1/2 cup unsalted butter, softened
2 teaspoons garlic, minced
2 teaspoons fresh parsley, minced
1 teaspoon kosher salt
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1 baguette, Italian, halved lengthwise
1/2 cup parmesan cheese, shredded

Steps:

  • Preheat broiler with oven rack 3-4 inches from the element.
  • Combine butter, garlic, parsley, salt, oregano, and paprika; spread mixture on cut sides of baguette and sprinkle with Parmesan.
  • Broil bread, buttered-side up, on a baking sheet until toasted, 1-3 minutes. Remove from oven, then cut into 2-inch pieces.

These quick herby toasts are a must make. They're just what you need to soak up broth in a dish like Saffron-and-Orange-Scented Seafood Stew. Be sure not to skimp on the stick of butter, or the garlic.

1 stick unsalted butter, softened
3 cloves garlic, minced (1 tablespoon)
1/4 cup finely chopped fresh parsley leaves
1/4 cup finely chopped fresh basil leaves
1/2 teaspoon dried oregano
Pinch of red-pepper flakes (optional)
Kosher salt and freshly ground pepper
4 mini baguettes, hoagies, or ciabatta rolls, split; or 1 large baguette or ciabatta, sliced on the bias into 1-inch-thick pieces

Steps:

  • Preheat broiler, with rack 6 to 8 inches below element. In a bowl, stir together butter, garlic, herbs, and red pepper flakes; season with salt and pepper. Broil bread on a rimmed baking sheet lined with a wire rack, split side up, until lightly toasted, 2 to 3 minutes.
  • Divide butter mixture among toasts, spreading evenly to edges. Broil until crisp and golden brown in places and butter is sizzling, 3 to 5 minutes. Serve warm.

BAGUETTE GARLIC BREAD

I made this up when I needed something to take to my daughter's house for supper one night after watching the Barefoot Contessa make her garlic bread. Very crunchy and garlicy!

2 French baguettes or 1 loaf French bread
1/4-1/2 cup olive oil
3 -6 garlic cloves, finely minced
parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • Slice baguette's (or French Bread) into 1/2" slices. (Cut on the diagonal).
  • Heat olive oil in small skillet or pan. (Don't get smoking hot or it will burn the garlic.).
  • Add the finely minced garlic cloves and cook very quickly. Not over 20 or 30 seconds, watching closely so you don't burn. (I strained out the garlic but Ina Garten didn't when she made her garlic bread).
  • Brush baguette slices with the olive oil and put on a baking sheet.
  • Sprinkle with parmesan cheese.
  • Bake in oven for 8 - 12 minutes or just until they are lightly browned.
  • To freeze: Prepare up to the point of brushing the bread with the garlic oil. Place on a baking sheet, put in freezer and freeze until firm. Remove from freezer, wrap well in plastic wrap and then foil. Label and return to freezer.
  • To serve: Unwrap and place on baking sheet. Proceed with directions and bake at 375 degrees for 12 minutes or until hot through.
  • NOTE: I used the smaller portions given for my baguettes but you may need more if using a loaf of French Bread.

CRISP ROSEMARY-PARMESAN GARLIC BREAD

2 tablespoons butter, room temperature
2 tablespoons fresh rosemary, chopped
6 tablespoons extra virgin olive oil
1 1/4 cups parmesan cheese, grated
5 large garlic cloves, minced
1 baguette

Steps:

  • Blend butter and rosemary in processor.
  • Gradually add oil and process until incorporated.
  • Mix in Parmesan cheese.
  • (Can be made 1 day ahead. Cover and refrigerate; bring to room temperature before continuing.)
  • Mix in garlic.
  • Cut the baguette in half lengthwise, then crosswise (4 pieces total).
  • Score each piece diagonally 3/4-inch deep at 1 1/2-inch intervals.
  • Prepare barbecue (medium-high heat) or preheat oven to 400°F
  • Spread cheese mixture over cut sides of bread.
  • If grilling, wrap each piece of bread loosely in foil.
  • Grill in foil until bread is crusty and golden, about 8 minutes.
  • If baking, place bread cut side up on baking sheet.
  • Bake until bread is crisp and golden around edges, about 10 minutes.
  • Serve bread warm.

ROASTED GARLIC BREAD

Roast a whole head of garlic and then spread it on a baguette before another bake with Parmesan and parsley.

1 head garlic
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 12-inch baguette, split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the top third off the head of garlic, exposing the tops of the garlic cloves. Put on a piece of aluminum foil, drizzle with 1 tablespoon of the oil and sprinkle with 1/4 teaspoon each salt and pepper. Wrap tightly and roast until the cloves are golden brown and very soft, about 45 minutes; cool slightly.
  • Unwrap the garlic and pour any garlic-flavored oil from the foil into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 2 tablespoons oil and mash with a fork until smooth; season with additional salt and pepper.
  • Put the bread halves on a baking sheet and evenly spread with the roasted garlic mixture. Top with the Parmesan and a few grinds of pepper. Bake until the bread is toasted and the cheese is melted, about 10 minutes. Sprinkle with parsley and cut into pieces.
