Treat loved ones to a banoffee pie for dessert featuring a classic biscuit base, oozy caramel, bananas, cream and chocolate. Who could resist?

225g digestive biscuits
150g butter , melted
397g can caramel or 400g dulce de leche
3 small bananas , sliced
300ml double cream
1 tbsp icing sugar
1 square dark chocolate (optional)

Steps:

  • Crush the digestive biscuits, either by hand using a wooden spoon, or in a food processor, until you get fine crumbs, tip into a bowl. Mix the crushed biscuits with the melted butter until fully combined. Tip the mixture into a 23cm loose bottomed fluted tart tin and cover the tin, including the sides, with the biscuit in an even layer. Push down with the back of a spoon to smooth the surface and chill for 1 hr, or overnight.
  • Beat the caramel to loosen and spoon it over the bottom of the biscuit base. Spread it out evenly using the back of a spoon or palette knife. Gently push the chopped banana into the top of the caramel until the base is covered. Put in the fridge.
  • Whip the cream with the icing sugar until billowy and thick. Take the pie out of the fridge and spoon the whipped cream on top of the bananas. Grate the dark chocolate over the cream, if you like, and serve.

With generous layers of dulce de leche, bananas and whipped cream, this dazzling pie is not for the faint of heart. The banoffee or banoffi pie, a mash-up of banana and toffee, was created in 1971 by the chef Ian Dowding and Nigel MacKenzie, the owner of the Hungry Monk, a now-closed restaurant in Sussex, England. The original recipe called for a traditional pie crust, homemade dulce de leche and coffee-flavored whipped cream, but we've simplified it for the home cook by using a graham cracker crust, store-bought dulce de leche and plain whipped cream. If you like, you could add a teaspoon of instant coffee granules to the whipped cream.

1 1/4 cups/155 grams graham cracker crumbs (about 10 whole graham crackers)
5 tablespoons/70 grams unsalted butter, melted
1/3 cup/65 grams granulated sugar
1/2 teaspoon kosher salt
2 1/2 cups/600 milliliters store-bought dulce de leche (about 20 ounces)
3 large bananas, peeled and sliced about 1/4-inch thick
1 1/2 cups/360 milliliters cold heavy cream
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon instant coffee granules (optional)
Chocolate shavings or fresh coffee grounds, for garnish (optional)

Steps:

  • Heat the oven to 350 degrees. Make the crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar and salt. Stir until fully incorporated and sandy. (When you pinch a bit of it between your fingers, it should hold together.) Transfer to a 9-inch pie plate. Using your fingers or a flat-bottomed cup, press the mixture into the pie plate and up the sides. Make sure it is well packed. Bake until set, 12 to 15 minutes. Let cool at room temperature for 30 minutes, or cover with plastic wrap and refrigerate up to 2 days.
  • Spoon the dulce de leche into the pie crust and spread into an even layer. Pile in banana slices into a relatively even layer (they should overlap). Transfer the pie to the refrigerator while you make the whipped cream.
  • Make the whipped cream: Using a handheld mixer or stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, vanilla extract and instant coffee, if using, on medium-high speed until firm peaks form, 1 to 2 minutes. Spread the whipped cream on top of the bananas, making sure to spread the whipped cream to the edge, totally covering the bananas (this will help prevent them from browning). Chill the pie, uncovered, for 2 hours and up to overnight.
  • To serve, sprinkle the pie with chocolate shavings or fresh coffee grounds, if desired. Store leftover pie in the refrigerator, covered, for up to 5 days. The whipped cream may lose some height, but the pie will be no less delicious.

This is a fairly common dessert in Britain, with layers of banana, gooey caramel, and whipped cream on a graham crumb crust. It's very sweet, so a small piece goes a long way! The cooking time may seem long, but that is simply the condensed milk caramelizing on the stove. Top with chocolate curls if desired.

30 oz sweetened condensed milk
14 graham crackers
6 tablespoons unsalted butter, melted
nonstick cooking spray
1 ½ cups heavy cream
1 tablespoon sugar
3 bananas, sliced

