Strawberry Cheesecake Popsicles® image

Creamy (non-dairy) strawberry frozen pops with a pretzel crumb base make a refreshing snack.

⅜ cup Snack Factory® Gluten Free Original Pretzel Crisps® Minis
3 ¾ teaspoons vegetable oil
1 ½ cups fresh strawberries
4 ounces non-dairy cream cheese
⅛ cup confectioners' sugar
⅛ cup plain coconut milk yogurt
3 tablespoons almond (or soy or coconut) milk

Steps:

  • In a food processor, pulse Gluten Free Original Pretzel Crisps® Minis to a fine crumb consistency. Mix in a bowl with vegetable oil and set aside.
  • Place strawberries, cream cheese, confectioners' sugar, yogurt, and almond milk into a food processor. Mix on low until strawberries are broken down and ingredients are combined and creamy.
  • Pour strawberry mixture into a Popsicle® mold or any silicone mold. Carefully press Pretzel Crisp® crumbs on top to cover. Stick a Popsicle® stick or decorative straw into each mold and freeze until hard.
