Tossing fresh veggies with Italian salad dressing and roasting them in the oven is a no-fuss way to add a side dish to any dinner.

1 1/2 cups baby-cut carrots (8 oz)
1 1/2 cups fresh whole mushrooms (4 oz)
2 medium onions, cut into 1-inch wedges (2 cups)
1 large red bell pepper, cut into 1-inch pieces (2 cups)
1 medium zucchini, cut lengthwise in half, then cut crosswise into 1-inch slices (1 cup)
3 small red potatoes, cut into fourths (1 cup)
1/2 cup Italian dressing

Steps:

  • Heat oven to 450°F. Generously spray 15x10x1-inch pan with cooking spray. In large bowl, toss vegetables with dressing. Spread vegetables in single layer in pan.
  • Bake uncovered 30 minutes, stirring occasionally, until crisp-tender.

EASY VEGETABLE BAKED PASTA



Easy Vegetable Baked Pasta image

Vegetable baked pasta loaded with veggies, pockets of ricotta cheese, and topped with melty mozzarella. The vegetables you use can be adapted based on seasonality, check our article above for more suggestions. For a vegan variation, leave out the ricotta and mozzarella and instead stir a couple of tablespoons of nutritional yeast into the marinara sauce.

1 pound dried pasta; try penne, rigatoni, or ziti pasta
1 tablespoon extra virgin olive oil
1/2 medium onion, about 6 ounces
2 small bell peppers, about 8 ounces
8 ounces mushrooms, 1 1/4 cups sliced
1/2 teaspoon fennel seeds or ground fennel, see notes
3 cups marinara sauce or use 1 (28-ounce) jar store-bought sauce
Handful of fresh basil leaves, torn or coarsely chopped
6 tablespoons ricotta cheese
2 cups coarsely shredded cheese; try mozzarella, fontina cheese or an Italian blend
Salt and fresh ground black pepper

Steps:

  • Heat the oven to 350 degrees Fahrenheit. If you have an oven-safe 12-inch deep skillet, you can cook the veggies and bake the pasta in it. If you do not, prepare a 3-quart baking dish by lightly greasing with olive oil.
  • Bring a large pot of salted water to a boil, and then cook the pasta. Check the package for cook time, but cook the pasta two minutes less than what is recommend on the box (it will continue to cook in the oven). Before draining the pasta, reserve 1/2 cup of the pasta water.
  • While the pasta cooks, prepare the vegetables. Slice the onions and bell peppers into 1/4-inch thick slices.
  • Using a damp paper towel, brush all dirt from mushrooms. Cut away and discard any hard stems. Chop into 1/4-inch slices or, if there are larger mushrooms like portobello, cut into 1/4-inch cubes.
  • Heat a wide skillet over medium-high heat. Add the oil then add the mushrooms, in one layer, and cook until browned on one side, 3 to 5 minutes. Stir then add the onions and peppers. Cook another 3 to 5 minutes or until the veggies are starting to soften and have some browned edges. Season to taste with salt and black pepper (I usually add 1/4 teaspoon of each).
  • Stir the fennel, marinara sauce, and basil into the vegetables. If your skillet is large enough, toss in the pasta and if the mixture seems dry, add a splash of the reserved pasta water. If the skillet is too small, combine the sauce and pasta in a bowl. Adjust with pasta water, and then add to a baking dish.
  • Taste the pasta and adjust with more salt and pepper. Tuck spoonfuls of ricotta around the pasta, and then top with the mozzarella cheese. Bake the pasta, uncovered, until the cheese melts and is bubbling, 20 to 25 minutes.

Easy Italian oven roasted vegetables. The perfect combination of veggies, simply seasoned and tossed in extra virgin olive oil. An easy, gluten free side dish in minutes.

