1/4 cup olive oil ($0.52)
2 Tbsp red wine vinegar ($0.20)
1 Tbsp stone ground or whole grain mustard* ($0.08)
1 small clove garlic, crushed or minced ($0.08)
1/4 tsp salt ($0.02)
Freshly cracked pepper ($0.03)
1/2 lb kielbasa ($1.60)
1 lb baby red potatoes ($1.63)
1/2 head cabbage** ($1.02)
2 Tbsp olive oil, divided ($0.26)
Pinch of salt and pepper ($0.05)
Handful chopped fresh parsley ($0.22)

Steps:

  • Preheat the oven to 400ºF. In a small bowl whisk together the olive oil, red wine vinegar, mustard, crushed garlic, salt, and freshly cracked pepper for the vinaigrette. Set the vinaigrette aside.
  • Slice the kielbasa into 1/4-inch thick rounds. Wash the potatoes well and slice them into 1/4-inch rounds as well. Place the kielbasa and potatoes on a large baking sheet and drizzle with 1 Tbsp olive oil. Toss the kielbasa and potatoes in the oil until they are well coated and the surface of the baking sheet is also covered in oil. Sprinkle a pinch of salt and pepper over top.
  • Remove any dirty or damaged leaves from the cabbage. Cut the stem off the cabbage, then cut it in half. Reserve one half for a different recipe. Slice the remaining half into 1-inch wide slices. Cut each slice into two pieces. Place the cabbage pieces on the baking sheet with the kielbasa and potatoes, nestling them down so that they are laying flat on the baking sheet.
  • Brush the remaining 1 Tbsp olive oil over the surface of the cabbage pieces and add a final pinch of salt and pepper to each.
  • Roast the kielbasa, potatoes, and cabbage in the preheated oven for 20 minutes. Remove the baking sheet from the oven and carefully flip the kielbasa, potatoes, and cabbage pieces. The cabbage may fall apart a bit as it's flipped, which is okay. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the cabbage is tender and the edges are slightly brown and crispy. The kielbasa and potato slices should be well browned.
  • Remove the baking sheet from the oven and top with fresh chopped parsley and a drizzle of the mustard vinaigrette. Serve warm.

I love pierogies and they finish this cabbage-kielbasa saute perfectly. I know there are plenty of really good cabbage, kielbasa and potato recipes, but the pierogies in this dish just melt in your mouth. Not a diet dish, but a delicious comfort food meal. I got the recipe from a PBS home cooking special and have loved it ever since. Note that cooking start times overlap in this recipe. Reduce the amount of butter if desired.

12 frozen potato and onion pierogies (1 box)
8 tablespoons butter or 8 tablespoons margarine
1 large onion, coarsely chopped
1 head cabbage, at least 2 1/2 lbs, cored & coarsely chopped
salt and pepper
1 lb kielbasa, sliced 3/8 - 1/2 inch thick

Steps:

  • Bring a large pot of water to a boil. Add pierogies and boil for 5-7 minutes. Pierogies should float to the surface when they are done, but that's not always true with today's frozen products - some float right away or within a minute or two. Ignore that event and boil for at least 4-5 minutes to fully cook the filling.
  • Remove pierogies with a slotted spoon and drain well.
  • While the water is heating for the pierogies, melt butter in a large skillet over medium high heat. Add onion and saute until it softens, 3 - 5 minutes.
  • Add cabbage and saute mixture 5 more minutes. Season generously with salt and pepper.
  • Stir in sliced kielbasa and continue to cook until cabbage is done and kielbasa flavors have melded with the mixture.
  • Reduce temperature to warm. Place cooked pierogies atop cabbage and season with pepper.
  • Spoon some of the cabbage mixture over the pierogies to help them reheat. The dish is ready when the pierogies are heated through. Serve warm.

1 small red cabbage (about 1 1/2 pounds), cut into 1 1/2-inch-thick wedges
2 small red onions, peeled and cut into 1-inch-thick wedges
2 tablespoons extra-virgin olive oil
5 tablespoons cider vinegar
2 teaspoons caraway seeds
Coarse salt and freshly ground pepper
3 small Gala apples (about 1 1/4 pounds), halved lengthwise and cored
1 1/2 pounds smoked kielbasa, slashed 1/4-inch deep in a few places
Whole-grain mustard, for serving

Steps:

  • Preheat oven to 400 degrees. Toss together cabbage, onions, oil, 3 tablespoons vinegar, and caraway seeds on a rimmed baking sheet; generously season with salt and pepper. Spread into a single layer and roast 25 minutes.
  • Gently turn vegetables. Add apples, cut side down, and kielbasa to baking sheet, keeping everything in a single layer. Roast until cabbage is crisp-tender and apples are tender and slightly collapsed, 20 to 25 minutes. Sprinkle with remaining 2 tablespoons vinegar. Slice kielbasa and divide equally among 4 plates with vegetables and apples. Serve with mustard.

¼ cup water
2 tablespoons white sugar
1 onion, chopped
2 teaspoons minced garlic

This sheet-pan dinner of roasted kielbasa, caramelized cabbage and white beans marinated in a dill-and-red wine vinaigrette comes together in about a half-hour. There are many different types of kielbasa, but the smoked version typically found at American grocery stores is horseshoe-shaped and, when roasted, tastes a little like pepperoni. Feel free to play around with substitutions: You can use green or red cabbage for the Savoy, though the leaves won't get quite as frizzled and golden. Instead of dill, chives or parsley can bring freshness. Instead of shallot, use scallions, red-pepper flakes or grated garlic for sharp heat. Instead of mustard, you could use horseradish, chopped pickles or sauerkraut for briny acidity.

1 medium Savoy cabbage (2 to 2 1/2 pounds), cut through the root into 1-inch-thick wedges

Steps:

Roast without flipping until cabbage is tender and charred in spots and the kielbasa is dark golden, 25 to 30 minutes.

3 hot chili pepper
1/2 lb kielbasa
1 c chicken broth, low salt
about 1 Tbsp balsamic vinegar
seasoning salt
garlic and onion powder
black pepper

  • 1. In a large Pyrex dish layer chopped cabbage, onion, hot peppers, garlic and kielbasa. Drizzle the vinegar over the cabbage.
  • 2. Pour broth into bottom of dish, season with the rest of the ingredients.
