Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

2 tablespoons butter
1 onion, diced
1 pinch seasoned salt, or to taste
6 thin bone-in pork chops
1 (14 ounce) can beef consomme
10 fluid ounces water
1 ½ cups white rice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion until golden brown, 15 to 20 minutes. Transfer onion to a plate.
  • Sprinkle seasoned salt over all sides of each pork chop. Place pork chops in the same large skillet and cook until browned, 1 to 2 minutes per side.
  • Mix beef consomme and water together in a 9x13-inch baking dish. Pour rice into the broth mixture; add caramelized onion. Gently arrange pork chops over rice in a single layer. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until pork is cooked through, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

1 (10 3/4 ounce) can cream of mushroom soup
1 1/2 cups water
1 cup long grain rice (uncooked)
1/4 onion, sliced
1/4 teaspoon pepper
3 -4 pork chops
salt and pepper (to taste)

Steps:

  • Stir together soup, water, rice and 1/4 teaspoons pepper in a 3 quart casserole.
  • Add onions.
  • Salt and pepper chops and place on top of rice.
  • Cover and bake at 350* for 1 1/4 hours or until meat is done and liquid is absorbed.
  • Remove from oven and let rest 5 minutes.

2 pork chops (thin chops are best)
1 (1 ounce) package brown gravy mix
1 (4 -6 ounce) package 10-minute Success rice
1/2 cup flour
pepper
garlic salt
vegetable oil (about 1/4 inch deep in pan)
water

Steps:

  • Preheat oven to 375°F.
  • Pour vegetable oil into pan about 1/4-1/2 inch deep, and place on medium high heated burner.
  • Season pork chops with garlic salt and pepper.
  • Cover pork chops on both sides with FLOUR.
  • When oil is hot, brown pork chops on both sides.
  • Place pork chops in baking dish, and cover with water (the amount of water decides how much gravy you will have, so you decide. I suggest about 1 1/2 inches deep in an 8x11 1/2 inch pan). Place pan in oven and bake at 375°F for about 25 minutes or until pork chops are no longer pink inside.
  • Take pork chops out of the oven and pour the brown gravy mix into water.
  • Return pork chops to the over and bake for an additional 10 minutes.
  • Now is the time to make the rice.
  • Prepare according to package directions.
  • Take pork chops out of the oven and serve with gravy over rice.
  • ENJOY!

This is an updated version of DH's bachelor days recipe, that I posted in 2005. When I first met him, the only spices he owned was Tony's, garlic salt and salt and pepper. This is the recipe that has evolved from the original. It's still a basic recipe...just a lot more flavor. As with all my recipes, feel free to change it up to suit your family's tastes. Note: You can season the rice with salt and pepper. We do it at the table.

3 -4 pork chops or 4 chicken thighs
1 tablespoon butter
1 tablespoon canola oil
1 (10 3/4 ounce) can cream of mushroom soup (I use Healthy Request)
1 (14 1/2 ounce) can low sodium chicken broth
1 cup white rice (uncooked)
1/2 cup onion, coarse chop
1/4 teaspoon seasoning salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon paprika

Steps:

  • Season pork chops with pepper, seasoning salt and garlic powder.
  • In a skillet, sauté onions in butter and oil until limp.
  • Remove onions to a 2 quart casserole.
  • Quick sear pork chops in same skillet.
  • Remove chops to a platter.
  • De-glaze pan with a little chicken broth and add to casserole.
  • Stir in in rest of the broth along with rice and soup.
  • Place chops on top and sprinkle with paprika.
  • Cover and bake at 350* for 1 1/2 hours until rice is done and liquid is absorbed (check at 1 1/4 hours).

1 medium onion, sliced half inch thick slices
2 cups Stove Top Stuffing for Pork
1 cup Minute Rice
2 teaspoon s garlic powder
2 teaspoon s Italian seasoning
Salt and pepper
6 boneless pork chops
1 packet Shake 'N Bake Pork Seasoned Coating Mix
2 Tablespoons margarine

Steps:

  • Spray large baking dish with non stick spray. Preheat oven to 350°F. Lay sliced onions along bottom of pan. Shake stuffing over onion slices evenly all over, then shake rice evenly over stuffing. You are making layers. Add seasoning over evenly and dab butter evenly all over.
  • Lay pork chops on top of rice. Slowly pour hot water over top of everything until water level comes to top of pork chops almost covering them. Shake the Shake 'N Bake covering pork chops and layers of mixture. Cover with foil.
  • Bake for 1 1/2 hours. Uncover last 10 minutes.

2 tablespoons salad oil
1 1/2 cups long-grain rice
1 can mushroom
1 can beef consomme
1 1/2 cans water, soup cans
1 green pepper, sliced
1 onion, sliced
1 tomatoes, sliced

Steps:

  • Season meat, saute in oil until well browned.
  • Combine rice, mushrooms, consomme and water; place in a lightly greased casserole dish.
  • Arrange chops on top.
  • Place a slice of pepper, onion and tomato on top of each chop.
  • Cover tightly.
  • Bake at 350 degrees for 1 hour and 30 minutes.
