I love basil and chicken together, and chicken and cashew together, so it was natural to put it *all* together into this tasty sandwich filling!

1 cup cooked chicken breasts or 1 cup turkey breast, cut into chunks
1 cup cooked white rice or 1 cup brown rice
1/2 cup red seedless grapes, sliced in half
1/2 cup mayonnaise (Best Foods, Helmann's, or Vegenaise)
1/4 cup chopped fresh sweet basil
1 teaspoon dried onion flakes
1/8 teaspoon black pepper, to taste
1/4 cup chopped roasted cashews
3 tablespoons crumbled feta cheese

Steps:

  • Combine all ingredients; the filling tastes even better when it's had a chance to chill thoroughly, but often I eat it right away.
  • Goes well on croissant or in a pita.
  • Makes about 4 servings.

2 cups diced cooked chicken
1/2 cup chopped salted cashews
1/2 cup chopped red apple
1/2 cup chopped peeled cucumber
1/2 cup mayonnaise
1/2 teaspoon sugar
1/2 teaspoon salt
Dash pepper
6 kaiser rolls or croissants, split
6 lettuce leaves, optional

Steps:

  • In a large bowl, combine chicken, cashews, apple and cucumber. In a small bowl, combine mayonnaise, sugar, salt and pepper. Stir into chicken mixture. Serve on rolls, with lettuce if desired.

1 cold rotisserie chicken
3/4 cup coarsely chopped cashews
3/4 cup chopped celery
1/2 cup minced red onion
3/4 cup light sour cream
1/4 cup mayonnaise
2 tablespoons lemon juice
3/4 teaspoon dry tarragon
1/4 teaspoon pepper
salt

Steps:

  • Remove and discard skin and bones from rotisserie chicken. Tear meat into bite- size pieces and place in a large bowl with cashews, celery and onion. Mix together remaining ingredients in a small bowl and stir into chicken mixture. Chill for 1 hour to allow flavors to blend. Serve over salad greens or spoon into tomato cups, croissants or pita bread.

2 cups seashell pasta
¼ cup brown sugar
1 cup creamy salad dressing (e.g. Miracle Whip)
2 teaspoons lemon juice
1 tablespoon distilled white vinegar
1 pinch salt
2 cups chopped celery
½ cup chopped green bell pepper
1 onion, chopped
3 boneless chicken breast halves, cooked and cut into bite-sized pieces
1 cup cashew halves

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
  • In large bowl, combine brown sugar, salad dressing, lemon juice, vinegar and salt. Toss dressing mixture with cooked pasta, celery, green pepper, onion and chicken. Chill until ready to serve. Mix in cashews just before serving.

1 teaspoon cumin seed
1 teaspoon coriander seed
3 medium lemons
1 1/2 tablespoons butter
3 tablespoons minced fresh ginger
1 -3 tablespoon finely chopped jalapeno chile
1/2 teaspoon salt
1/3 cup mayonnaise
1/3 cup low-fat yogurt or 1/3 cup whole milk greek strained yogurt
1/2 cup chopped fresh cilantro
1/2 cup chopped green onion
4 cups shredded white and dark chicken meat (from one 2 1/2- to 3-lb. rotisserie chicken)

Steps:

  • Toast cumin and coriander seeds until fragrant over low heat for 3 to 5 minutes. Grind in a spice grinder and process until finely ground. Zest lemons and set aside zest. Juice 1 lemon and set aside 3 tablespoons juice.
  • Melt butter in the frying pan over medium heat. Add ginger, jalapeño, and salt. Cook 3 to 5 minutes or until jalapeño is soft. Remove from heat and set aside.
  • In a large bowl, stir together mayonnaise, yogurt, lemon zest, lemon juice, ginger-jalapeño mixture, and ground spices. Add cilantro, green onions, and chicken; stir to coat well with dressing. Taste and adjust seasonings as needed. Sprinkle with cashews and serve.

6 tablespoons fat-free mayonnaise
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1/4 teaspoon hot sauce
1/8 teaspoon white pepper
3 cups chopped cooked chicken breasts
1/2 cup chopped celery
1/4 cup chopped green onion
1/4 cup shredded fresh basil
6 cups shredded fresh spinach
1 1/2 tablespoons pine nuts (optional)

Steps:

  • Combine first 5 ingredients and stir well.

3 lbs boneless skinless chicken breasts, cooked, cooled and chopped
3 celery ribs, chopped (include the leaves!)
1 cup chopped sweet onion
1/2 cup finely chopped carrot
1 (8 ounce) can water chestnuts, drained and chopped
3/4 cup chopped cashews
1 tablespoon tarragon
1/4 teaspoon ginger
1 1/4-2 cups mayonnaise (start on the low side)
2 teaspoons reduced sodium soy sauce (sometimes I use a bit more)
1 teaspoon sugar
1/4 teaspoon black pepper
1/8 teaspoon salt (or more)

1/2 cup cider vinegar
1/2 cup molasses
1/3 cup canola oil
2 tablespoons minced fresh gingerroot
2 teaspoons reduced-sodium soy sauce
1 teaspoon salt
1/8 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (6 ounces each)
SALAD:
8 ounces fresh baby spinach (about 10 cups)
1 can (11 ounces) mandarin oranges, drained
1 cup shredded red cabbage
2 medium carrots, shredded
3 green onions, thinly sliced
2 cups chow mein noodles
3/4 cup salted cashews, toasted
2 tablespoons sesame seeds, toasted

Steps:

  • In a small bowl, whisk the first 7 ingredients until blended. Pour 3/4 cup marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate at least 3 hours. Cover and refrigerate remaining marinade., Preheat broiler. Drain chicken, discarding marinade in dish. Place chicken in a 15x10x1-in. baking pan. Broil 4-6 in. from heat 4-6 minutes on each side or until a thermometer reads 165°. Cut chicken into strips., Place spinach on a serving platter. Arrange chicken, oranges, cabbage, carrots and green onions on top. Sprinkle with chow mein noodles, cashews and sesame seeds. Stir reserved molasses mixture; drizzle over salad and toss to coat. Serve immediately.

4 tablespoons peanut oil
100 g unsalted dry-roasted cashews
1/2 onion, sliced
1 red chili pepper, chopped
3 garlic cloves
1 cup fresh basil leaf
500 g chicken fillets, sliced
1 tablespoon palm sugar
1 pinch salt
1 limes, juice of (1 squeeze) or 1 lemon, juice of (1 squeeze)
fish sauce, to taste

Steps:

  • Heat peanut oil in a pre-heated wok. Fry the cashew nuts until they are a light golden brown. Remove nuts onto absorbent paper.
  • Heat oil again in the wok. Stirfry onion and chili pepper and garlic until it is light brown.
  • Add 3/4 cup basil leaves and saute until the mixture is fragrant.
  • Add chicken slices and continue to stirfry all ingredients over moderate heat for approximately 2 minutes until the colour of the meat changes.
  • Add cashew nuts, remaining basil leaves.
  • Stir in the palm sugar, squeeze of lime or lemon and pinch of salt and sprinkle in the fish sauce.
  • Serve with rice.
