Good morning to the old-fashioned goodness of oatmeal baked a new-fashioned way with tart apples.

1/2 cup raisins
4 cups milk
1/3 cup packed brown sugar
2 tablespoons butter or margarine, melted

1/4 teaspoon salt
2 medium apples, chopped (2 cups)
1/2 cup chopped walnuts, if desired
Additional milk, if desired

Steps:

  • Heat oven to 350°F. In 2-quart casserole, mix oats, raisins, 4 cups milk, the brown sugar, butter, cinnamon, salt and apples.
  • Bake uncovered 40 to 45 minutes or until most liquid is absorbed. Top with walnuts. Serve with additional milk.

Steps:

  • Preheat the oven to 375'F. Lightly grease a 2 quart casserole dish.
  • In a large bowl, combine rolled oats, sugar, cinnamon, baking powder, ginger, salt, and nutmeg. Mix well.
  • In a separate bowl, combine almond milk, applesauce, maple syrup, and vanilla and stir well to combine.
  • Pour the liquid mixture over the oat mixture and stir until combined. The mixture will be soupy. Stir in the apples and pear.
  • Spoon the oatmeal into the casserole dish and smooth out the top. Sprinkle the walnuts on top and gently press them down into the oatmeal with your hands.

1/2 cup light brown sugar, lightly packed (or more, if you like your oatmeal sweeter)
1/3 cup chopped walnuts (optional)
1/3 cup raisins (optional)

2 to 3 large sweet/tart apples (like gala or honey crisp), cored and diced (you can also peel the apples if you prefer, but it's not necessary)

Steps:

  • 1. Preheat oven to 325°F. Lightly butter or spray a 9x13-inch baking dish; set aside.
  • 2. In a large mixing bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt, brown sugar, and nuts and raisins (if using).

Just something I threw together... this can be used as a breakfast, or a healthy dessert! I listed the amounts I used, but unless you dice the apple REALLY finely, I think it would probably be better if the oatmeal and liquid were increased to 1/3 cup and 1/2 cup, respectively.

1/4 cup oatmeal
1/2 teaspoon cinnamon
1 pinch nutmeg
1 tablespoon Splenda sugar substitute
1/2 teaspoon baking soda
1 teaspoon lemon juice
1 small apple, diced
1/3 cup water (or milk)

Steps:

  • Preheat oven to 350.
  • Dice the apple and pour lemon juice over it (to prevent browning).
  • Combine the first five ingredients in a bowl. Add the apple, lemon juice and water and stir to combine.
  • Pour into a round 2-cup Pyrex dish. Bake for 30 minutes, or until most of the liquid has evaporated.

I am trying to "re-do" some of our older recipes to be lower in fat, as hubby has heart disease. This ended up being a combination of two. I am going to try this with peaches also as this is one of the few ways I can get fruit into him! AND, he liked this. Guessing on prep time.

3 cups granny smith apples, peeled, cored and cut into small bite size pieces
1 tablespoon apple juice, and
1 teaspoon apple juice
1 tablespoon white sugar, and
1 teaspoon white sugar
1 teaspoon skim milk
1/4 cup fat-free cottage cheese
1/4 cup plain fat-free yogurt
1 egg white
1/4 teaspoon cinnamon
1/4 cup quick oatmeal, and
2 tablespoons quick oatmeal
1/4 cup brown sugar, and
2 tablespoons brown sugar
3 tablespoons margarine, stick kind

Steps:

  • Preheat oven to 350.
  • Spray a 10 inch glass pie pan with Pam.
  • Pour apples into pie pan and add all apple juice, stir.
  • Sprinkle all white sugar over the top of the apples and then stir well.
  • I put the skim milk, cottage cheese, yogurt, egg white and cinnamon in my mini chopper to blend well (I do this after the topping so that I don't have to wash it out twice).
  • Pour over apples and mix well.
  • (I chop my oatmeal in my mini chopper to make it finer in texture, then I measure it out to 1/4 cup + 2 tablespoon).
  • In a small bowl, melt margarine in microwave.
  • Stir in all brown sugar and oatmeal(mix very well).
  • Crumble over the top of the apples, covering as well as possible.
  • Bake 350 for 45 to 50 minutes --
  • IF you ARE NOT using 10 inch glass pie pan you will have to judge your timing.

1 teaspoon pumpkin pie spice
½ teaspoon baking powder
1 (15 ounce) can pumpkin puree
½ cup nonfat milk
½ cup water
⅓ cup maple syrup
1 egg, beaten
1 teaspoon vanilla extract
1 cup chopped apples
⅓ cup chopped pecans

Steps:

  • Heat oven to 350 degrees F. Spray 2-quart baking dish with nonstick cooking spray.
  • In large bowl, stir together oats, pumpkin pie spice and baking powder.
  • Stir in pumpkin, milk, water, syrup, egg and vanilla extract until well combined. Stir in apples.
  • Pour into baking dish. Sprinkle with pecans.
  • Bake 30 minutes or until knife inserted near center comes out clean.
  • Let stand 10 minutes before serving.
