FISH FILLETS WITH CREAM SAUCE AND MUSHROOMS



Fish Fillets With Cream Sauce and Mushrooms image

This recipe goes back years and I still make it often, you can use any meaty fish fillets for this, I have used cod and salmon steaks in the past, the garlic is optional but I add in it, the recipe is for four fillets but can be doubled :)

1/2 cup butter, divided
1 lb button mushroom, sliced (can use more)
1 tablespoon fresh minced garlic (optional)
1/2 cup brandy or 1/2 cup cognac
1 cup crushed tomatoes
1 cup whipping cream (unwhipped)
2 teaspoons dried thyme
4 meaty fish fillets (I use cod)
1 1/4 cups gruyere cheese, grated (or to taste)

Steps:

  • Set oven to broiler heat.
  • Melt 1/4 cup butter in a large skillet over medium heat.
  • Add in mushrooms; saute for about 7-8 minutes.
  • Add in the garlic (if using) and saute for another 2 minutes.
  • Add in brandy or Cognac; simmer until the liquid reduces to a glaze.
  • Reduce heat to medium and add in the tomatoes, whipping cream and thyme; simmer until the sauce thickens, stirring occasionally (about 10 minutes).
  • Season the sauce with salt and pepper.
  • In another skillet melt 1/4 cup butter over medium heat.
  • Season the fish fillets with salt and pepper.
  • Add the fish to the skillet and saute for about 3 minutes on each side, or until JUST cooked through.
  • Transfer the fish to a broiler-proof baking dish.
  • Spoon the sauce over the fillets.
  • Sprinkle with Gruyere cheese over the top.
  • Broil until the cheese melts (about 2 minutes).
  • Delicious!

1/2 cup canned crushed tomatoes, with added puree
1/2 cup whipping cream
2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
2 (8 ounce) orange roughy fillets
1/2 cup grated gruyere cheese

Steps:

  • Preheat broiler.
  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat.
  • Add mushrooms; sauté until golden, about 7 minutes.
  • Add Cognac; simmer until liquid reduces to glaze.
  • Reduce heat to medium.
  • Add tomatoes, cream and thyme; simmer until sauce thickens, stirring occasionally, about 7 minutes.

2 teaspoons margarine
1 cup chopped mushroom
2 tablespoons lemon juice
1 clove garlic, minced
1 dash salt
1 dash pepper
10 ounces fish fillets
1/4 cup chopped scallion
1/4 cup dry vermouth or 1/4 cup other wine
1 tablespoon chopped fresh parsley (optional)

Steps:

  • Preheat oven to 400.
  • In small skillet, heat margarine until bubbly and hot; add mushrooms, lemon juice, garlic and seasonings and saute over high heat, stirring occasionally, until most of liquid has evaporated.
  • Place fish in 1-qt.
  • casserole and top with mushroom mixture, scallions and vermouth; bake until fish is opaque and flakes easily when tested with a fork, about 10 minutes.
  • If desired, sprinkle with parsley just before serving.

4 -6 tilapia fillets
1 medium onion, sliced
1 medium zucchini, diced
2 cups sliced mushrooms (portabella recommended)
2 tablespoons butter
1/4 teaspoon marjoram or 1/4 teaspoon thyme
salt and pepper, to taste
1/4 teaspoon paprika

Steps:

  • Preheat oven to 450 degrees. Spray a nonreactive pan with non-stick cooking spray. Add fish filets and sprinkle with salt and pepper.
  • Melt butter over medium heat. Add onions, mushrooms, zucchini, tarragon, and salt and pepper to taste; sautee for five to seven minutes or until vegetables are tender.
  • Top fish with mushroom-zucchini mixture and sprinkle with paprika. Bake, covered, for twelve to twenty minutes, depending on thickness of filets. Fish will flake easily with a fork when cooked through.

1 1/2 lbs haddock fillets, frozen
10 1/2 ounces cream of mushroom soup
1/2 cup milk
1 1/2 cups sliced mushrooms
1 large onion, chopped
2 tablespoons lemon juice
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon oregano
1/4 teaspoon pepper
1 bay leaf
1 cup buttered bread crumb
1/2-1 teaspoon poultry seasoning

Steps:

  • Place frozen fillets in shallow buttered baking dish.
  • In saucepan, combine remaining ingredients and simmer 10 minutes; pour over fillets.
  • Top with 1 cup buttered breadcrumbs which have been lightly seasoned with poultry seasoning (or 1 cup prepared stuffing mix.).

Although I haven't made this dish in ages, it was one of the first I tried when DH and I were dating, and I made dinner for him! For that reason, I'm glad I found this cookbook (Betty Crocker's New International) to share this sentimental (for us) dish. I remember it being a very tasty dish; it's not very colorful, but it does have a nice flavor, and when made with light sour cream, isn't too detrimental to the waistline! It's described as both Hungarian and Austrian in its origin, "betyar fogas", and the note says that it's often accompanied by boiled russet potatoes. I used to serve it with a colorful salad, since a white fish dish and white potatoes was way too bland!

1 lb fish fillet, patted dry (I use firm white fish)
4 ounces sliced mushrooms
1 small onion, chopped
1 tablespoon butter
1/2 teaspoon thyme
1/4-1/2 teaspoon salt
1/4-1/2 teaspoon pepper (can use either white or black)
1/2 cup sour cream, at room temperature (if using light sour cream, bring to room temperature and stir well)
3 -5 tablespoons grated or shredded parmesan cheese
2 tablespoons dry breadcrumbs
paprika (for garnish)
chopped parsley (for garnish)

Steps:

  • Put fish into a rectangular baking dish (approx. 12 x 7. 5 x 2), sprayed lightly with a baking spray.
  • Preheat oven to 350 degrees fahrenheit.
  • Over medium to medium-high heat, melt butter in a skillet large enough to hold mushrooms and onions.
  • Saute mushrooms and onions about 3 minutes, until mushrooms are golden, sprinkling with thyme when about halfway through.
  • Spoon mushroom and onion mix over fish and sprinkle lightly with salt and pepper.
  • Sprinkle about 1 1/2 T parmesan (or to taste) over the mushroom and onion mixture.
  • Mix remaining cheese into sour cream.
  • Spread sour cream over mushroom/onion mixture, using a spatula.
  • Sprinkle with bread crumbs.
  • Bake uncovered for about 25- 30 minutes, or until fish flakes with fork.
  • Sprinkle with parsley and paprika and serve.
