2 lbs chicken pieces
1 1/2 teaspoons seasoning salt (or to taste, can use white salt)
ground black pepper (to taste)
1 teaspoon garlic powder (optional)
2 cups prepared pasta sauce
8 ounces uncooked spaghetti (or use as much as desired)
1/2 cup parmesan cheese (optional or to taste)

Steps:

  • Set oven to 375 degrees F.
  • Grease a 13 x 9-inch or a 2-quart baking dish (a larger baking dish might be needed for more chicken pieces).
  • Pat the chicken pieces dry using paper towels.
  • Season the chicken pieces with seasoned salt, black pepper and garlic power.
  • Place into the baking dish.
  • Bake for 30 minutes.
  • Drain any fat in the dish.
  • Pour the pasta sauce over the chicken then return to oven for another 25-30 minutes or until the chicken is cooked through.
  • Sprinkle Parmesan cheese over.
  • Serve with cooked spaghetti.

1 cup seasoned bread crumbs
4 boneless skinless chicken breast halves (6 ounces each)
1 jar (26 ounces) garden-style pasta sauce

  • In a shallow bowl, beat the egg. Place the bread crumbs in another shallow bowl. Dip chicken in egg, then coat with crumbs. Place in a 13x9-in. baking dish coated with cooking spray. , Bake, uncovered, at 400° for 20-22 minutes or until a thermometer reads 170° Pour pasta sauce over chicken. 2 ½ cups broccoli florets
3 tablespoons water
3 tablespoons ranch dressing mix, divided
2 pounds skinless, boneless chicken breasts, cut into bite-sized pieces
½ teaspoon ground black pepper
1 (48 ounce) container chicken broth
1 (16 ounce) package small shell pasta
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
2 ¾ cups milk
1 (1.6 oz) package dry Alfredo sauce mix (such as Knorr®)
½ cup sour cream
salt and ground black pepper to taste
1 cup grated Parmesan cheese
4 slices cooked and crumbled bacon

Steps:

  • Place broccoli and water in a microwave-safe bowl. Cover and microwave on high until steamed and tender, 3 to 4 minutes. Remove and drain excess liquid; set aside.
  • While broccoli is steaming, place 1 tablespoon ranch dressing mix in a large resealable plastic bag. Add chicken and pepper, seal the bag, and massage to coat chicken with seasonings.
  • Pour chicken broth into a large pot and bring a boil over medium-high heat. Add shells and return to a boil. Reduce heat to medium-low and cook, stirring occasionally until pasta is nearly done, about 10 minutes. Drain pasta, reserving 1/2 cup of cooking broth.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Heat butter and olive oil in a large nonstick skillet over medium-high heat. Add chicken to the hot skillet, working in batches if necessary, and cook until browned on all sides, about 7 minutes. Remove chicken to a plate.
  • Add milk, Alfredo sauce mix, and remaining 2 tablespoons ranch dressing mix to the hot skillet; bring to a boil. Easy, tasty, creamy dish which can ready with very little time. Also makes a great lunch cold the next day.

3 mini-chicken breasts
150ml single cream
8 closed cup white mushrooms, quartered
1 shallot
3 cloves of garlic
30g salted butter
Salt and freshly ground black pepper
100g parmesan cheese
Extra virgin olive oil
300g dried penne pasta

Steps:

  • Bring a pan of water to the boil. Add a little splash of olive oil and the pasta. Cook for 4 minutes or until al dente. Drain and return to the pan. Pre-heat the oven to 200°C.
  • Season the whole chicken fillets with salt and pepper and then lightly shallow fry them in a little olive oil on a medium heat. Turn them regularly until they're just starting to colour, about 7 minutes. They should be white and still juicy throughout when you take them off the heat and slice them diagonally into thin strips.
  • For the sauce, add the butter to the pan along with the finely diced shallot. Add in the mushrooms. Fry for a few minutes until the onions are translucent but not browning. Add the garlic, crushed. Stir for a further minute or so until you can smell the garlic. Reduce the heat and pour in the cream. Mix well. Season with salt and pepper and allow to reduce very slightly so that the cream thickens a bit and is slightly sticking to the spoon.
  • Stir in the the chicken and pasta. When mixed add about a quarter of the parmesan cheese by grating this in directly. Cook for another minute or two. The texture should be sticky and the chicken and pasta should both be starting be covered in the sauce.
  • Dish into oven-proof dish(es) and cover with foil. Pop into the oven and leave for 15 minutes. Take out of the oven and carefully remove the foil. Grate over about half of the remaining parmesan liberally and return to the oven for a another 10 minutes before removing and serving with a final further helping of parmesan on the top and pepper to taste.

