3/4 cup (1 1/2 sticks) unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups sugar
3 large eggs
3 cups mashed medium very ripe bananas (about 6)
1 cup chopped toasted walnuts or chocolate chips (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch (2-quart) loaf pan; set aside. In a medium bowl, whisk together flour, baking powder, salt, and baking soda; set aside.
  • In the bowl of an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. With mixer on low speed, add flour mixture in three additions, alternating with two additions of banana; mix until just combined. Stir in walnuts, if desired, by hand.
  • Pour batter into prepared pan. Bake until a toothpick inserted in center comes out with only a few moist crumbs attached, 60 to 70 minutes. Let cool 10 minutes in pan, then turn out of pan and let cool completely on a wire rack.

Yield Cuts into 8 slices

Number Of Ingredients 8

100g softened butter, plus a little extra for greasing
140g caster sugar
1 beaten egg
225g plain flour
2 tsp baking powder
4 very ripe bananas
85g chopped walnuts
50ml milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.
  • In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
  • Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. Serve in thick slices topped with vanilla ice cream and drizzled with a little Easy chocolate sauce (see recipe, below).

4 ripe bananas, peeled
250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sweet butter (softened)
1 cup sugar
2 eggs, rt
1 teaspoon vanilla extract
1 cup ripened banana (approx.2/3 Bananas depending on size)
1/2 cup sour cream
1/2 cup chopped walnuts
1/2 cup cranberries

Steps:

  • Preheat Oven to 325°F.
  • Grease 10x5 Loaf Pan. (smaller may cause spillage in oven by batter overflowing).
  • Sift Flour Baking Powder, Baking Soda, and Salt in Bowl (set aside).
  • Mash Bananas, add sour cream then stir to blend (set aside).
  • Cream butter with mixer (I use my Kitchenaid Mixer), add Sugar, then add eggs one at a time, beating well, stir in Vanilla Extract.
  • Add Banana/sour cream mixture~ continue to beat 3 minutes.
  • Add Flour Mixture into mixture, continue to beat 3 minutes, then stir in cranberries and walnuts.
  • Pour mixture into Loaf Pan and Bake at 325 F (yes this low OT is correct) between 60-75 minutes ~ test with toothpick in center.
  • Cool 15 minutes; remove from pan. Slice ~ Serve ~ Enjoy! Can wrap tightly and store in refrigerator for immediate use or freeze.

This is made in a quick bread/cake cycle - it is not a yeast bread. I have not tried it, posted in response to a request.

1/3 cup buttermilk, plus
1 tablespoon buttermilk, 80-90 deg
1/2 cup butter, cut into 1/2 in. pieces
2 large eggs
1 teaspoon vanilla extract
1 1/4 cups mashed bananas
3/4 teaspoon salt
1 cup sugar
2 cups all-purpose flour
3/4 teaspoon baking powder
1 teaspoon baking soda
2/3 cup chopped walnuts

Steps:

  • All ingredients other than buttermilk should be at room temperature.
  • Place ingredients in order indicated in pan. Select quick bread/cake cycle and medium crust and start machine.
  • After batter has been mixed for 4 minutes, stir sides and bottom of pan with spatula to ensure complete mixing. Allow to continue mixing. If your machine permits pausing, remove kneading paddle before baking. Continue to conclusion of cycle.
  • Remove bread from pan and transfer to wire rack to cool. Bread slices best when allowed to cool.

1/2 cup soft brown sugar
1 orange, zest of, grated
2 eggs
1 cup dates, chopped
3 large bananas, mashed
1 1/2 cups wholemeal self-rising flour
1/3 cup orange juice
1/2 cup walnuts, chopped

Steps:

  • Preheat the oven to a moderate heat.
  • Grease and line a 20cm x 12cm loaf pan, with baking paper.
  • Beat butter and sugar together until creamy. Add orange zest with one of the eggs and beat until smooth. Add remaining egg and beat to a smooth batter.
  • Fold in the dates, bananas, flour, orange juice and walnuts and fold in well.
  • Spoon the batter into prepared loaf pan and bake for about 45 minutes or until cooked when tested with a scewer.
  • Cool loaf in pan for about 5 minutes, then turn out to a rack to cool completely.

2/3 c butter
1 1/2 c white and brown sugar mixed
2 3/4 c sifted flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 c sour cream
1 c chopped walnuts
2 eggs
1 1/2 banana

Steps:

  • 1. Cream butter and sugar till light and fluffy. Add eggs and banana,beat well.
  • 2. Sift together flour, powders and salt.Add alternately with sour cream stirring just to blend.( I add mini chocolate chips and coconut )
  • 3. Grease and flour pans on BOTTOM ONLY.Spoon batter into two medium size bread pans.(4 1/2 x 8 1/2 )or one large bread pan.
  • 4. Bake @ 350 degrees for 50- 60 min. Cool 20 min then remove from pans. ENJOY

1/2 cup shortening

Steps:

  • Mix sugar and shortening until light and fluffy.
  • Add egg one at a time, mixing to incorporate well.
  • Add mashed banana.
  • Mix all dry ingredients together and add to wet ingredients 1/3 at a time.
  • Add vanilla.
  • Spoon into well-greased loaf pan 5" x 13".

Number Of Ingredients 12

1 1/2 c flour, unbleached
1 c brown sugar
1 stick butter, softened at room temperature
2 eggs
1 t salt
1 t baking soda
1 1/4 c mashed ripe bananas
1 1/4 t vanilla extract (do not use vanilla flavoring)
1/2 c sour cream or 1/2 c vanilla or plain yogurt
1/2 c crushed walnuts
1 can white frosting (white, not vanilla)
banana extract

Steps:

  • 1. Using mixer cream butter till fluffy. Add sugar to this and blend well. Add eggs one at a time mixing well in between each egg.
  • 2. In seperate bowl sift flour, baking soda and salt.
  • 3. Add a third of the dry mix and a third of the mashed banana to the creamed butter mix, blending well. then repeat this until all dry mix and bananas are blended into creamed butter mixture.
  • 4. Now add your vanilla and blend in. Then blend in sour cream or yogurt (i used sour cream) gently until well mixed. Add cinnamon and blend into batter. Now fold in walnuts.
  • 5. Using a non stick loaf pan sprayed with non stick cooking spray (or lined with parchment paper) Pour batter into pan.
  • 6. Place pan into preheated 350 degree oven. Bake for about an hour (checking after 45 minutes by inserting toothpick into center, if it comes out clean it is done. Top of bread should be firm not jiggly)
  • 7. Allow to cool on wire rack.
  • 8. Invert onto plate or tray and allow to cool completely. (you may have to run a butter knife gently around pan to loosen, and/or tap gently on bottom. make sure cake is cooled so it doesnt fall apart when inverted)
  • 9. Empty 1/2 to 3/4 can of white icing into a small bowl. Add banana extract and stir until completely blended. taste frosting and add additional extract until it is the flavor you desire. Frost top of cake with banana frosting. (it may drizzle down sides)
  • 10. Enjoy with a cup of coffee, iced coffee or maybe a scoop of ice cream (i like banana or vanilla)
