GREEK-STYLE BAKED CHICKEN CUTLETS



Greek-Style Baked Chicken Cutlets image

Tender, delicious chicken every time. Serve over buttered orzo with a fresh green salad on the side. The fresh basil is the icing on the cake!

1 egg
2 tablespoons milk
½ cup dry bread crumbs
4 boneless, skinless chicken breast halves, pounded to 1/4-inch thickness
cooking spray
2 tablespoons olive oil
1 lemon, juiced
1 clove garlic, minced, or more to taste
¼ cup white wine
2 plum tomatoes, chopped
1 (14 ounce) can artichoke hearts
10 Kalamata olives, pitted
¼ cup chopped fresh basil
1 (4 ounce) package crumbled feta cheese
½ cup chicken broth

Steps:

  • Whisk egg and milk together in a bowl. Place bread crumbs in a separate bowl. Soak chicken breasts in the egg wash and coat with bread crumbs; place on a plate.
  • Preheat oven to 350 degrees F (175 degrees C). Coat a baking pan with cooking spray.
  • Heat olive oil in a skillet over medium heat. Fry chicken until browned, about 3 minutes per side. Transfer chicken to the prepared baking pan and sprinkle with lemon juice.
  • Cook garlic in the hot skillet until fragrant, no longer than 30 seconds. Pour in white wine and scrape the bottom of the skillet. Add tomatoes, artichoke hearts, and olives. Cook and stir until heated through, about 3 minutes. Add basil; cook until wilted, about 3 minutes more.
  • Pour artichoke mixture over chicken in baking pan and top with feta cheese. Pour chicken broth over everything and cover the pan with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 teaspoon lemon juice
2 ½ cups Italian-style bread crumbs
½ cup grated Pecorino Romano cheese
2 teaspoons adobo seasoning, or to taste
5 (8 ounce) skinless, boneless chicken breast halves
1 (15 ounce) can diced tomatoes
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking pan with cooking spray.
  • Beat egg and lemon juice together in a bowl.
  • Mix bread crumbs, Romano cheese, and adobo seasoning together on a plate. Dredge chicken breasts in the egg mixture, coat with bread crumb mixture, and place in the prepared pan.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. 2 small chicken cutlets
1 large roma tomato, chopped (or other tomato)
1 jalapeno pepper
1/2 small onion, chopped
1 green onion, chopped
2 large mushrooms, chopped
1 garlic clove, minced
3 sun-dried tomatoes, chopped
1 teaspoon asiago cheese, grated
1 teaspoon parmesan cheese, grated

Steps:

  • Lightly spray a small baking dish with oil.
  • Place half the chopped tomato in the dish.
  • Place the two cutlets on top of the tomato.
  • Sprinkle the rest of the tomato on the cutlets, then add remaining ingredients and finally topping it with the cheese.
  • Bake in 325F oven for about 45 minutes or until the chicken is cooked and the cheese nicely browned.

How to make Peanutty Baked Chicken Cutlets

2 tablespoons honey
2 tablespoons Dijon mustard
1/3 cup peanuts
1 cup panko (Japanese breadcrumbs)
4 (1/2-inch-thick) chicken breast cutlets (about 1 pound)
Cooking spray
1/4 cup peach chutney

Steps:

  • Preheat oven to 500°.
  • Combine honey and mustard in a small bowl; stir well. Place peanuts in a food processor; pulse until finely chopped. Combine peanuts and panko in a shallow bowl.
  • Brush each cutlet with honey mixture; dredge cutlets in panko mixture. Place cutlets on a baking sheet coated with cooking spray; lightly coat cutlets with cooking spray. Bake at 500° for 8 minutes or until done. Serve with chutney.

3 chicken breasts
1 cup plain yogurt
1/2 tsp salt
1/2 tsp paprika
1 c whole grain bread crumbs
1 tsp Italian seasoning
2 Tbs olive oil

Steps:

  • Cut breasts in half horizontally to make two thin cutlets each. Combine yogurt, salt and paprika. Spread over breasts, cover and refrigerate for at least an hour. Combine bread crumbs and seasoning. Spread oil on a cookie sheet. Remove breasts from marinade, shaking off excess. Dip cutlets in crumbs and place on cookie sheet. Bake in a 350 degree oven for 35-45 minutes, till lightly browned and slightly crispy. You can play with the seasonings in the marinade and crumbs for variation.