3 skinless, boneless chicken breast halves - cubed
5 small green bell peppers, chopped

4 eggs
4 cups creme fraiche

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • In a large skillet over medium heat, heat oil and saute chicken for 8 to 10 minutes. Add green, red and yellow bell peppers, and continue cooking for another 5 minutes. Stir in soy sauce, wine, and lemon juice. Cover skillet, reduce heat to low, and simmer for 20 minutes.
  • Preheat oven to 370 degrees F (180 degrees C).
  • Beat the eggs in a large bowl with the creme fraiche. Season with paprika, oregano, coriander, nutmeg, and salt and pepper to taste. Mix in Cheddar cheese, Emmentaler cheese, and blue cheese. Transfer mixture to a 9x13 inch baking dish. Sprinkle Parmesan cheese on top, and pour in enough milk to make mixture moist.
  • Bake in preheated oven for 40 to 45 minutes, or until the top is golden brown; serve.

After dinner with Mom at Fazoli's, I altered a recipe from Taste of Home's "Country Chicken" cookbook, and this is the amazingly excellent result. Great for dinner parties and delicious for a week-night supper with the family all around the table!

2 tablespoons olive oil, divided
1/2 cup biscuit mix
2 tablespoons grated parmesan cheese
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon garlic powder
1/4 teaspoon pepper
4 boneless chicken breast halves
1 quart home-made tomato sauce
1 (28 ounce) can spaghetti sauce
3 -5 garlic cloves, minced (or pressed)
3 cups shredded mozzarella cheese, divided
12 ounces linguine, cooked & drained (or fettucini)
1/2 cup parmesan cheese (set aside for later)

Steps:

  • Preheat frying pan to medium high; preheat oven to 350. Grease 13x9 pan with 1 T. of the olive oil.
  • In a medium bowl, combine biscuit mix, Parmesan, basil, oregano, garlic and pepper.
  • Pull "tenders" from breast halves. Dredge all pieces in the biscuit mixture; pressing it on as necessary.
  • Add remaining oil to hot frying pan, and brown the chicken pieces, turning to brown all sides. Remove pan from heat.
  • While meat is browning, mix tomato and spaghetti sauces; add garlic & more herbs if you wish. (I'm very heavy-handed with the basil & oregano.).
  • Spread a layer of cooked pasta over the bottom (about 1/3 of total pasta) of the 13x9 pan. Sprinkle with 1/4 of the Mozzarella cheese. Spread about a cup of the sauce over this. Repeat twice. (You should have about a cup of cheese left.)
  • Lay the chicken pieces over the last layer of pasta-cheese-sauce. Pour the remaining sauce over the top of the meat, sprinkle on the remaining Mozzarella.
  • Pop in the oven for 30 minutes; then sprinkle on reserved Parmesan cheese, bake for 10 more minutes.
  • SERVE: A small green salad and a few slices of crisp apple or orange or a handful of grapes are delicious accompaniments.
  • PLANNED OVERS #1: Whatever meat is left, cut into bite-size pieces, mix thoroughly into remaining pasta, cheese and sauce. At the next meal, you may need to add a few drops of water or sauce to juice it up, but reheated--this works beautifully.
  • PLANNED OVERS #2: If no meat is left-over, spread pasta in the bottom of a greased casserole, lay some pepperoni slices over the top, sprinkle with a bit of Cheddar cheese, and bake until bubbly. Sounds like SUPPER!
  • SUBSTITUTIONS: Add some chili powder to the sauce (try some salsa in there), minced (dried) onions, lots of black olives, and you have a Taco-y flavored dish instead!

1/2 pound pancetta, diced
1/2 pound cremini mushrooms, thinly sliced
1 pound dried penne
5 1/2 cups prepared marinara sauce
1 1/2 cups shredded rotisserie chicken, skin and bones removed
1 1/2 cups shredded Italian fontina cheese
1 1/2 cups shredded mozzarella
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Meanwhile, heat the oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer to a large bowl using a slotted spoon. Add the mushrooms to the pancetta drippings and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Transfer to the bowl with the pancetta.
  • Cook the penne in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the marinara, chicken, the fontina and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and the remaining Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

4 garlic cloves, thinly sliced
Pinch crushed red pepper flakes
One 28-ounce can plum tomatoes, crushed by hand
One 15-ounce can plum tomatoes, crushed by hand
4 large fresh basil sprigs plus 1 cup chopped fresh basil plus more for garnish (optional)
1 cup chopped fresh flat-leaf parsley
1 pound dried fusilli
6 cups baby spinach
2 cups shredded rotisserie chicken, skin and bones discarded
3 cups diced fresh mozzarella
1 cup grated Parmesan

Steps:

  • Preheat oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil sprigs and stir in the chopped basil and parsley. Season with salt and pepper.
  • Cook the fusilli in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and transfer it to a large bowl.
  • Add the tomato sauce, spinach, chicken, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest for about 10 minutes before serving. Garnish with more chopped basil if using.