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Pour the sweetened condensed milk into a baking dish. Cover with aluminum foil and set in a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the smaller dish.
  • Place in the oven and cook for 90 minutes. Check the water level occasionally, making sure that it reaches halfway and refilling as necessary.
  • Carefully remove the baking dish from the hot water bath and let cool to room temperature. Whisk the mixture (now it's dulce de leche!) until smooth.
  • Reduce the oven temperature to 350˚F (180˚C).
  • In the bowl of a food processor, combine the graham crackers and melted butter. Pulse until crackers are finely ground and the mixture resembles wet sand.
  • Grease a 9-inch (22 cm) tart pan with nonstick spray. Add the graham cracker mixture to the tin and press evenly to cover pan completely.
  • Bake crust for 5 minutes, until golden and fragrant. Transfer to a wire rack and let cool to room temperature.
  • Spread the dulce de leche in the cooled tart crust, using a flexible spatula to smooth it into an even layer. Cover and refrigerate for at least 4 hours or up to overnight, until set.
  • In a large bowl, beat the heavy cream until soft peaks are just beginning to form. Add the sugar and beat until soft peaks form.
  • Remove the pie from the refrigerator. Scatter the banana slices over the dulce de leche. Top with the whipped cream, spreading evenly to cover bananas, and garnish with chocolate shavings.

12 ounces digestive biscuits, crushed
½ cup butter, melted
2 ½ tablespoons butter, melted
1 ¼ cups heavy cream
3 bananas, sliced
1 teaspoon instant coffee granules

Steps:

  • Immerse the can of sweetened condensed milk in a pot of boiling water. Simmer, ensuring the can is fully covered with water, until caramelized, 2 to 3 hours. Remove the can from the boiling water using tongs and let cool, 8 hours to overnight.
  • Mix digestive biscuits with 1/2 cup plus 2 1/2 tablespoons melted butter in a bowl. Press into the bottom of a 9-inch springform pan. Refrigerate crust until firm.

This heavenly version of banoffee pie is ridiculously easy to make. Although the preparation time is very long, most of that time involves the condensed milk caramelising in the pan without your supervision. Hope you enjoy it!

1 ready-made graham cracker pie crust (or make your own crust for a pie about 25cm across)
1 (400 ml) can sweetened condensed milk
3 bananas
300 ml cream
hot chocolate powder or cocoa, for dusting

Steps:

  • Place the UNopened can of condensed milk (don't open the can!) in a saucepan and cover with water.
  • Bring the water to the boil then reduce slightly and let the can boil covered for 2 1/2 or 3 hours (if you're patient enough to wait for 3 hours it is better).
  • IMPORTANT- Don't ever let the saucepan boil dry.
  • Keep checking up on it and adding water if necessary.
  • Remove the can and wait a few minutes before opening it very carefully in the sink.
  • The condensed milk will look like creamy brown caramel.
  • Stir the caramel in the can with a fork to remove any lumps, then pour into your pie crust and let it cool, then refrigerate till cold.
  • Slice bananas thinly and lay them on top of the toffee filling.
  • Whip the cream and spread it over the bananas.
  • I usually just cover the bananas, but if you like more cream, spread it as thickly as you want.
  • Dust the cocoa or powdered drinking chocolate on top for effect, using a sieve.
  • Serve in thin slices with coffee.
  • Enjoy!

1 1/2 c graham cracker crumbs
1 stick butter, melted (1/2 cup)
1/3 c sugar
OPTIONAL CHOCOLATE CRUST
1 1/2 c graham cracker crumbs
1/3 c granulated sugar
1/2 c butter, softened
1/4 c unsweetened cocoa powder
CARAMEL
1 can(s) condensed milk (14 oz)
1/3 c brown sugar packed
6 1/4 Tbsp butter
TOPPINGS
7 bananas not over ripened, do not want them mushy.
2-4 Tbsp lemon juice to prevent bananas from browning
WHIPPED CREAM
4 oz cream cheese
2 c whipping cream
1/4 c confectioners' sugar
2-3 Tbsp brewed extra strong coffee (you can use double strength instant mixed with water. Then remove 3 Tbsp for whipped cream.)
1 large chocolate bar (I used Ghiraradelli chocolate toffee bar)

Steps:

  • 1. Pre-heat oven to 400 degrees. Make crust. Combine cracker crumbs with sugar. Add melted butter. And cocoa if making a chocolate crust.
  • 2. Combine well. Press into a 9-inch springform pan bottom going up halfway up sides of the pan. Bake for 10 minutes. Remove from oven and cool.
  • 3. Make caramel - melt butter in a saucepan. Add brown sugar. Cook on high heat. Bring to a boil stirring constantly. Make sure sugar dissolves.

1 (9 inch) graham cracker pie crust
½ (12 ounce) jar caramel syrup
2 cups heavy whipping cream
2 tablespoons confectioners' sugar
2 teaspoons vanilla extract

  • Place a whisk and mixing bowl in the freezer to cool, 10 to 20 minutes.
  • Place bananas in the bottom of the pie crust and drizzle 5 ounces caramel syrup over top. Reserve remaining caramel syrup for garnish.

