg
1 can(s) tomato sauce, 8 ounces

  • 1. Brown the hamburger and fry the onion till soft, add chili powder. Add the can of tomato sauce and the can of chilies, bring to a simmer. Remove from heat. In a bowl, mix the egg and sour cream and add about 1/2 cup or so of the cheese. Mix the meat mixture with the sour cream mixture, then pour that into a 9 inch square pan. Open the can of biscuits and place the biscuits on top of the meat mixture. Sprinkle remaining cheese on top. Bake in a preheated 350 degree oven for 20 min or until the biscuits are golden brown.

1 medium green pepper, diced
1/4 cup(s) onion, minced
1/2 cup(s) bbq sauce
2 teaspoon(s) brown sugar
3/4 cup(s) shredded cheddar cheese
1 can(s) (17oz) refrigerated biscuits

Steps:

  • Preheat oven to 400°F. Brown ground beef, bell pepper and onion in a medium skillet; drain, Stir in barbecue sauce and brown sugar; mix until thoroughly combined. Remove from heat.
  • Place one biscuit in each of 8 greased muffin cups, pressing the dough up the sides to the edge of the cup.

How to make Beef and Salsa Biscuit Bake

Number Of Ingredients 9

2 (12-ounce) packages refrigerated buttermilk biscuits
1 (16-ounce) jar Ortega salsa - homestyle recipe (mild)
1 pound ground bee, fully cooked, drained and crumbled
1 can (4-ounces) Ortega diced green chiles
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
1/2 cup sliced ripe olives, drained
1 cup Cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded

Steps:

  • Preheat oven to 350 degrees F. Grease 13x9-inch baking dish.
  • Divide biscuits into quarters; place into prepared baking dish.
  • Combine salsa, beef, chiles, peppers, onions and olives in medium bowl. Pour over biscuits.
  • Bake for 20 minutes. Sprinkle with Cheddar Cheese and Monterey Jack Cheese; bake for an additional 10 minutes or until cheese is melted.
