1 lb medium shrimp
1 lb crabmeat
2 lbs boneless haddock
12 ounces shredded mozzarella cheese
2 1/2 cups Ritz cracker crumbs
1/2 cup butter (melted)
1 teaspoon garlic powder
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a well-buttered 9"x13" baking dish, layer seafood in the order listed; cover with cheese. Mix together the Ritz cracker crumbs, butter, Worcestershire sauce and garlic powder; spread over the cheese, covering top.
  • Bake uncovered at 350 degrees for 45 minutes. Serve the casserole with a wedge of lemon.

1 large yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can tomatoes, chopped, juice from can included
1/4 cup dry white wine
1 teaspoon sugar
1/2 teaspoon dried oregano

fresh ground black pepper
1/2 cup orzo pasta
1 lb halibut, cut into bite-size pieces
3/4 lb large shrimp, peeled and deveined
3 tablespoons chopped fresh parsley

I love my seafood - and here's a good way to make it! I've enjoyed this casserole since I was a non-seafood fan as a child. This is my mom's recipe, but modified (I omitted the butter - not necessary). I used the following spices: jarred roasted minced garlic, red pepper, fresh ground black pepper, garlic powder, onion powder, italian seasoning, lemon zest, and one of those barbeque spice mixes that contains cumin. Yummy! Prep time does not include thaw time.

1 lb frozen scallops
1 lb frozen shrimp
1 lb imitation crabmeat
1 lemon, juice of
spices, of your choice

Steps:

  • Preheat oven to 350 degrees F.
  • Thaw and wash scallops.
  • Put in casserole dish with 1/2 lemon juice and 1/2 spices.
  • For extra lemon zing: also put in some lemon zest and feel free to put in the used lemon wedges.
  • Bake for 20 minutes or until cooked.
  • Meanwhile, thaw and/or wash the shrimp and crabmeat.
  • Toss in spices.
  • When scallops are done, put in the rest of the remaining ingredients.
  • Bake for 10 minutes.
  • Serve over brown rice or whole wheat pasta, and accompany with veggies (steamed broccoli matches well).

8 ounces firm white non-oily fish (such as haddock), cleaned & skinned
1 pound scallops, side muscle removed
1 pound large shrimp, cleaned & deveined
4 cloves garlic cloves, minced
1/2 cup heavy cream
1/2 cup Swiss cheese, shredded
2 tablespoons Parmesan cheese, grated
1 dash Paprika
1 dash Sea salt & pepper

Steps:

  • Preheat oven to 375 degrees.
  • Spray a glass or ceramic baking dish with cooking spray (9x13 size works well)
  • Cut fish into 1 1/2 inch chunks and lay in pan. Add scallops and shrimp. Sprinkle with salt & pepper to taste.
  • Sprinkle mince garlic on seafood.
  • Pour heavy cream over the seafood and add Swiss cheese.
  • Sprinkle with paprika and Parmesan cheese.
  • Bake at 375 for 15-20 minutes, being careful to not over bake so the shrimp doesn't overcook.

1 cup mayonnaise
1/2 cup chopped green bell pepper
1/4 cup finely chopped onion
1 1/2 cups finely chopped celery

2 cups coarsely crushed potato chips

2 tablespoon Butter
1 medium onion; finely chopped
1 stalk celery; finely chopped
1 cup mushroom; thinly sliced
2 tablespoon flour
2 teaspoon creole seasoning
1/2 teaspoon curry powder
1 cup parmesan, divided; grated
2 cup half and half
3 pound seafood, shrimp, crab, scallops
1/2 cup bread crumbs
1 tablespoon olive oil

Steps:

  • Preheat oven to 350°F. In a large skillet, melt butter over medium heat. Add onions, celery and mushrooms; cook until vegetables are tender Stir in flour and cook for 2 minutes, stirring constantly. Stir in Creole seasoning, curry powder and half the cheese. Stir in half and half and cook for five minutes while stirring or until thickened. Remove from heat and stir in seafood and capers. Spoon into a large ovenproof dish. Spriknkle with bread crumbs and remaining cheese; drizzle with oil. Bake for 30 minutes or until crumbs are golden brown. Tip: Can use leftover to make seafood pot pie. Fill a pie plate with seafood casserole, top with puff pastry and brush with beaten egg. Bake until crust is golden brown and heated through.