1 large egg yolk
1 teaspoon vanilla extract
For filling
2 14-ounce cans sweetened condensed milk
1/2 cup whipping cream
1 tablespoon dark rum
1 tablespoon vanilla extract
4 bananas, peeled, sliced
For topping
3 tablespoons instant coffee crystals
1 tablespoon water
2 cups chilled whipping cream
1/2 cup sugar

  • For crust:
  • Combine flour, butter, sugar and salt in processor. Blend until mixture resembles coarse meal. Add nuts; process using on/off turns until nuts are finely chopped. 2 cups crushed graham crackers, about 11 crackers
1 stick butter (1/2 cup), melted
2 large ripe bananas
2 cups heavy cream
1/8 teaspoon ground cinnamon
2 ounces bittersweet chocolate, grated

Steps:

  • Pour the can of condensed milk in a medium saucepan and cook over low heat for about 45 minutes stirring frequently. Be careful not to burn as it sticks to the bottom of the pan.
  • Add the crushed crackers to a food processor. Pour in the melted butter and pulse until it sticks together and the graham crackers get pulverized. Pour the graham cracker mixture into a 9-inch spring form pan and press with your hands or a 1 cup measurer to evenly distribute on the bottom of the pan. 1 1/2 cups chilled heavy cream
1 tablespoon packed light brown sugar

a 9-inch pie plate (preferably deep dish)

Steps:

  • Put oven rack in middle position and preheat oven to 425°F.
  • Pour condensed milk into pie plate and stir in a generous pinch of salt. Cover pie plate with foil and crimp foil tightly around rim. Put in a roasting pan, then add enough boiling-hot water to reach halfway up side of pie plate, making sure that foil is above water. Bake, refilling pan to halfway with water about every 40 minutes, until milk is thick and a deep golden caramel color, about 2 hours. Remove pie plate from water bath and transfer toffee to a bowl, then chill toffee, uncovered, until it is cold, about 1 hour.
  • While toffee is chilling, clean pie plate and bake piecrust in it according to package instructions. Cool piecrust completely in pan on a rack, about 20 minutes.
  • Spread toffee evenly in crust, and chill, uncovered, 15 minutes.
  • Cut bananas into 1/4-inch-thick slices and pile over toffee.
  • Beat cream with brown sugar in a clean bowl with an electric mixer until it just holds soft peaks, then mound over top of pie.

2 (14 ounce) cans sweetened condensed milk
1 1/2 cups graham cracker crumbs
10 tablespoons butter, softened
3 large bananas
1 1/2 cups heavy whipping cream
1/3 cup confectioners' sugar
1 teaspoon vanilla

Steps:

  • Mix graham cracker crumbs with softened butter and press mixture into 9" pie plate. Bake for 5-8 minutes at 350.
  • To create toffee filling, caramelize the sweetened condensed milk. Pour the condensed milk into a 9x12x2 glass-baking dish. Cover with foil and place dish inside a larger poaching pan. Add water to poaching pan until half way up sides of baking dish. Bake at 300 for an hour and a half.
  • Once both the crust and toffee filling are cooled, spread half of evenly inside crust. Slice the bananas and layer on top of filling. Pour remaining half of filling over bananas, spreading evenly. Whip the cream with the confectioners sugar and vanilla and spread on top of toffee filling and bananas.

Different to all the others on here. This is simple to make and doesn't take ages. I always make a double one as there is never enough to go around...everyone will want seconds. Deviate from this recipe at your peril. I have followed this recipe exactly for years and have NEVER has a duff pie. Cook time does not include chill time.

250 g digestive biscuits
1 teaspoon mixed spice
100 g melted butter
50 g caster sugar
50 g dark brown sugar
100 g butter
397 g sweetened condensed milk
1 tablespoon black treacle
4 small bananas
284 ml double cream, lightly whipped
cocoa powder, to dust
chocolate curls, to decorate

Steps:

  • Blitz biscuits to fine breadcrumbs.
  • Add mixed spice and melted butter and blend.
  • Press the mixture into a lined loose bottomed cake tin, then chill well.
  • Place butter and sugars into a non stick pan, melt until it turns to a liquid.
  • Add the condensed milk and bring gently to the boil, stirring continuously.
  • Boil steadily for EXACTLY 1 minute, stirring frequently to make a golden caramel.
  • Add the treacle and mix thoroughly.
  • Spread the caramel over the biscuit base and place in the fridge for about 1 ½ hours until firm.
  • Arrange the bananas over the caramel.
  • Cover with whipped cream.
  • Dust with cocoa powder or chocolate curls to decorate.

