1/4 cup butter, softened
1 tablespoon grated parmesan cheese
8 slices Italian bread
4 slices provolone cheese
4 slices mozzarella cheese

Steps:

  • Stir together butter and parmesan cheese in a small bowl.
  • Spread 1 1/2 teaspoons butter mixture on 1 side of each bread slice.
  • Place 4 bread slices, buttered sides down, on wax paper. Top with provolone and mozzarella cheeses; top with remaining bread slices, buttered sides up.
  • Cook sandwiches, in batches, on a hot griddle or in a nonstick skillet over medium heat, gently pressing with a spatula, 4 minutes on each side or until golden brown and cheese is melted.

2 tablespoons extra virgin olive oil, 2 turns of the pan
3 tablespoons butter
1 garlic clove
8 slices crusty italian semolina bread
1 cup shredded provolone cheese
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1 cup shredded asiago cheese

Steps:

  • In a small skillet over medium low heat, combine oil, butter and garlic.
  • Cook garlic in butter and oil gently for 2 or 3 minutes.
  • Remove garlic butter mixture from heat.
  • Place a large nonstick skillet on the stove over medium high heat. Using a pastry brush, brush 1 side of 4 slices of bread with garlic oil and place buttered side down in skillet.
  • Top each slice with equal amounts of the 4 cheeses, distributing them equally over the 4 slices.
  • Top each sandwich with another slice of bread brushed with garlic butter, buttered side up.
  • Flip the grill cheese sandwiches a few times until cheeses are melted and gooey and bread is toasty and golden. Cut grilled 4 cheese sandwiches from corner to corner and serve.

5 lbs tiny new potatoes
3/4 cup olive oil
1/4 cup melted butter
1 cup grated parmesan cheese
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon garlic powder
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons minced fresh parsley
1/2 cup grated parmesan cheese

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the potatoes in a large saucepan of water. Cover; bring to a boil over high heat. Reduce heat; gently cook potatoes until tender but still firm, about 20 minutes. Drain.
  • Place potatoes on a greased, rimmed baking sheet. Smash the warm potatoes with the heel of your hand or a small pan to flatten slightly and break the skin.
  • Mix together the olive oil, butter, 1 cup Parmesan cheese, basil, oregano, thyme, rosemary, garlic powder, red pepper flakes, salt, and pepper in a large bowl; add the potatoes and toss well. Return coated potatoes to baking sheet, leaving 1/2 inch space between each potato.
  • Roast potatoes in the preheated oven until lightly browned and slightly crispy; about 30 minutes. Place hot potatoes on a large platter; sprinkle with parsley and the remaining 1/2 cup Parmesan cheese.

2 large portobello mushrooms (4 ounces each), stems removed
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon dried basil
4 tomato slices
2 slices mozzarella cheese
2 slices Italian bread (1 inch thick)
Chopped fresh basil

Steps:

  • Preheat broiler. Place mushrooms in a shallow bowl. Mix oil, vinegar, salt and dried basil; brush onto both sides of mushrooms. Let stand 5 minutes. Reserve remaining marinade., Place mushrooms on a greased rack of a broiler pan, stem side down. Broil mushrooms 4 in. from heat until tender, 3-4 minutes per side. Top stem sides with tomato and cheese. Broil until cheese is melted, about 1 minute., Place bread on a baking sheet; brush with reserved marinade. Broil 4 in. from heat until lightly toasted, 45-60 seconds. Top with mushrooms. Sprinkle with chopped basil.