8 oz baby bella mushrooms (cleaned, ends trimmed)
12 oz baby potatoes, (scrubbed (Or cut potatoes in halves or cubes depending on size. You want them to be small))
12 oz Campari tomatoes, (grape or cherry tomatoes will work also)
2 zucchini (or summer squash, cut into 1-inch pieces)
10-12 large garlic cloves (peeled)
Extra virgin olive oil
1/2 tbsp dried oregano
1 tsp dried thyme
Salt and pepper
Freshly grated Parmesan cheese for serving (optional)
Crushed red pepper flakes (optional)

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the mushrooms, veggies, and garlic in a large mixing bowl. Drizzle generously with olive oil (about 1/4 cup olive oil or so). Add the dried oregano, thyme, salt and pepper. Toss to combine.
  • Take the potatoes only and spread them on a lightly-oiled baking pan. Roast in the heated oven for 10 minutes. Remove from the heat, and then add the mushrooms and remaining vegetables. Return to the oven to roast for another 20 minutes or until the veggies are fork-tender (some charring is good!)
  • Serve immediately with a sprinkle of freshly grated Parmesan cheese and crushed red pepper flakes (optional).

1/2 medium green bell pepper, thinly sliced
1/2 large onion, thinly sliced

1/8 teaspoon crushed red pepper flakes
1/8 teaspoon salt
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
1/8 teaspoon dried fennel seeds
2 tablespoons snipped fresh parsley
2 tablespoons shredded or grated Parmesan cheese

Steps:

  • Preheat the oven to 400°F. Lightly spray a 9-inch pie pan with cooking spray.
  • In the pie pan, layer as follows: squash, bell pepper, onion, and tomatoes. Sprinkle in order with the red pepper flakes, salt, oregano, basil, and fennel seeds. Lightly spray with cooking spray.
  • Bake for 25 minutes, or until the vegetables are tender when pierced with a fork. Remove from the oven.
  • Sprinkle with the parsley and Parmesan. Let stand, covered, for 5 minutes so the flavors blend and the vegetables release their juices.

  • Don't skip the last step. It brings out the flavors while the vegetables "relax" and the juices are released, giving the dish more intensity.

1 (28 ounce) can whole tomatoes
1 medium onion, sliced
1/2 lb fresh green beans, sliced
1/2 lb fresh okra, cut into 1/2-inch pieces (or 3/4 cup (1/2 of a 10 oz. package)
3/4 cup green pepper, finely chopped
2 tablespoons lemon juice
1 teaspoon fresh basil, chopped (or 1 teaspoon dried basil, crushed)
1 1/2 teaspoons fresh oregano leaves, chopped (or 1/2 teaspoon dried oregano, crushed)
3 zucchini, cut into 1-inch cubes
1 medium eggplant, pared and cut into 1-inch cubes
2 tablespoons parmesan cheese, grated

Steps:

  • Drain and coarsely chop tomatoes. Save liquid.
  • Mix together tomatoes and reserved liquid, onion, green beans, okra, green pepper, lemon juice, and herbs.
  • Cover and bake at 325ºF for 15 minutes.

Steps:

  • Heat dressing in large skillet on medium heat. Add onions; cook and stir 5 min. or until tender. Stir in eggplant; cook 5 min., stirring frequently. Add mushrooms, zucchini and peppers; cook and stir 5 min.

A vibrant dish for slow cookers, layer summery courgettes, tomatoes and aubergine with bread and mozzarella - irresistible!

4 garlic cloves , 3 crushed, 1 left whole
400g can chopped tomato
bunch oregano , leaves chopped
large pinch chilli flakes
about 300g/11oz baby or normal aubergines , sliced
2 courgettes , sliced
½ large jar roasted red peppers
3 beef tomatoes , sliced
bunch basil , torn (save a few leaves for sprinkling over)
small baguette , sliced and toasted
2 x 125g balls mozzarella , torn
green salad , to serve

Steps:

  • Put the slow cooker onto the High or the browning setting and tip in the crushed garlic, canned tomatoes, half the oregano leaves, chilli and some seasoning. Cook, covered, while you chop the rest of the vegetables.
  • Tip out most of the sauce and start layering up half the vegetables and herbs with seasoning - the aubergines, courgettes, red peppers, tomatoes, basil and remaining oregano. Layer in half the bread, rubbed with the whole garlic clove, half the mozzarella and half the tipped-out tomato sauce. Repeat vegetable, herb and tomato sauce layers, followed by the bread and mozzarella. Push everything down well to compress, then cook on high for 5-6 hrs.
  • Flash under the grill before serving if you like (and your slow cooker pot is suitable), until golden and bubbling. Serve with the leftover basil leaves on top and a big salad on the side.
