6 skinless, boneless chicken breast halves
⅓ cup butter, melted
⅓ cup honey
2 tablespoons prepared mustard
1 teaspoon salt
1 teaspoon curry powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts into a 9x13-inch baking dish. Whisk butter, honey, mustard, salt, and curry powder together in a bowl until smooth; pour sauce evenly over chicken.
  • Bake in the preheated oven until sauce is bubbling and chicken is no longer pink inside, 30 to 45 minutes. An instant-read meat thermometer inserted into the thickest part of a breast should read at least 160 degrees F (70 degrees C).

2 pounds chicken tenders
Salt and pepper
1 cup all-purpose flour
3 eggs
A splash milk
2 cups honey nut flavored cereal (recommended: Honey Nut Corn Flakes)
1 cup bread crumbs
1 tablespoon sweet paprika
1 tablespoon poultry seasoning
2 tablespoons grill seasoning (recommended: Montreal Seasoning)
1/4 cup vegetable oil, eyeball it

Steps:

  • Preheat oven to 400 degrees F.
  • Season chicken tenders with salt and pepper. Place flour in a large shallow dish. Coat chicken in flour. Beat eggs and milk in a shallow dish. Combine cereal, bread crumbs, paprika, poultry seasoning, grill seasoning and vegetable oil in food processor. Transfer breading to a shallow dish. Place a nonstick baking sheet near chicken breading station. In batches, take flour coated chicken and coat in eggs then in breading and place on nonstick cookie sheet. When all the chicken has been coated, transfer to oven and bake 15 minutes, until evenly brown and cooked through. Cool and serve, or pack up for a picnic! This chicken may be served hot or cold.

6 bone-in chicken breasts (if large, I cut them in half) or 1 whole chicken, cut into 8 pieces
3/4 cup honey
1/4 cup soy sauce
1/4 cup olive oil
1 tablespoon garlic powder
1 teaspoon black pepper

Steps:

  • In a small bowl, mix together honey, soy sauce, olive oil, garlic powder and pepper. Stir. Refrigerate for one hour or the day before for easy preparation for busy parents!
  • Preheat oven to 375 degrees F. Lightly grease a 9 x 13-inch pan with non-stick cooking spray or cover with foil.
  • Rinse chicken, pat dry and place in prepared pan.
  • Pour marinade over chicken.
  • Bake, uncovered, at 375 degrees for 1 hour until slightly browned.
  • Pour extra liquids from pan in gravy bowl to serve along side.

2 (6 -8 ounce) boneless skinless chicken breasts
1 1/4 teaspoons kosher salt, divided
1/2 cup chopped almonds
2 tablespoons unsalted butter, cut in 1-tbsp pieces
1 small shallot, minced (about 1 1/2 tbsp)
1/2 cup panko breadcrumbs
1/2 lemon, zest of, finely grated
1/2 teaspoon minced fresh thyme
1 pinch cayenne
2 eggs
1 teaspoon Dijon mustard
1/8 teaspoon ground black pepper
1/2 cup unbleached all-purpose flour
1/2 lemon, cut in 2 wedges (use the one you zested)

Steps:

  • Preheat oven to 350°F Poke each breast several times with a fork. Sprinkle each breast with 1/2 tsp kosher salt, coating both sides. Refrigerate, uncovered, 15-20 minutes.
  • Process nuts in food processor, about 20 1-second pulses, until it looks like coarse meal. Heat butter in skillet over medium flame until melted. Swirl constantly until butter is brown and smells nutty, 4-5 minutes. Add shallot and 1/4 tsp kosher salt. Cook, stirring constantly, until shallot is soft, about 2 minutes. Reduce heat to medium-low. Add nuts and panko and stir often until golden brown, 10-12 minutes. Transfer to a shallow dish and stir in lemon zest, thyme and cayenne.
  • Beat egg, mustard and black pepper in a second bowl; place flour in a third dish. Pat breasts dry. Dip breasts, one at a time, into flour, patting off excess, then into egg, then into nut mixture. Scoop nut mixture on top of the chicken and press it down hard to make it adhere. Place breast on a rack placed over a cookie sheet, then prepare the second one.
  • Place rack in lower-middle of preheated oven and bake until internal temperature of chicken is 160F, 20-25 minutes. Rest 5 minutes, then serve with lemon wedges.
