1 1/2 cups steel-cut oats
1/2 teaspoon fine salt
2 tablespoons whole milk
1 teaspoon pure vanilla extract
2 firm-ripe bananas, sliced 1/4 inch thick on the diagonal
3 tablespoons packed dark-brown sugar, whisked to remove lumps
1/4 cup pecans, roughly chopped and toasted

Steps:

  • In a medium pot, bring 4 1/2 cups water to a boil. Stir in oats and salt and cook 1 minute. Let cool, cover, and refrigerate overnight.
  • Bring oatmeal to a simmer over medium-high. Cook until tender, about 10 minutes. Stir in milk and vanilla. Transfer to a 9-inch pie plate.
  • Heat broiler, with rack 4 inches from heat. Top oatmeal with bananas and brown sugar and broil until bananas are caramelized, 3 to 4 minutes. Sprinkle with pecans to serve.

2 large eggs
3 cups quick-cooking oats
1 can (15 ounces) pumpkin
1 cup 2% milk
3/4 cup packed brown sugar
1/2 cup dried cranberries
1/3 cup butter, melted
1-1/2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 cup chopped pecans
Additional 2% milk and brown sugar

Steps:

  • In a large bowl, combine the first 12 ingredients. Transfer to a greased 11x7-in. baking dish. Refrigerate, covered, 8 hours or overnight., Remove oatmeal from refrigerator 30 minutes before baking. Preheat oven to 350°. Uncover and stir oatmeal; sprinkle with pecans. Bake, uncovered, 30-35 minutes or until a thermometer reads 160°. Serve warm with additional milk and brown sugar.

2 tablespoons cold water
3 ounces sugar
6 ounces butter
8 ounces pinhead oats or 8 ounces rolled porridge oats

1 teaspoon vanilla essence

  • Stew fruit with water and sugar over low heat until the juices run.

1 cup mashed cooked sweet potato (1 medium sweet potato)
1 cup unsweetened almond milk or other milk of your choice
1 large egg
1/4 cup pure maple syrup
2 teaspoons pure vanilla extract
1 1/2 cups rolled oats
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon fine-grain sea salt
1/2 cup chopped raw pecans
2 tablespoons dark brown sugar
2 tablespoons white whole wheat flour or all-purpose flour (or substitute your favorite gluten-free blend)
1 tablespoon coconut oil (Earth Balance butter, or butter, cut into small pieces)

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Grease a standard-sized pie pan or coat with non-stick spray.
  • Add sweet potato to a large bowl. Mash until as smooth as possible. Add milk, egg, maple syrup, and vanilla. Stir with a whisk until well-combined. Add the oats, cinnamon, nutmeg, ginger, and salt. Stir with a wooden spoon until combined. Pour into pie plate and smooth slightly with the spoon.
  • Make the streusel topping. Add the pecans, brown sugar, and flour to a small bowl. Add the coconut oil or butter. Use your fingers to distribute the oil or butter throughout the mix until the butter pieces are approximately sunflower-seed-sized. Distribute topping over the top of the oatmeal mix.
  • Bake until the nuts are toasted and the oatmeal is no longer jiggly, about 35 minutes.
  • Serve with an extra drizzle of maple syrup if desired. You can also add a dollop of coconut whipping cream or whipping cream and/or a sprinkle of cinnamon if you wish.

1/2 cup chopped pecans
1 1/2 cups oatmeal
1/2 tablespoon baking powder

Steps:

  • Preheat oven to 350 degrees.
  • Combine oil, sugar, egg, and pecans in a medium bowl. Add oatmeal, baking powder and milk and stir until blended.

3 tablespoons finely chopped pecans
1/4 cup plus 1 tablespoon raw sugar
1 tablespoon arrowroot or cornstarch
3 tablespoons unsalted butter
1 1/2 cups old-fashioned rolled oats
1 tsp baking powder
1/2 tsp ground cinnamon
6 medjool dates, pitted and chopped
3/4 cup milk
1 large egg
2 fresh figs, thinly sliced

Steps:

  • Preheat the oven to 350°F. Combine the chopped pecans, 1 tablepoon of the raw sugar and the arrowroot in a small bowl. Place the butter in a deep 8-inch pie dish and put it into the oven for 5 minutes, just until the butter has melted. Swirl the melted butter around the pan to grease it, then scoop out 2 teaspoons of the butter and add to the pecan mixture. Stir the pecan mixture together and then set aside. In a large bowl combine the oats, baking powder, cinnamon, chopped dates and remaining 1/4 cup of raw sugar. Add the egg, milk and remaining melted butter to the bowl then stir together well. Pour the mixture into the buttered pie dish and decorate with the sliced figs. Sprinkle the pecan streusel mixture over top. Bake for 25 to 30 minutes until browned around the edges and set. Cut into wedges and serve warm or room temperature with yogurt and fresh fruit.