1 medium red onion, chopped
4 garlic cloves, minced
1/4 cup vodka (optional)
1 can (28 ounces) whole tomatoes with juice, lightly crushed with hands
1/2 teaspoon dried oregano
1/2 cup heavy cream
1 pound rigatoni
10 ounces baby spinach
12 ounces smoked chicken sausage, halved lengthwise and sliced 1/4 inch thick
6 ounces Fontina cheese; 4 ounces cut into 1/2-inch cubes and 2 ounces coarsely grated
1/4 cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Heat oil in a large skillet over medium heat. Add onion; cook until translucent, about 3 minutes. Stir in garlic. Remove from heat; add vodka, if desired. Return to heat; cook until almost evaporated, 1 minute.
  • Stir in tomatoes and oregano; cook until tomatoes are falling apart, 10 to 15 minutes. Add cream; cook until warmed through, about 5 minutes. Season sauce with salt and pepper.
  • Meanwhile, preheat oven to 400 degrees. Cook pasta in the boiling water until al dente, according to package instructions. Add spinach, and cook just until wilted. Drain, and return contents to pot.
  • Add tomato sauce, sausage, and cubed Fontina to pot; toss to coat. Season with salt and pepper. Divide evenly between two shallow 1 1/2-quart baking dishes.
  • Top with grated Fontina and Parmesan. Bake until browned and edges are crisp, 20 to 30 minutes.

1 tablespoon cornstarch
1 1/2 cups whole milk, divided

2 tablespoons dry sherry (NOT cooking sherry)
1/2 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
2 cups cooked chicken, diced
1 cup frozen green pea, thawed

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together 2 Tbsp of the milk with all of the cornstarch until dissolved.
  • In a small saucepan over medium heat, combine remaining milk, chicken broth, and sherry; bring to just a light boil.
  • Working quickly so as not to burn the milk, stir in cornstarch mixture and cook 1-2 minutes, or until sauce is simmering and thickened, stirring constantly.
  • Add salt and pepper to taste; simmer on low 3 minutes longer, stirring.
  • Pour sauce into a large bowl and add pasta, chicken, peas, mushrooms, and pimentos.
  • Stir in 1/4 cup of the Parmesan cheese and stir to combine until all pasta is coated.
  • Pour into a greased shallow baking dish.
  • In a small bowl, combine remaining cheese and bread crumbs, sprinkle over the pasta to coat.

1 eggplant, halved lengthwise
1 teaspoon salt, or as needed
3 small zucchini, sliced
¼ cup olive oil, or to taste, divided
4 bone-in chicken thighs
2 tablespoons balsamic vinegar
½ yellow onion, chopped
3 cloves garlic, minced
1 (12 ounce) can tomato sauce
1 ½ tablespoons chopped fresh basil, or to taste
ground black pepper
½ (16 ounce) package whole-wheat spaghetti

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Sprinkle all sides of eggplant with salt; let rest to release moisture, about 30 minutes. Rinse off the salt. Make deep, crisscross cuts through the eggplant flesh, leaving the skin intact.
  • Place eggplant and zucchini on a baking sheet; drizzle with 2 tablespoons olive oil.
  • Place chicken thighs in a baking dish. Combine 1 1/2 tablespoons olive oil and balsamic vinegar in a bowl and drizzle over chicken. Cover with aluminum foil.

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain. Pour sauce over the spaghetti. Place the chicken, eggplant, and zucchini on top.

2 cups cooked chicken, diced
1 cup low sodium chicken broth
2 (10 1/2 ounce) cans Rotel tomatoes & chilies, do not drain
1 (10 1/2 ounce) can condensed cream of chicken soup
1/2 lb Velveeta cheese
1 cup shredded sharp cheddar cheese
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4-1/2 teaspoon salt
1/4-1/2 teaspoon garlic powder

Steps:

  • Preheat the oven to 375°F Boil the pasta until al dente, drain then set aside. Blend the Rotel tomatoes in a food processor until slightly chunky.
  • Mix the broth, tomatoes, cream of chicken, Velveeta, spices, & cheese in a sauce pan. Heat until the cheese is melted, stirring frequently.
  • Place the pasta & chicken in a 9x13 baking dish then pour the cheese mixture over the top, stir until well blended.

