VEGAN BANANA BREAD

Vegan Banana Bread image

This banana bread is eggless and dairy-free, but you'll hardly notice the difference. The crumb is moist and tender, and the flavor gets better each day (if it lasts!).

Provided by Food Network Kitchen

Time 3h50m

Yield 1 loaf (8 servings)

Number Of Ingredients 9

Cooking spray
1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
3 very ripe medium bananas, mashed (about 1 1/4 cups)
3/4 cup sugar
1/2 cup plain soy milk yogurt
1/2 cup vegetable oil
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom and two long sides of a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on each long side, and lightly coat with cooking spray.
  • Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's OK if there are lumps). Transfer the batter to the prepared loaf pan and bake until a tester inserted in the center comes out clean, 55 to 60 minutes; tent the loaf with foil if it is browning too quickly. Cool the loaf in the pan on a wire rack for 30 minutes, then lift it from the pan by the parchment overhangs and cool completely on the rack. Store the loaf in an airtight container at room temperature for up to 5 days.

VEGAN BANANA BREAD

Vegan Banana Bread image

Vegan baking can be a little bit like Goldilocks in the classic fairy tale. Home cooks can find one recipe to be too dry, the next too moist; another one can be too sweet, but the next is not sweet enough. Happy ending alert: This vegan banana nut bread recipe is "just right" in every way.

Time 1h

Number Of Ingredients 14

For the wet ingredients:
3 medium to large extra ripe bananas, mashed (about 1 ⅓ cup mashed banana)
⅓ cup melted and cooled coconut oil
½ cup packed brown sugar (or coconut sugar)
½ tablespoon vanilla extract
2 tablespoons dairy free milk of choice
For the dry ingredients:
1 ¾ cup all purpose flour (or sub whole wheat pastry flour, white whole wheat flour or chickpea flour for a GF option)
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
Optional add-ins:
½ cup chocolate chips
½ cup chopped walnuts (or pecans)

Steps:

  • Preheat your oven to 350 degrees F. Line a 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking. If you use a larger loaf pan, such as a 9x5, please know your bread will be much thinner and will take less time to cook.
  • In a large bowl mix together the mashed banana, brown sugar, coconut oil, vanilla extract and milk to a bowl until well combined.
  • In a large bowl, whisk together the dry ingredients: flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix; it's totally fine if there are some lumps of banana, etc. Feel free to fold in ½ cup chopped walnuts or ½ cup chocolate chips (or both!) if you'd like.
  • Add banana bread batter into the prepared pan. Bake for 40-50 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 5-10 minutes, then remove and transfer to a wire rack to finish cooling.
  • Once bread is cool, cut into 10 slices. Serve with nut butter spread on top for a healthy snack or breakfast on the go.

FAT FREE BANANA BREAD (VEGAN)

Fat Free Banana Bread (Vegan) image

Found this recipe on VegFamily. This banana bread is so moist. Be very careful to not over mix....over mixing will result in a dry bread.

Categories     Quick Breads

Time 1h15m

Yield 1 loaf

Number Of Ingredients 8

5 ripe bananas
1 cup vegan sugar (Florida Crystals)
1 teaspoon vanilla
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 cup water

Steps:

  • In a large bowl mash bananas with sugar and vanilla until combined and creamy. Then mix in the water. (I just put these ingredients in my VitaMix Blender and it's much easier).
  • In a smaller bowl, sift together the flour, baking soda, baking powder and cinnamon.
  • Add the dry to wet and stir until just mixed . You don't want to over mix or the bread will be dry. (So important to stir just until mixed.).
  • Pour batter into sprayed loaf pan and bake in preheated 350 degree F oven for one hour. Your house will smell so good you will be temped to take it out a few minutes earlier but don't or it won't be done on the inside.
