Date Nut Snack Cake image

Not much to tell about this cake , except that each piece is a moist and delicious slice of yummy! Mom loves dates and so do I. This cake is just the right size for the family. This cake can be made with other fruits such as raisins, craisins, apricots or apples, etc.Give it a try ;it will be on your favorites list soon! Found...

CAKE:
1 c pitted and chopped dates
2 tsp baking soda
1 c boiling apple juice or boiling water
2 c all purpose flour
1/2 c light brown sugar,light packed
1/2 c granulated sugar
1 Tbsp molasses
1 c mayonnaise-must be mayonnaise only
1 c chopped pecans or walnuts
LEMON SAUCE:
1/4 c water
1 large egg,beaten
1 c granulated sugar
1/2 c butter
1 tsp lemon zest, grated
3 or 4 Tbsp lemon juice

Steps:

  • 1. Heat oven to 350^. Grease and flour or spray a 9x13-inch baking pan- I used my pineapple up-side down cake pan. --- In the large mixer bowl, mix the dates and 1 teaspoon of the baking soda and the boiling apple juice or water. Let set till cool.
  • 2. Cake: When date mixture is cool, add flour and remaining ingredients, except nuts, to the bowl and beat on medium speed until mixture is well blended. Stir in the nuts. Spread batter in prepared pan. Bake 45 minutes, or until a toothpick inserted in center comes out clean.
  • 3. Sauce: While cake is baking . Mix beaten egg and water in a medium saucepan. Add the sugar, butter and lemon peel and lemon juice . Heat to boiling over medium heat, stirring constantly. Serve sauce over warm cake . Refrigerate any leftover sauce.