Try a new take on banoffee pie with a crunchy hazelnut praline, salted caramel and muscovado whipped cream. A few cheat's ingredients will save you time

100g hazelnuts
4 tbsp caster sugar
300g chocolate oat biscuits
85g salted butter, melted
400g dulche de leche
300ml double cream
3 tbsp dark muscovado sugar
1 tsp vanilla bean paste, or 1 tsp vanilla extract
3 medium bananas, peeled and sliced

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the hazelnuts onto a baking sheet, and toast in the oven for 10-15 mins until evenly golden. Tip into a bowl. Line the baking sheet with baking parchment and set aside.
  • Tip the caster sugar, half the toasted hazelnuts and a small pinch of sea salt into a small saucepan set over a low heat. Cook gently for 7-10 mins until the sugar melts and turns an amber colour - do not stir, but swirl the pan every now and again. Tip the mix onto the baking sheet. Leave to cool completely, then break up into small pieces.
  • Line the base of a 23cm fluted tart tin with baking parchment. Break the biscuits into a food processor, and blitz with the rest of the hazelnuts to a fine crumb. Or, seal the biscuits and nuts in a food bag and crush with a rolling pin. Tip the crumbs into a bowl and combine with the melted butter. Press into the base of the tin and up the side, then chill for 2 hrs.
  • Remove the cold tart base from the tin (if it sticks slightly, put it in a warm oven for 3-4 mins to help release it), then set on a serving plate. Spoon the dulche de leche into a bowl and gently fold in a large pinch of sea salt (don't overmix, or it will become too loose).
  • Tip the cream, muscovado sugar and vanilla into another bowl and gently beat with an electric whisk until softly whipped. Spread the salted caramel over the base of the tart, then arrange the banana slices on top. Spoon over the muscovado cream. Chill for at least 3 hrs, or overnight. Scatter with the hazelnut praline just before serving.

When cut, the slices come out very easily. The pie is filled with banana and toffee flavor. This banoffee pie recipe is a must-try.

FOR CRUST
150g 16 digestive biscuits or graham cracker crumbs (1 1/3 c)
100g butter melted (7 1/4 Tbsp)
FOR PIE FILLING
1 tin of evaporated milk, 12 oz. can
50g butter (3 3/4 Tbsp)
50g brown sugar (1/4 C packed)
1 Tbsp golden syrup
3 bananas, sliced
2 Tbsp 7-up or lemonade mixed in to 3 sliced bananas
STABILIZED WHIPPED CREAM FOR TOP OF PIE
1 tsp gelatin, unflavoured
4 tsp cold water
1 c fresh heavy whipping cream
1/4 c sifted icing sugar (confectioners' sugar)
FOR DECORATION ON TOP
chocolate sprinkles

Steps:

  • 1. First, make the base by melting the butter and pouring it onto the crumbled digestive biscuit.
  • 2. Stir well.
  • 3. Press into a 8-inch loose bottom spring back base tin.
  • 4. Leave to chill in the fridge until you make the caramel filling.
  • 5. To make the caramel sauce, melt over medium heat in a pot with butter, syrup, sugar, and the contents of the evaporated milk.
  • 6. Stirring continuously, use a wooden spoon to clean the sides of the saucepan. When the butter has melted and the mixture is bubbling slowly but steadily, start timing 10 to 12 minutes as caramel can burn easily.
  • 7. Stir into the corners and all around the bottom steadily. When the mixture has coloured slightly and started to thickened remove from heat. Leave to cool a little.
  • 8. In a small bowl, slice the bananas.
  • 9. Pour over the top a little lemonade or lemon-lime soda so the bananas keep their yellowish colour.
  • 10. To make the cream, in a small pot combine gelatin and cold water let stand until it thickens.
  • 11. Place over a low heat stirring constantly just until the gelatin dissolves. Remove from the heat and let cool (do not allow to set).
  • 12. Whip the fresh heavy cream with the sifted icing sugar with a hand-held electric mixer until thick.
  • 13. Now, slowing beating, add the cooled gelatin to your whipping cream.
  • 14. Add to your digestive base the caramel sauce.
  • 15. Then the sliced bananas spreading them out evenly.
  • 16. Add to that the whipped cream. Try to make a swirl effect just for decoration with your cream.
  • 17. Just sprinkle some chocolate sprinkles over the top of the banoffee pie.

It is a graham cracker crust pie filled with three layers: bottom layer of velvety toffee, middle layer of sliced bananas and topped with whipped cream sprinkled with cocoa powder or luscious chocolate shavings. This is different from most Banoffee Pie recipes because it is completely from scratch. It doesn't use canned sweetened condensed milk to make the toffee filling (also referred to as dulce de leche). Making the toffee filling is very time-consuming but well worth the effort. If you are looking for a delectable completely homemade treat, this is certainly the recipe for you.

