I got this recipe from the Mount Joy Mennonite Church cookbook. Very good! Mount Joy is in Lancaster County, PA. Prep time does not include overnight soaking of beans. Cook time is approximate.

2 lbs dried lima beans
1 lb bacon, cut up
1/2 cup molasses
2 cups ketchup
1 lb brown sugar
1 large onion, chopped

Steps:

  • Soak beans overnight.
  • Cook in water until just about half tender; drain.
  • Add other ingredients.
  • Bake in oven until tender, 2 to 3 hours at 350 degrees.

Yield 8 cups, about 10 to 12 servings

Number Of Ingredients 6

2 pounds dried lima beans
1 teaspoon salt
10 ounces ketchup
2 tablespoons brown sugar, or to taste
2 tablespoons dry mustard
1 pound bacon, uncooked

Steps:

  • Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
  • Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
  • Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

1 quart lima beans
1 tablespoon cornstarch
1/4 cup water
1/2 pound bacon
1 tablespoon prepared mustard
3 tablespoons brown sugar
2 tablespoons King Syrup molasses

Steps:

  • Boil beans until soft. Drain off excess water. Combine cornstarch and water and add to beans. Cook until thickened. Fry bacon until crisp. Drain. Crumble and add to beans. Add remaining ingredients. Pour into baking dish. Bake at 350 degrees for 30 minutes.

I love lima beans, so here's one we've adapted and hope to make. Time does not include overnight bean soaking.

1 1/2 cups dried lima beans
1 teaspoon salt
1 lb pork sausage, browned well until crisp
1/4 cup molasses
1/2 cup condensed cream of tomato soup
1/2 cup tomato ketchup
1 teaspoon dry mustard
fresh ground black pepper, to taste
1/8 teaspoon granulated garlic or 1/8 teaspoon garlic powder
1/4 cup hot water

Steps:

  • Soak the beans in lots of water overnight, then drain, rinse, and pick out any bad ones.
  • In a large pot, cover with cold water and add salt. Simmer covered over medium heat for 35 to 45 min until tender (make sure they don't get mushy). The amount of time it takes will depend on how large the beans are.
  • Preheat oven to 350 degrees F.
  • Drain and pour the cooked beans into a well-oiled baking dish.
  • In a bowl, combine the remaining ingredients and stir to combine well. Add to the beans and fold it all together.
  • Bake in a 350 degree F oven for 1 hour.
  • Note: onions would also go well in this recipe.

1 lb dried lima beans
3 teaspoons salt
3/4 cup butter (Butter is best, but often I use half butter and half oleo) or 3/4 cup oleo (Butter is best, but often I use half butter and half oleo)
1/2 cup dark brown sugar
1 teaspoon dry mustard
1 tablespoon molasses
1 cup sour cream

Steps:

  • Soak Beans overnight, with plenty of water above the beans. They soak it up!
  • In the morning, drain the beans, cover with water, add 1 tsp salt and cook until slightly tender -- 20-30 minutes. However, you must watch these babies, because they have a big tendency to boil over!Just bring them to a boil (watching them), then lower the heat --- and still watch them!
  • After the beans are cooked, drain again and rinse them under hot water, and place them in a lightly sprayed or greased (oleo) casserole dish.
  • Dab Butter over beans; mix "lightly"! or they get squishy.
  • Stir in Molasses.
  • Finally, pour in sour cream and mix "tenderly".
  • Bake at 350 for one hour. (again, keep an eye on them, I don't think I usually bake them for and entire hour).

These are the best! Not being a Fan of limas I just adore these. It may be the hot cheese or the sweetness of the brown sugar. I don't know but it's just too GOOD! It's a great side or serve over rice for a main meal. You can also skip the bacon if you're not into meat! You can add liquid smoke!

1 lb frozen lima beans, you can do a mixture of beans as I did in the picture limas and red beans
1/3 lb bacon
1 large chopped onion
2 -4 minced garlic cloves
2 tablespoons olive oil
1 tablespoon chili powder
1 (28 ounce) can diced tomatoes with garlic (Contadina)
1 1/2 cups shredded monterey jalapeno jack cheese (you can skip the jalapenos if you like it mild)
1 teaspoon Worcestershire sauce (If making this recipe vegetarian, use vegetarian Worcestershire sauce.)
1 teaspoon soy sauce
2 teaspoons honey mustard
1/4 cup dark brown sugar
1 teaspoon salt
pepper

Steps:

  • In a casserole dish (I use cast iron pot) brown bacon till crisp.
  • Set bacon aside.
  • Add oil to bacon fat and fry onions and garlic about 5 minutes.
  • Crumble bacon.
  • Add all the rest of the ingredients to pot.
  • Bake at 350°F for 2 hours.

1 1b. large lima beans
1 cup dark brown sugar
1/2 cup catsup
onion flakes
parsley flakes

Steps:

  • 1. Soak limas in a large pot of water overnight
  • 2. Cook in water the next day for 1 hour till tender
  • 3. Drain some of the water, not all and pour limas into a large baking pan
  • 4. Add catsup, brown sugar, dash of onion flakes, and a dash of parsley flakes.
  • 5. Brown pork chops and put into limas

1 lb dried lima beans
6 cups water
4 slices bacon
2 lbs round steaks (cut in 1-inch strips)
1 (18 ounce) can tomato juice
1 tablespoon brown sugar, packed
1/2 teaspoon salt (to taste)
1 teaspoon dry mustard
1/2 teaspoon black pepper

Steps:

  • Rinse beans; add 6 cups of water.
  • Bring to a boil; simmer 5 minutes.
  • Remove from heat; let stand, covered, 1 hour.
  • Do not drain.
  • After 1 hour cover, simmer 30 minutes.
  • In Dutch oven, cook bacon until crisp.
  • Drain, reserve drippings.
  • Crumble bacon; set aside.
  • Coat beef with flour.
  • Brown beef in hot drippings, pour off excess fat.
  • Stir in beans and onion.
  • Combine tomato juice, brown sugar, salt, pepper and mustard.
  • Pour over beans and beef mixture.
  • Bake covered in 325°F oven until tender, about 1 1/2 to 2 hours.
  • Serve hot topped with crumbled bacon and grated cheese to taste.

1 1/2 lbs lima beans, fresh from garden
1/2 water
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter
1 tablespoon butter
1 onion, chopped
2 tablespoons ketchup
1 tablespoon pickle relish, sweet
1 cup sour cream
1 pinch basil

Steps:

  • Cook lima beans in 1/2 cup water.
  • Salt and pepper and butter to taste.
  • Cook for 10 to 20 minutes until tender.
  • Meanwhile, heat up 1 tablespoon butter; saute onion until transparent.
  • Stir in tender lima beans. I think you could use canned butter beans here.( i used the dried limas cooked in crockpot and divided into4 different dishes and frozen for later this one must eat 1st cause of the sour cream ).
  • Add ketchup, pickle relish, salt and pepper to taste, sour cream, and a tiny pinch of basil.
  • Turn mixture into a casserole.
  • Bake at 350 degrees Fahrenheit until heated though, 15 minutes.
  • Libby used oven as warmer because everyone was outside working.
