This baked brie and roasted garlic makes a simple, delicious appetizer. In this recipe, garlic is roasted with olive oil until golden, and so soft it spreads like butter.

3 Heads of Garlic
6 teaspoons Extra Virgin Olive Oil (2 teaspoons for each garlic head)
1 Large Brie Wheel (13-14 ounces)
1 Large Loaf of Baguette Bread
Aluminum foil (heavy duty)
Parchment paper
Baking sheets

Steps:

  • Preheat the oven to 400°F
  • Remove any loose papery outer layers from the garlic, but leave the tight fitting peel intact.
  • Slice about ¼ inch off the top of the garlic head - the side that doesn't sit flat.
  • Cut 3 pieces of heavy duty aluminum foil, roughly 12". Set one garlic head in the middle. Add 2 teaspoons of olive oil carefully, making sure it sinks into the individual cloves.
  • Bring up all four sides of the aluminum foil and wrap tightly on top. Repeat with the remaining garlic.
  • Place the garlic heads on a baking sheet and roast for 40-50 minutes. until they're golden, and a spreadable consistency.
  • Remove the garlic from the oven. Turn off the oven for a little while; so it to cools off a bit to bake the brie.
  • Preheat the oven to 350°F
  • Cut the baguette into ½ inch rounds. Arrange the bread on a baking sheet and set aside.
  • Place the brie wheel on a baking sheet, lined with parchment paper. Bake the brie for 15-20 minutes, or until the inside is melted. The brie should give when pressed lightly.
  • When the brie is almost done, place the bread in the oven for the last 5-6 minutes to toast it just a little bit.
  • Spread a clove of roasted garlic on a piece of bread and top with a generous amount of brie cheese.

1 whole garlic bulb
1-1/2 teaspoons plus 1 tablespoon olive oil, divided
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 round loaf (1 pound) sourdough bread
1 round (8 ounces) Brie cheese
1 loaf (10-1/2 ounces) French bread baguette, sliced and toasted
Red and green grapes

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1-1/2 teaspoons oil; sprinkle with rosemary. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. , Meanwhile, cut the top fourth off the loaf of bread; carefully hollow out enough of the bottom of the bread so cheese will fit. Cube removed bread; set aside. Place cheese in bread. , Cool garlic for 10-15 minutes. Reduce heat to 375°. Squeeze softened garlic into a bowl and mash with a fork; spread over cheese. Replace bread top; brush outside of bread with remaining oil. Wrap in heavy-duty foil. , Bake for 45-50 minutes or until cheese is melted. You won't believe how easy it is to make a wheel of garlic baked brie! We make thin slivers in the brie, load them with garlic and then drizzle on a thyme honey butter sauce that makes this wheel of brie totally unforgettable!

1 (8-16 ounce) wheel of brie
2-4 fresh cloves garlic (see notes)
½ teaspoon of fresh thyme leaves
1 tablespoon olive oil
2 tablespoons butter
1-2 tablespoons honey
dash of cayenne

Steps:

  • Preheat the oven to 350F.
  • Place the brie in a small, ovenproof baking dish that is just slightly bigger than the wheel of brie. Using a paring knife, make 4 slivers out of two of the garlic cloves. Pierce the brie with the same paring knife and make slivers in the brie to fit the slivers of garlic in. Tuck the garlic slivers all the way into the brie. You could do this up to one day in advance if you are prepping for a get together; it flavors the brie even more!
  • When ready to bake, mince or press the remaining clove of garlic into a microwave-safe bowl, along with the thyme, olive oil, butter, honey, and cayenne. Zap in the microwave just long enough for the butter to melt, roughly 20-40 seconds. Stir to combine and pour the prepared honey butter over the brie wheel. Cover the baking dish with a piece of foil and place in the oven for the brie to melt, about 15-18 minutes for an 8-ounce wheel and 20-25 minutes for a 16-ounce wheel. Remove from the oven around press gently (without piercing the brie) using a butter knife to check if the brie has melted on the inside. If it has not softened place back in the oven for 2-3 additional minutes. When done, serve immediately with crackers or crostini.