Steps:

  • Dulce de Leche Filling:.
  • Place all dulce de leche ingredients in a large saucepan over medium heat.
  • Stirring constantly, bring to a slow boil.
  • Reduce heat to low and simmer for 3 1/2 - 4 hours, stirring and scraping the sides of the pan frequently until reduced by half. It should leave a thick coating on your spoon.
  • Remove from heat and cool to room temperature. As it cools, it will firm up and resemble a pudding pie filling.
  • Pie Crust:.
  • Preheat oven to 350°F.
  • In a medium bowl, stir together graham cracker crumbs, sugar and butter.
  • Press evenly into the bottom and sides of a 9-inch pie plate.
  • Bake for 10-12 minutes or until lightly browned and firm.
  • Place on a wire rack and cool until room temperature.
  • Pie Filling & Topping:.
  • Once the dulce de leche has cooled, pour into pie crust.
  • Arrange banana slices over filling.
  • In a large mixing bowl, whip heavy cream, powdered sugar and vanilla until stiff peaks form. Pour over banana slices.
  • To garnish, dust lightly with cocoa powder OR with chocolate shavings.
  • Chill for 2 hours, serve and enjoy!

I gather there is a bit of controversy in England over Banoffi/Banoffee pie ... the controversy swirling around where it came from, etc. Apparently most of the credit is claimed by Nigel Mackenzie of the Hungry Monk in Sussex; however, on Ian Dowding's web site, there is a slightly different story. Mr. Dowding was the head chef at the Hungry Monk, and concludes that they didn't invent it in the strict sense of "invention," but helped it evolve. (It's an interesting story; you can read it at http://www.iandowding.co.uk.) In any event, this is Mr. Dowding's recipe for what he believes is the best version of Banoffi pie. Note that the long prep time includes time to make the toffee/caramel by boiling the cans of sweetened condensed milk.

9 ounces flour (Mr. Dowding says "plain flour," which I interpret as "all-purpose flour" in the U.S.)
1 ounce icing sugar
4 1/2 ounces butter
1 egg
1 egg yolk
2 (5 ounce) cans sweetened condensed milk
5 -6 bananas, ripe
3/4 pint heavy cream
2 teaspoons caster sugar
1/8 teaspoon instant coffee
1/4 teaspoon ground coffee

Steps:

  • Make toffee: (Note that these are my directions for making toffee; Mr. Dowding presents an oven method.) Remove labels from two cans of sweetened condensed milk. (Note that it MUST be sweetened condensed milk, NOT evaporated milk!).
  • Fill a large stockpot with water and bring to a boil. (You want the water to be a good 4-6 inches over the tops of the cans.) Drop the cans into the boiling water and boil for 2-1/2 hours.
  • Note that it is EXTREMELY important to keep track of the water, and to make certain that the cans stay covered. If the water boils below the tops of the cans, the cans may overheat and eventually explode. If you keep the cans covered with water and pay attention, this is not a dangerous thing to do -- just don't take a nap, go outside, or get involved in a long phone conversation. Stay in the kitchen and you'll be fine!
  • When you're done boiling the cans, turn the heat off and let the water cool a bit. I place the stockpot in the sink and start running cool, then cold, water into the stockpot, so the transition from boiling water to cool water is slow and steady. When the cans are completely cool to the touch, it's safe to open them. Do NOT open the cans when they're hot, to avoid being splattered by hot caramel.
  • Make pastry: Place flour and sugar in a bowl. Cut the butter into cubes and cut into the flour mixture until it appears like fine bread crumbs.
  • Work in the egg and egg yolk to form a paste.
  • Chill dough for half an hour. Roll out pastry and line a 1" deep springform pan.
  • Prick the pie crust, then line with parchment paper and weigh down with pie weights or dried legumes.
  • Cook at 350 for fifteen minutes, then remove from oven and remove the parchment paper and pie weights.
  • Return the pie crust to the oven and cook until it is evenly golden. (Mr. Dowding does not give a time estimate.) Remove from oven and cool.
  • Assemble pie:.
  • Spread caramel/toffee over cooled pie crust.
  • Peel and split the bananas lengthwise. Arrange them on top of the coffee so that the curve of the banana fits the curve of the pie crust.
  • Whip the cream, instant coffee, and caster sugar until it holds its shape (soft whip).
  • Spread the cream over the bananas, up to the edge of the pie crust. Sprinkle very lightly with ground coffee.
