3 gold potatoes
1 tablespoon cooking oil
1 packet ranch dressing mix
¼ cup chives
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat the oven to 350ºF (175ºC).
  • Carefully slice 3 gold potatoes into ⅛-inch (3 mm) slices using a knife or mandoline.
  • In a large bowl, mix chips with ingredients.
  • Arrange chips on greased baking sheet
  • Bake for 30-35 minutes.

2 1/2 pounds russet potatoes, unpeeled
One 1-ounce packet dry ranch seasoning
1 1/2 teaspoons dried parsley
1 1/2 teaspoons onion powder
1 teaspoon sea salt
1 teaspoon garlic powder
1/2 teaspoon dried dill
1/2 teaspoon smoked paprika
1/4 teaspoon ground black pepper
Vegetable oil, for frying

Steps:

  • Slice the potatoes on a mandoline as thinly as possible. Submerge the potato slices in cold water as you go to keep them from browning. This will also remove any excess starch.
  • Add the dry ranch seasoning, parsley, onion powder, salt, garlic powder, dill, paprika and black pepper to a bowl and mix. Set aside.
  • Fill 2 large Dutch ovens halfway with vegetable oil and heat to 375 degrees F.
  • Drain the potato slices and lay out on baking sheets lined with paper towels. Use more paper towels to blot the slices until completely dry.
  • Lower batches of potato slices into the oil using a spatula and fry until golden, 1 to 1 1/2 minutes per batch. Remove with a slotted spoon to a baking sheet, immediately sprinkle over some of the seasoning mix and toss until evenly coated. Repeat with the rest of the potatoes.

This recipe comes from a Gourmet magazine way back in the 80's, and I still make them often my family loves these! If you want you can omit the Cajun seasoning! If you are lucky enough to own a mandoline, then use it to slice the potatoes. Your oven must be at 500 degrees to create a crispy potato slice! You could reduce the recipe to half if desired but why would you want too, you won't be able to stop eating these, they are that good, so better make the full amount!!!

1/4 cup melted butter
coarse salt (or use kosher salt)

This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

2 teaspoons chili powder
1 teaspoon salt
½ teaspoon ground black pepper
6 tablespoons butter, cubed
1 (8 ounce) package shredded colby-Monterey Jack cheese blend
1 (8 ounce) bottle Ranch dressing

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place the potatoes in the baking dish. Season with chili powder, salt, and pepper. Evenly distribute the butter over the potatoes.
  • Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing. Continue cooking 10 minutes, or until cheese is melted and bubbly.
