SOUR CREAM BANANA BARS
This recipe has been around FOREVER in my family. When I was growing up I don't think the pan ever had the chance to cool before they were all gone! They're sooo moist and wonderful! Note: you can make these in a 9x13 pan, they'll just be more like banana cake :) Make sure to check for "done-ness" in the center with a toothpick before removing from the oven. Steps:
- Grease and flour jelly roll pan.
- Cream butter and sugar, add sour cream and eggs and beat for 1 minute. Add bananas and vanilla - mix well. Beat in flour, salt, and soda on medium for 1 minute. Stir in nuts if desired.
- Pour and spread dough in pan.
- Bake at 375 degrees for 20-25 minutes.
- Let cool for 10-15 minutes, then frost with Brown Butter Frosting.

Steps:
- Preheat oven to 375 degrees F.
- Grease and flour a 15-1/2 x 10-1/2 x 1 inch jelly roll pan.
- In bowl of a stand mixer combine sugar, sour cream, butter and eggs on low speed for 1 minute; scrape the sides of the bowl once or twice to ensure that the ingredients are all combined.
- Add the bananas and vanilla and beat for 30 seconds on low speed.
- Add the flour, salt and baking soda and beat until combined; medium speed, scraping bowl when necessary, for about 1 minute.
- Fold in the nuts, if desired.
- Spread dough in prepared pan; use a spatula to get the dough evenly spread on the pan.
- Bake for 20 to 25 minutes or until light brown.
- Cool in the pan.
- Prepare the frosting by heating the butter in a medium size saucepan over medium heat until slightly frothy and just brown but not burned; remove from heat.
- Mix in the powdered sugar, vanilla and milk; whisk until smooth and fluffy.
- Spread frosting on cooled cake.
- Cut into 2 x 2 inch bars.

- Heat oven to 375ºF.
- Beat 1/2 cup butter, granulated sugar and brown sugar in large bowl with mixer until light and fluffy. Add eggs, bananas, sour cream and 1-1/2 tsp. vanilla; mix well. Mix flour and baking soda until blended. Gradually add to banana mixture, mixing well after each addition.
- Pour into 15x10x1-inch pan sprayed with cooking spray.
- Bake 20 to 25 min. or until toothpick inserted in center comes out clean. Cool completely.
- Beat cream cheese, remaining butter and vanilla in separate large bowl with mixer until blended. Gradually beat in powdered sugar; spread over dessert. Sprinkle with nuts.

- 1. Preheat oven to 375-degrees. Grease and flour a jelly roll pan.
- 2. Mix sugar, sour cream, butter and eggs in large mixer bowl on low speed, scraping sides occasionally for 1 minute.
- 3. Beat in bananas and vanilla on low speed for 30 seconds.
- 4. Add flour, salt and baking soda on medium speed, scraping bowl occasionally for 1 minute. Stir in nuts if using. (I like to add them to the top after frosting bars)
- 5. Spread batter into pan. Bake until a light brown color, 20-25 minutes.
- 6. Cool and frost with Browned Butter Frosting. Cut into bars, about 2x1 1/2 inches.
- 7. BROWNED BUTTER FROSTING: Heat butter over medium hear until delicate brown. Remove pan from heat and mix in powdered sugar and milk until smooth and of spreading consistency.
- 8. Butter is the only option for this frosting. Margarine will not give it the depth of flavor that browned butter imparts.
BANANA SOUR CREAM BARS

- Preheat oven to 350-degrees.
- Prepare jelly roll pan with non-stick spray.
- In a separate bowl, combine Flour, Baking Soda, and Salt. Set aside.
- Mix Sugar, Eggs, Sour Cream and Butter in mixing bowl on low speed for 1 minute, occasionally scraping bowl.
- Mix in broken Bananas and Vanilla on low speed about 1 minute.
- Add flour mixture a spoonful at a time, mixing in between.
- Stir in 1/2 cup chopped Walnuts (optional).
- Spread cake batter in jelly roll pan.
- Bake 20-25 minutes at 350-degrees or until lightly browned.
- Let cool.
- Frost with canned Cream Cheese Frosting (or simple powdered sugar glaze).
