MINI BANANA BREAD LOAVES
Delicious recipe I created when I had no eggs but wanted banana loaf for my new mini loaf pans!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Combine flours, oats, baking soda, cinnamon, and salt in a medium bowl. Mash bananas into the dry ingredients.
- Combine sugars and margarine in a large bowl; beat with an electric mixer until creamy. Mix in milk and vanilla extract. Add the flour mixture and raisins; mix well. Pour batter into 4 mini silicone loaf pans. Place loaf pans on a baking sheet.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.

BANANA CINNAMON MINI LOAVES
Old recipe I found in my homemade cookbook. I made two variations and thought of a lot more I could make with this recipe. Light and so amazing. Surprised the employees at my husbands work place. They all raved and were so thankful for a nice treat.

Steps:
- 1. Heat oven to 350 F. Grease 4 to 5 mini loaf pans.
- 2. Combine all ingredients except walnuts. Beat on low with a mixer, scrap. Turn mixer to medium high and mix for 2 minutes. Pour into pans.
- 3. Bake 30 minutes or until toothpick comes out clean.
- 4. Variations: chocolate chips, pecans, chocolate cake mix This also can be made in a bundt pan. Adjust the baking time to 43-53 minutes. If you want to make larger loaves, adjust the time to 40-45 minutes, then ck.
- 5. Glaze: 1/2 cup of can frosting 2-3 tsp of milk 1/4 tsp cinnamon
BANANA-WALNUT MINI LOAVES

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas. , Combine the flour, cardamom, baking soda, cinnamon and nutmeg; gradually add to banana mixture just until moistened. Fold in walnuts. , Pour into six greased 4-1/2x2-1/2x1-1/2-in. loaf pans. Bake at 350° for 22-26 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , In a small bowl, combine the spread ingredients. Serve with bread. Refrigerate leftovers.

Steps:
- Preheat oven to 350.
- Sift together flour, baking powder, & salt. Set aside.
- Beat shortening until creamy, then add sugar & eggs. Beat until blended, then add bananas & blend again. Add flour mixture & nuts (if wanted) & blend well.
- Fill mini loaf pans about 3/4 full. Bake 1 hour.