2 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can whole plum tomatoes, crushed by hand
One 15-ounce can whole plum tomatoes, crushed by hand
2 large sprigs fresh basil
1 pound dried rigatoni
3 cups shredded rotisserie chicken, skin and bones removed
1 1/2 cups shredded Asiago cheese
1/2 cup grated Parmesan
1 1/2 cups shredded mozzarella
1/2 cup grated pecorino

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil and season with salt and pepper.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and transfer it to a large bowl.
  • Add the tomato sauce, chicken, Asiago and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and the pecorino. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

Steps:

  • Heat oven to 400ºF.
  • Combine sausage, vegetables, garlic, vinegar, oil and crushed red pepper in 13x9-inch baking dish sprayed with cooking spray.
  • Place block of cream cheese in center of sausage mixture.
  • Bake 25 to 30 min. or until peppers are tender, stirring after 15 min.
  • Add pasta and boiling water to ingredients in baking dish. Use back of spatula to gently press pasta into boiling water so most the pasta is covered with water. Cover with foil.
  • Bake 18 min. Remove baking dish from oven. Stir ingredients in baking dish; cover. Let stand 5 min.
  • Sprinkle with basil before serving.

4 tablespoons butter, divided
3 tablespoons olive oil, divided
1 lb boneless chicken breast, cut into cubes
coarse salt and fresh black pepper
1 teaspoon italian seasoning, divided
1 small yellow onion, diced
2 medium carrots, diced
1 big stalk celery, diced
3 garlic cloves, minced
1 cup peas, fresh (or frozen)
3 tablespoons all-purpose flour
2 cups chicken broth
1 cup whole milk
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
5 cups elbow macaroni, cooked
1 pie crust (I like this one)

Steps:

  • Preheat oven to 400 degrees F. Butter a 9x13 casserole dish or baking pan.
  • In a large skillet heat 1 tablespoon oil over medium heat. Season the chicken well with salt, pepper and 1/2 teaspoon Italian seasoning. Add to skillet and cook through, stirring often. Remove to a large bowl and set aside.
  • Turn the heat down to medium-low and add the remaining 2 tablespoons oil, the onion, carrots, celery, garlic and 1/2 teaspoon Italian seasoning. Cook 7-8 minutes, stirring often, stir in the peas and cook 2 more minutes. Remove the mixture from the pan to the bowl with the chicken.
  • With heat on medium-low melt 3 tablespoons butter in the pan, whisk in the flour and cook 3 minutes. Slowly whisk in chicken broth then the milk. Turn heat up to medium-high and bring to a simmer for 3 more minutes, stirring often.
  • Add the chicken broth to the bowl with the chicken/vegetables and mix well, then mix in both cheeses.
  • Pour the mixture into the buttered casserole and spread out evenly.
  • Roll the pie crust out on a lightly floured surface to about 10-inches in diameter and cut circles out of it with a biscuit or cookie cutter. Arrange them over top of the pasta.
  • Bake 30 - 35 minutes until the casserole is hot in the center and the crust is golden brown, if the crust starts to darken too much cover with aluminum foil. Let set 5 minutes before serving.

1 cup mushroom, sliced
8 ounces shrimp, peeled and deveined
1 (16 ounce) can tomatoes, diced, strained with a little bit of juice left in the can

salt and pepper
1 cup low-fat cheddar cheese, shredded

Steps:

  • Cook pasta as directed.

It will be in my regular rotation from now on, it was easy, quick and very tasty. I will change a few things though...I will use tomatoes with Italian seasoning and maybe a little more cheese next time! I even think it would be good if you added some ricotta to the mix. 2 whole chicken breasts
10 -12 lasagna noodles
1 1/2 teaspoons crushed garlic
1 1/2 teaspoons crushed ginger
1 liter water
1 tablespoon flour
1/4 liter milk
1 tablespoon butter
fresh ground black pepper, to taste
300 g mozzarella cheese, grated
1 packet maggie bechamel mix, for the white sauce (optional)

Steps:

  • Place the chicken in a dish with the crushed ginger and garlic, salt, pepper and water.
  • Boil till the chicken is tender and cooked.
  • Remove chicken.
  • Keep stock aside.
  • Remove the bones and cut the chicken into thin strips and keep aside.
  • Now, proceed with preparing the white sauce.
  • If your using Maggie bechamel mix, make the sauce according to the recipe.
  • Add little water to the stock to make 1 litre.
  • Put it on flame.
  • Add little flour at a time, making sure it doesn't form any lumps.
  • Slowly, pour in the milk.
  • Stir until the sauce is smooth.
  • Mix 1 tbsp.
  • of butter and allow the sauce to simmer for a few more minutes till it thickens.
  • Remove from heat.
  • Set aside.
  • In a baking dish, place some chicken at the base.
  • Sprinkle some pepper and top with some of the white sauce and a little grated cheese.
  • Cover it with 3-4 Lasagne strips.
  • Continue layering the same way until all the chicken and the white sauce is over.
  • Cover with aluminium foil.
  • Preheat oven to 180C for 15 minutes.
  • Bake the chicken for 30-45 minutes until the pasta is done.
  • Remove the foil.
  • Top the dish with the remaining cheese.
  • Return to the oven until it turns brown.
  • Serve hot!
